Portable NIR spectrometers was used for the identification of six kinds of food-contacted plastic material including polyethylene terephthalate (PET), high-density polyethylene (HDPE), low-density polyethylene (LDPE), polyvinyl chloride (PVC), polystyrene (PS) and polycarbonate (PC). Four kinds of spectral preprocessing methods including 5-point smoothing, multivariate scattering correction (MSC), first-order derivative and standard normal variable transformation (SNV) were used to preprocess the spectra of plastic samples. Principal component analysis (PCA) and partial least squares-discriminant analysis (PLS-DA) were used to analyze the spectral space distribution of plastic samples and establish qualitative discriminant models. In this research, high quality mints were used in the orthogonal test of different packaging materials, modified atmosphere and volume ratio. The mints of these groups were stored at low temperature (4 ℃) for 12 h. The variation of the sensory quality and the physical and chemical indexes of mints were studied during the storage period. The results showed that the loss rate and VC content of mints were inhibited significantly in group of packing with HDPE, MAP of 6% O29% CO285% N2 and having the volume ratio of 15 g. In order to solve the problem of consumers misjudgment by hitting watermelon because of different watermelon varieties, a vibration detection system was built to get the frequency response functions of “Huang guan”, “Zaojia8424”, “Jng xin” and “Xisha” watermelon. The preservation of lemon juice and the positive control of 1-MCP were used for Wulongzhuyao jujube fruits were stored at 4 ℃ for 40 d. Over the storage period, decay index, mass loss rate, ascorbic acid (VC), total soluble solids (TSS), malondialdehyde (MDA), superoxide dismutase (SOD), peroxidase (POD) were measured at 5 day intervals, and then the comprehensive evaluation on fresh-keeping effect was carried out by using principal component analysis. The antibacterial effects of complex preservative of sorbate, sodium diacetate and sodium erythorbate on Staphylococcus saprophyticus in shrimps were investigated in this study. To determine the minimum inhibitory concentration of compound preservative on tested strain by ELISA method (MIC), and determination of antimicrobial activity, bacterial growth curve, cell membrane integrity, alkaline phosphatase (AKP) levels and other indicators, combined with the observation of ultrastructure of bacteria, were used to evaluate the antibacterial influence of composite preservative on the S. saprophyticus. Study On Preparation, Structure And Activity Of Soybean Protein Isolate Peptide-Se Complex, Zhang Xinyuan, Xu Liangzong, Wang Shaoyun

The enzymolysis technology for soybean protein isolate peptides (SPIP) and preparation technology of soybean protein isolate peptide-Se complex (SPIP-Se) were optimized. The structure properties of SPIP-Se were characterized by absorption spectrum and fluorescence spectrum, and its antioxidation was studied. Results showed that SPIP after enzymatic hydrolysis in temperature 50 ℃, with substrate concentration of 3%, and enzyme-substrate ratio of 5 g/100 g, and chelation at pH 10 in 2 h, for 78 ℃, the selenium binding capacity of SPIP reached 38.143 mg/g. The structural characterization demonstrated that SPIP-Se could cause fluorescence quenching showed higher antioxidant activity than SPIP.

The extraction process of total steroidal saponins was optimized by the response surface method and its in vitro radical scavenging activity was also evaluated by the methods of α-deoxyribose, pyrogallol autoxidation, DPPH and ABTS. The results showed that the content of total steroidal saponins would be the highest if the time, liquid-solid ratio and temperature of ultrasonic treatment was 0.5 h, 19.51.0 (mL/g) and 39.7 ℃, and the soxhlet extraction time was 3 h. The effects of methionine (Met) in dietary on hair growth and organs indexes were investigated. A total of 80 Kunming mice with a similar genetic background and weight were randomly divided into 0.12% (the control), 0.80%, 1.60%, and 2.40% Met treatments with five replicates per treatment, including two female and two male mice per treatment. The hair fibers, heart, liver, spleen, lungs, kidneys and thymus were collected in catagen and telogen, respectively. Peony seed oil was obtained by ethanol-assisted aqueous enzymatic extraction after the acid-heat pretreatment on peony seeds. The microstructure of pretreated peony seeds was analyzed by confocal laser scanning microscope. The survival of Lactobacillus casei was investigated through four kinds of composite wall materials by internal emulsification method followed in simulated gastric and intestinal juice. The results suggested that the microencapsulated L. casei was prepared by using 2% of alginate, with the ratio of alginate to whey protein content 11, the quality of oil to water volume 31, alginate to calcium carbonate content 31, and the maximum embedding rate of microcapsules was 87.50% with the global microcapsules. The water chestnut starch were tested through intermittent microwave drying, and the effects of comprehensive quality were researched including water content, whiteness, acidity and iodine blue value of chestnut starch, optimized by orthogonal tests. The results showed that the optimum drying conditions for water chestnut starch intermittent microwave were microwave power 210 W, loading 1.47 kg/m2, heating for 14 min and intermittent time 0.75 min. Under the optimum conditions, after intermittent microwave drying, water content of water chestnut starch was 10.12%, the whiteness was 97.5%, and the acidity was 0.21 mL, iodine blue value was 17.90. To enrich the form of tofu deep-processing products, jade-like dumpling, a special traditional tofu dish, was prepared using tofu and minced pork as dumpling paper and stuffing respectively. The effects of different coagulants on quality parameters, including the texture, color, sensory characteristic, water holding capacity and nutritive compositions, of jade-like dumpling were compared. The results indicated that the optimal concentration of MgCl2, CaSO4 and GDL for jade-like dumpling was 2.5 g, 2.5 g and 2.0 g per 100 g dried soybeans, respectively. “How to be the Perfect Asian Wife” critiques exploitative power systems that assault female bodies of color in intersectional ways. This work explores strategies of healing and resistance through inserting one’s own narrative of flourishing rather than surviving, while reflecting violent realities. Three large drawings mimic pervasive advertisement language and presentation reflecting the oppressive strategies used to contain women of color. Created with charcoal, watercolor, and ink, these 'advertisements' contrast with an interactive rice bag filled with comics of my everyday experiences. These documentations compel viewers to reflect on their own participation in systems of power.

The compound enzyme composed of trypsin and flavour protease was used to hydrolysate the oyster, chicken and antarctic krill. Taking sensory score, peptide molecular weight distribution and amino acid composition as indexes, the change of them was investigated during ethanol extraction of umami peptide from 3 kinds of hydrolysates. Results showed that the sensory evaluation of supernatant of the 3 enzymatic hydrolysates extracted by 90% ethanol showed strong umami taste and the peptide ratio of the peptide molecular weight distribution < 5 ku from oyster, chicken and Antarctic krill was 93%, 86.82%, 87.86%, respectively . In order to study the effect of low-power microwave treatment on the postharvest quality of Kyoho grape, the grapes were treated with 32.5, 65.0, 97.5 and 130.0 W microwave respectively. The untreated grapes were used as the control, and all Kyoho grape stored at 0~2 ℃ for 40 days. The results showed that the low-power microwave treatment below 97.5 W had positive effect on the preservation of grape, which could prolong the ripening and senescence of Kyoho grape.The group with 32.5 W low-power microwave treatment had the best effect compared with the control in the end of storage period.which inhibited …

Premature judgment mechanism of particle swarm is established with fitness function. Adaptive adjustment of particle inertia weigh and acceleration factor of anti cosine strategy are optimized particle swarm to give the apple surface defect process. Simulation results show that improved particle swarm algorithm is more clearer detecting the defect of apple surface, the maximum missing rate test index is 4.5%, and less than other algorithms, and the least time comsuming in complete the missing rate, so that it is the new method for quality detection of apple.

The biochemical, rheological and scanning electron microscope (SEM) analysis were respectively used to evaluate the effect of added wheat bran fermented with Marx Kluyveromyces on dough and bread biochemical and baking properties. The results showed that fermented wheat bran was rich in natural enzymes such as cellulase, xylanase and feruloyl esterase. The enzymes produced enhanced the solubilization of arabinoxylan and the release of phenols during bread making, thereby improving nutrition of the bread. Wheat gluten and wheat-bran cellulose were mixed into alkaline-ethanol system. The blend dispersions were used to prepare composite films using a film casting method in this study. The effects of solid-liquid ratio, wheat-bran cellulose content, the additive amount of glycerol, ethanol concentration, pH values and xanthan gum content in film forming system on physical properties of composite films were investigated. The physical properties contain tensile strength, elongation at break, water vapor permeability, water solubility and light transmittance etc. In the results, wheat-bran cellulose could significantly enhance the tensile strength, and decreased the water vapor permeability and water solubility. The cross-linked oxidized acetylated compound modified starch was prepared by using waxy corn starch as raw material, sodium trimetaphosphate as cross-linking agent, sodium hypochlorite as oxidant and acetic anhydride as acetylation reagent. The morphology and structure of the starch granules were analyzed by scanning electron microscope (SEM) and Fourier transform infrared spectrometer (FT-IR). To research the antioxidant chemical mechanism of theaflavin, the antioxidant activities of theaflavin were measured in vitro using several chemical models, including DPPH· (1,1-diphenyl-2-picryl-hydrazyl) scavenging, ABTS+· \[2,2’-azino-bis (3-ethylbenzthiazoline-6-sulfonic acid)\] scavenging, and Cu2+-reducing power assays, which was compared with the positive control Trolox. In these assays, theaflavin along with positive control Trolox exhibited dose-dependently antioxidant abilities. The relative antioxidant levels of theaflavin vs Trolox (i.e. IC50,Trolox/IC50,theaflavin value) were calculated as 2.57, 3.13 and 3.74, respectively for DPPH·-scavenging assay, ABTS+·-scavenging assay, and Cu2+-reducing power assay. In order to investigate the inhibition of lipase by theabrownin and polysaccharide of black tea, the theabrownin and polysaccharides were extracted from the same black tea in different regions. The inhibition rate of lipase activity of theabrownin and polysaccharide was analyzed by p-nitrophenol method, and the inhibitory mechanism of theabrownin and polysaccharide on lipase was discussed. The results showed that the inhibition of lipase by theabrownin and polysaccharide of black tea was significant. Compared with chopping method, the effect of stirring method on the gel properties of surimi products was studied. The results showed that this method of stirring-broken method increased the gel strength and water holding capacity of silver carp surimi, increased the hardness, adhesiveness, adhesiveness and chewiness, but had no effect on the whiteness. The effect of Papaya protease(PAP), Neutral protease(NEP) and Bromelain protease(BRP) on the qualities of biscuit with different dosages were studied on specific volume, texture and color of hard biscuit compared with the addition of Sodium metabisulfite (SMS) and cysteine(CYS), respectively.
