[Objective ] This study aims to investigate the effect of exogenous enzyme treatment on the quality of summer green tea and optimize the enzyme treatment conditions.[Method ] Sensory evaluation was employed to evaluate and screen the tea samples treated with six exogenous enzymes.The effects of cellulase,tannase,and treatment conditions on the sensory quality,bitter/astringent taste attributes,and main biochemical components of summer green tea were studied by electronic tongue and chemometrics methods.The optimal treatment conditions of cellulase and tannase were comprehensively evaluated by hierarchical cluster analysis,correlation analysis,and principal component analysis (PCA ).[Result ] Sensory evaluation revealed that cellulase and tannase significantly improved the …

Post-harvest Superficial scald affects the quality of Granny Smith Apples. Oxidative stress develops superficial scald with antioxidant systems mitigating the extent of this damage. This study evaluated the effects of gamma, X-ray, and electron beam irradiation on antioxidants – ascorbic acid, total phenolics, α-tocopherol, carotenoids, chlorophyll, and campesterol – in scalded and non-scalded apple peel tissue. Apples were treated with 0.2-0.77 kGy and stored at 0-1 °C. Irradiation at the applied doses increased scald incidence, suggesting that disruption of antioxidant systems promoted reactive oxygen species accumulation and membrane damage. The antioxidant properties of lactic acid bacteria are related to various probiotic activities,which can prevent and alleviate a variety of chronic diseases caused by oxidation in the host.The antioxidant mechanisms of lactic acid bacteria,including the action mechanisms of antioxidant enzymes and non-enzymatic antioxidants and regulation of host signaling pathways,were expounded.Furthermore,the application status of antioxidant properties of lactic acid bacteria in diseases of the nervous system,digestive system,and skin system were summarized.The aim is to explore how to enhance the antioxidant activity of lactic acid bacteria in oxidative stress-related diseases and give new insights into the development of related treatment strategies.

[Objective ] A genome-scale metabolic model (GSMM ) of the high L-malic acid-producing strain Aspergillus oryzae (A.oryzae ) FMME-S- 38 was constructed and analyzed.[Method ] The new GSMM iJW1333 was established for A.oryzae FMME-S- 38 through a two-step process of draft reconstruction and model refinement.[Result ] The model integrated 1 723 biochemical reactions,1 723 metabolites,and 1 333 functional genes,achieving the prediction accuracy of 94.6% for substrate metabolism and 92.0% for cell growth.Comparative genomic analysis revealed that mutations in the genes involved in the hexose monophosphate pathway (HMP ) and oxidative phosphorylation underpinned the enhanced L-malic acid production of A.oryzae FMME-S- …

[Objective ] This study aims to identify the main spoilage bacteria and evaluate their spoilage capacity in the spoilage process of pickles.[Method ] High-throughput sequencing was employed to analyze the microbial community dynamics in the samples of pickles at the early,middle,and late stages of spoilage.The key spoilage bacteria were isolated,purified,and then identified through a combination of colony morphology observation,biochemical analysis,and 16S rDNA/ITS sequencing.Re-inoculation experiments were carried out for further validation of the primary spoilage bacteria in pickles.[Result ] Acinetobacter and Bacillus were the dominant spoilage bacterial genera across the three spoilage stages.Notably,Bacillus exhibited rapid growth over time,with the relative abundance …

[Objective ] This study aims to establish a magnetic bead enzyme-linked immunosorbent assay (MELISA ) method for olaquindox (OLA ) based on immunomagnetic beads.[Method ] First,olaquindox-hapten conjugated with horseradish peroxidase (OLA-HS-HRP ) and immunomagnetic beads were synthesized.Then,the conjugated immunomagnetic beads and OLA-HS-HRP were used to screen and optimize the reaction conditions of MELISA.[Result ] The optimal working dilution factors for the immunomagnetic beads and OLA-HS-HRP were 100 times and 8 000 times,respectively,with the antibody dilution buffer being PBS solution (0.010 mol/L,pH 7.0) containing methanol at a volume fraction of 5%.Under the optimized conditions,the established standard equation was y=13.593ln x+17.173 (R2=0.994 …

Cazyme Gene Cluster Diversity In Human Gut Microbiome, Yi Xing

In gut microbiome research, carbohydrate-active enzyme gene clusters (CGCs) have emerged as key functional units for understanding microbial glycan degradation. Unlike taxonomic or broad pathway annotations, CGCs offer gene-cluster-level resolution and capture substrate-specific microbial functions. However, their diversity and distribution in relation to host metabolic phenotypes, such as obesity, remain poorly characterized. This study tests the hypothesis that the composition and abundance of fiber-targeting CGCs vary between obese and healthy human gut microbiomes, reflecting distinct microbial carbohydrate utilization strategies. The aim of the study is to conduct a comparative analysis of the technological properties of samples of bakery flour obtained from local and imported varieties of wheat grain at enterprises in Uzbekistan. Existing national and international standard methods were used to study the technological properties of the selected flour samples. Statistical processing and correlation analysis of the obtained research results revealed a direct relationship between the quality and quantity of gluten from damaged starch.

The aim of the study was to conduct research to determine the possibility of predicting the approximate fatty acid composition of blends based on the iodine number. The fatty acid composition was determined by the chromatographic method and the results were subsequently used to identify the composition of blends by determining the iodine number. The iodine number was determined by calculation and titrimetric methods, comparing the differences between the obtained values. Watermelon rind waste powder (WRWP) is a rich source of dietary fiber and bioactive compounds; hence it could be used to develop functional foods such as bakery products. The present study aimed to utilize WRWP in bakery products development. Tea polyphenols are the general term for polyphenols in tea,mainly including catechins,flavonoids,and anthocyanins,which have antioxidant and antimicrobial properties.The author reviewed the structural characteristics and the antioxidant and antibacterial mechanisms of tea polyphenols.Additionally,the application of tea polyphenols in the processing and preservation of meat products is summarized,providing a theoretical basis for their use in meat products.Studies have shown that tea polyphenols can achieve anti-oxidation by scavenging free radicals,chelating metal ions,and inhibiting oxidase activity.Moreover,tea polyphenols can inhibit cell growth and proliferation by inhibiting the activities of enzymes involved in cell metabolism and damaging the cell membrane system.As natural antioxidants,tea polyphenols can significantly …

[Objective ] The physiological characteristics vary greatly among different strains of Tetragenococcus halophilus (T.halophilus ).By comparing some indicators of safety properties,growth characteristics,and fermentation performance of T.halophilus strains from different sources,the authors aim to establish a regular understanding of this bacterial species.[Method ] Seventeen strains of T.halophilus derived from different aquatic products and soy sauce mash were selected,and their antibiotic resistance,biogenic amine production,hemolytic activity,growth under different environmental conditions,and flavor characteristics after fermenting soybean hydrolysate were determined.Additionally,correlation analysis was conducted to identify the associations among various indicators.[Result ] In terms of safety properties,the 17 strains were generally sensitive to penicillin,vancomycin,and tetracycline,but resistant …

[Objective ] This study aims to analyze the characteristics of volatile aroma components and key aroma components of black tea samples from different tea varieties in Guangxi.[Method ] The aroma components of 12 black tea samples from Guangxi were identified by sensory quality evaluation,headspace solid-phase microextraction-gas chromatography-mass spectrometry (HS-SPME-GC-MS ),hierarchical cluster analysis,and orthogonal partial least squares-discrimination analysis (OPLS-DA ).[Result ] The black tea samples from different tea varieties showed different aroma characteristics and mainly presented a floral fruity aroma or a sweet aroma.The black tea from ‘Wuniuzao ’ demonstrated the highest comprehensive score (91.20),being a representative of black tea with …

[Objective ] This study aims to prepare γ-aminobutyric acid (GABA )-enriched milk fermented with lactic acid bacteria and evaluate its anti-exercise fatigue effect.[Method ] High GABA-producing lactic acid bacteria were selected and used to ferment milk with a commercial starter culture.A mouse model of exercise fatigue was established by four weeks of exhaustive swimming training.After four weeks,the exhaustive swimming time,serum biochemical indicators,antioxidant indicators,and energy storage substance levels were measured and analyzed.[Result ] Lactobacillus plantarum (L.plantarum ) LP- 5 was selected as the strain for fermentation,and its GABA yield reached (1.340±0.003) g/L.The fermented milk showed the titratable acidity of (46.29±2.01) ºT,the …
