Bionanocomposite packaging eco-friendly alternatives with enhanced characteristics. This study aimed to develop a bionanocomposite intelligent packaging. Sodium alginate, gelatin, Curcumin (Cur), glycerol, and Nanoclay (NC) films were prepared. The influences of nanoclay and curcumin on the surface, optical, mechanical, chemical, barrier, and pH-indicating properties were studied. The results showed that the lightness of films was reduced by 1.28 folds compared to NC (control) film, while the yellowness of films increased by 5.82 folds. Film transparency was reduced by 9.3 folds and a 3.46 folds increase in UV barrier properties was observed compared to NC (control) film. The highest tensile strength …

Bionanocomposite food packaging contains materials of biological origin which display high-performance activity when compared to biopolymers and are eco-friendly alternatives to conventional packaging materials. Intelligent packaging monitors the condition of the food or environment surrounding the food and communicates changes to the consumer. This study aimed to develop a bionanocomposite intelligent packaging material by utilising sodium alginate, nanoclay and curcumin. Sodium alginate (2 W/V% SA) film incorporated with 0.3 W/V% curcumin (Cur), glycerol, and nanoclay (NC) in various concentrations (0, 0.5, 1 and 2 W/V %) was prepared using the solvent casting method. The influences of nanoclay and curcumin on …

Bio-Based Food Packaging Material For Intelligent Food Packaging Applications For Chicken Fillets, Kalpani Y. Perera, Amit K. Jaiswal, Swarma Jaiswal, Shubham Sharma

Articles

Bionanocomposite packaging is made up of bio- based materials that have high performance activity and are ecologically sustainable alternatives to packaging made of synthetic polymers. Intelligent packaging retains track of the state of the food and the environment in which it is stored, and communicates relevant changes to the consumer through visualization or other methods. The aim of this study was to develop a bionanocomposite intelligent packaging material by utilising sodium alginate, gelatin, nanoclay and curcumin. Sodium alginate, gelatin film incorporated with Curcumin (Cur), and Nanoclay (NC) in various concentrations (0% W/V, 0.5% W/V, 1% W/V and 1. 5% W/V) …

Enhancement In Photoinactivation Of Food-Borne Pathogenic Bacteria With The Use Of Curcumin And Surfactants, Victor Ryu Jun 2022

Enhancement In Photoinactivation Of Food-Borne Pathogenic Bacteria With The Use Of Curcumin And Surfactants, Victor Ryu

Doctoral Dissertations

Photosensitizers and UV or visible light could photoinactivate bacteria. Curcumin was utilized as a food-grade photosensitizer, and an enhancement of its water-dispersibility, chemical stability, and antimicrobial activity when introduced into surfactant solutions was observed. Stock curcumin-surfactant solutions were prepared by titrating curcumin dissolved in ethanol into either Surfynol 465 or Tween 80 solutions (5 mM sodium citrate buffer). Stock curcumin surfactant solutions with different surfactant concentrations were diluted to 1 µM prior to irradiation. The resulting solutions also had surfactant concentrations below, near, and above their critical micelle concentrations (CMCs) of the respective surfactants. The antimicrobial activity of the curcumin-loaded …

Improvement Of Solubility, Stability, And Bioaccessibility Of Curcumin Using Colloidal Delivery Systems, Bingjing Zheng Jul 2021

Improvement Of Solubility, Stability, And Bioaccessibility Of Curcumin Using Colloidal Delivery Systems, Bingjing Zheng

Doctoral Dissertations

Curcumin is a yellow-orange crystalline substance found in certain foods (turmeric) that is claimed to exhibit a broad range of biological activities. Its application as a nutraceutical in functional foods and beverages is often limited by its relatively low solubility in aqueous media, its chemical instability, and its low bioavailability. Recent research suggests that colloidal delivery systems can overcome these hurdles and improve the efficacy and commercial value of curcumin in the food, supplement, and pharmaceutical fields. The purpose of this research was to develop colloidal delivery systems to improve the application of curcumin as a nutraceutical in foods. First, …

Characterization And Analysis Of Curcumin Extracted From Turmeric Using Mass Spectrometry And Uv-Vis Spectroscopy, Cecilia Russo, Anna Fedor Jan 2020

Characterization And Analysis Of Curcumin Extracted From Turmeric Using Mass Spectrometry And Uv-Vis Spectroscopy, Cecilia Russo, Anna Fedor

Student Research Poster Presentations 2020

Turmeric is a spice most commonly found in Indian cuisine that is known for its medicinal properties. The most active compound that can be found in turmeric is curcumin. Curcumin is a polyphenol that is best known for its antioxidant and anticancer properties. Curcumin is mostly insoluble in water so the extraction of curcumin from turmeric was achieved by using ethanol or dichloromethane/hexane as the solvent. Since turmeric is not soluble in these solvents, a small amount of turmeric was soaked in larger amount of ethanol or dichloromethane/hexane to allow the curcumin to be dissolved out. The resulting solution can …

Effects of curcumin, a biologically active ingredient of turmeric, were tested on the Ca2+transients induced by the activation of α7 subunit of the human nicotinic acetylcholine (α7nACh) receptor expressed in SH-EP1 cells. Curcumin caused a significant potentiation of choline (1 mM)-induced Ca2+ transients with an EC50 value of 133 nM. The potentiating effect of curcumin was not observed in Ca2+ transients induced by high K+ (60 mM) containing solutions or activation of α4β2 nACh receptors and the extent of curcumin potentiation was not altered in the presence of …

Chemical Stability Of Curcumin: Structure And Activity Relationship (Sar) Study, Zheyuan Du Jul 2016

Chemical Stability Of Curcumin: Structure And Activity Relationship (Sar) Study, Zheyuan Du

Masters Theses

Over the past decades, numerous studies have shown that curcumin has potent biological activities. As a potential chemopreventing agent, curcumin was demonstrated to exert anti-cancer effects in both in vitro and in vivo studies. However, low bioavailability of curcumin limited human clinical trials and its application to be formulated as therapeutics. In this thesis, we will summarize the anti-cancer effects of curcumin in animal studies and clinical trials. In addition, an SAR study will be introduced to elucidate the mechanism of curcumin degradation at physiological pH. We synthesized various curcumin analogues and compared their stability in phosphate buffer using HPLC …
