Salmonella is a foodborne pathogen commonly associated with poultry products; the economic burden to the U.S. is estimated to be approximately $693 million (without factoring in contaminated eggs). Recently, there has been pressure to withdraw sub-therapeutic levels of antibiotics (also known as antibiotic growth promoters; AGP) from poultry due to concern over antibiotic-resistant bacteria spreading to the human population. Prebiotic refers to nondigestible food ingredients that enhance the health of the host by selectively promoting one or more number of beneficial bacteria. Gibson and Roberfroid (1995) initially described prebiotics as compounds that neither hydrolyzed nor absorbed in upper part of the gastrointestinal tract, selectively stimulates growth of beneficial bacteria, enhance health of the host and able to amend microorganism population to healthier states. Contamination of poultry products with food borne pathogens is a consistently recurring problem in the United States and the world. Recalls associated with chicken contamination are responsible for considerable economic losses to the poultry industry. Certain pathogenic Escherichia coli known as Shiga toxin (Stx)-producing Escherichia coli (STEC) are commensals in cattle, and typically cause bloody diarrhea in humans once the Stx toxin is secreted in invaded intestinal epithelial cells. Infections with STEC cells can lead to hemolytic uremic syndrome, which is commonly associated with kidney failure. Several STEC serogroups have been declared adulterants in raw, non-intact ground meat, and future regulations could potentially lead to a higher number of STEC serogroup detection strategies for these pathogenic microorganisms. One of these bacteria, L. amylovorus, has been studied using corn, potato, and cassava starches. However, the use of sweet potato starch, a widely available starch, has not been considered. Worldwide, Campylobacter is one of the leading causes of foodborne bacterial gastroenteritis causing an estimated 1.3 million infections in the United States alone. Consumption and/or cross-contamination of raw or undercooked poultry products have been linked as the most common source of Campylobacter infection, making the poultry industry a target for Campylobacter reduction strategies. Increasing salinity is an important factor limiting agricultural productivity worldwide. In addition to direct effects on growth and yield, diseases also may be affected. This study characterized the effects of soil salinity on seedling disease of soybean and rice caused by Pythium spp. Controlled environment experiments on soybean used two cultivars which differed in chloride tolerance and soil treated with a CaCl2 solution to create a range of electrical conductivity (EC) levels. Flavonoids, such as anthocyanins, may be responsible for the health benefits of chokeberries, as they are present in large quantities in chokeberries and are potent antioxidant and anti-inflammatory agents. Despite these health properties, previous investigations on the bioavailability of flavonoids illustrate that little of the ingested amount reaches the bloodstream. This study investigated two factors that may help to explain these inconsistencies. Organic waste generated from industrial sweet potato canning is estimated to be 30% of incoming raw material. This waste contains carbohydrates (sugars and starch) that could be used as substrates for the production of useful compounds via fermentation (e.g. lactic acid), resulting in the production of value-added products. During the most recent decades increased interest in fuel from biomass in the United States and worldwide has emerged each time petroleum derived-gasoline registered well publicized spikes in price. Amylose readily reassociates to form films and crystalline structures that are resistant to digestion by amylolytic enzymes and known as resistant starch type III (RS3). This study investigated the RS3 formation and cereal coating properties from enzyme-modified corn starches with varying amylose contents, including Hylon VII (70% amylose), Hylon V (50% amylose), and common corn (25% amylose). For RS3 formation, corn starches were first gelatinized and then hydrolyzed using β-amylase to varying degrees. The resultant hydrolyzed starch was debranched with isoamylase and then exposed to 3 times of temperature cycling at 135/133/133°C for 30 min and 95°C for 24 hr …

Listeria monocytogenes an important foodborne pathogen that continues to be a serious problem for the food industry. This pathogen contaminates food primarily during post-harvest in the food-processing environment. Its ecology in the food-processing environment is not well understood but previous research has demonstrated the ability of L. monocytogenes to survive on food contact surfaces after cleaning and disinfection.
