Research Progress In Enrichment Of Trace Elements Zinc And Selenium In Pleurotus Spp., Jing Zhang, Mengmeng Xu, Liting Zhao, Cui Li, Lei Chen, Song Ming, Zhongyang Ding
Journal of Food Science and Biotechnology
Zinc and selenium are essential trace elements for maintaining human normal physiological function.Deficiency of zinc or selenium can result in immune dysfunction, chronic diseases such as cardiovascular diseases and hyperlipidemia, and even increase the risk of cancer. The human body cannot independently synthesize these trace elements, which can only be obtained from the daily diet. However, natural food sources have low content of zinc and selenium, which is insufficient to meet the bod y’s needs. Therefore, developing fortified foods with trace nutrients is an important approach to meeting residents ’ requirements.Edible fungi serve as natural carriers for enriching trace elements and ideal dietary supplements.Pleurotus spp.,as a typical example, not only …

Department of Food Science and Technology: Dissertations, Theses, and Student Research
Heart failure (HF) is a leading cause of morbidity and mortality worldwide, placing substantial clinical and economic burdens on society. Although advances in therapy have improved patient outcomes, the biological mechanisms that drive HF onset and progression remain incompletely understood. Increasing evidence suggests that the gut microbiota, the trillions of microorganisms residing in the gastrointestinal tract, plays a key role in some forms of heart disease, especially cardiovascular disease. Moreover, gut microbial dysbiosis has been associated with systemic inflammation, metabolic imbalance, and immune dysregulation, all of which contribute to the pathophysiology of HF. Cardiomyopathy, a primary disorder of the heart …

[Objective ] This study aims to increase the caproic acid yield of Aneurinibacillus JXN- 1.[Method ] First,a Plackett-Burman design was employed to screen the significant factors affecting caproic acid yield from eight medium components.Subsequently, the path of steepest ascent method was used to determine the optimal concentration ranges of these significant factors. Finally,a Box-Behnken design was utilized to establish a quadratic polynomial regression model, and the interactions among the significant factors were analyzed to predict the optimal medium composition.[Result ] The Plackett-Burman design identified the mass concentration s of sodium acetate and calcium folinate and the volume fraction of ethanol as significant influencing …

Research Progress In Light Treatment For Postharvest Preservation Of Fruits And Vegetables, Lili Zheng, Yue Lin
Journal of Food Science and Biotechnology
Postharvest fruits and vegetables often face issues of senescence and diseases, which lead to a decline in quality.Although conventional preservation techniques are widely applied, some of them have certain health risks.Light treatment,as an emerging non-thermal and non-toxic preservation technology, has attracted attention in the food industry. On the basis of the impacts of light on plant physiology and microbial growth, light treatment helps to maintain the freshness and market value of fruits and vegetables. The light sources for light treatment mainly include light-emitting diodes (LED ),ultraviolet (UV),fluorescent lamps (FL),and pulsed light (PL).This review explores the application mechanisms and effects of light treatment in the preservation of …
