Composite Flours For Sustainable Food Systems: Integrating Nutritional, Environmental, And Climate Resilience Strategies, Rashmi H. Poojara, Soumya P S, Alvina Rose, Niva Somarajan

Journal of Environmental Science and Sustainable Development

Composite flour blends prepared from cereals, millets, tubers, legumes, and vegetables have gained increasing attention due to their potential to enhance nutritional quality, improve functional properties, and support sustainable food systems. Previous studies have largely focused on individual nutritional or functional attributes, with limited integration of environmental and health perspectives. This review aimed to systematically analyze how composite flours simultaneously influence nutritional quality, functional performance, health relevance, and environmental sustainability within a unified analytical framework. A systematic literature review was conducted following PRISMA guidelines. Peer-reviewed studies published between 2014 and 2025 were retrieved from PubMed, Scopus, Web of Science, and …

Shallots from Brebes, also called Bima Brebes, have a more pungent aroma compared to other varieties. Its high demand results in increased prices in the market, leading to frequent cases of fraud wherein Bima Brebes shallots are replaced with other types of shallots. This study aimed to develop an analytical method using gas chromatography–flame ionization detector (GC-FID) fingerprinting combined with chemometrics to authenticate Bima Brebes shallots. Essential oils were extracted through ultrasonic hydrodistillation, followed by organoleptic, refractive index, GC-FID fingerprinting and chemometric analysis. The yield value of the five studied shallot varieties ranged from 0.02% to 0.08% w/w. Meanwhile, the …

The development of innovative food packaging technologies, particularly those capable of monitoring freshness, has become increasingly important in the food industry. This research explores the development of a pH-responsive freshness sensor using polyvinyl alcohol–red cabbage (PVA/RC) nanofibers. The nanofibers are fabricated through the electrospinning technique and meticulously analyzed via scanning electron microscopy, Fourier-transform infrared (FTIR) spectroscopy, and differential scanning calorimetry (DSC). The results underscore the fine structure of the nanofiber matrix, with an average diameter of ~68 nm. FTIR analysis substantiates the presence of anthocyanin compounds from RC within the PVA/RC nanofibers, which confirms the integration of beneficial components into …

Physico-Chemical, Organoleptic, And Antioxidant Properties Of Black Soybean Flour (Glycine Soja (L.) Merrit) Flakes With The Addition Of Bangle (Zingiber Purpureum Roxb.), Ika Dyah Kumalasari, Nurkhasanah Nurkhasanah, Sepitriani Sepitriani May 2024

Physico-Chemical, Organoleptic, And Antioxidant Properties Of Black Soybean Flour (Glycine Soja (L.) Merrit) Flakes With The Addition Of Bangle (Zingiber Purpureum Roxb.), Ika Dyah Kumalasari, Nurkhasanah Nurkhasanah, Sepitriani Sepitriani

Pharmaceutical Sciences and Research

Flakes are products that are generally made from cereals. In this study, we are interested to use black soybean (Glycine soja (L) Merrit) and bangle (Zingiber purpureum Roxb.) as flakes ingredients. Black soybeans have high antioxidant components, while bangle contains high antioxidant and fiber components, which enables it to capture free radicals. This study aimed to find the most favorable formula with good physical, chemical, and organoleptic characteristics, which also has the highest antioxidant activity. We used the Completely Randomized Design (CRD) method and the variation of formulation used was the ratio of black soybean flour to bangle …

Black garlic is a traditional spice having potential of herbal medicine; however, continuous heating darkens its color and changes its taste due to chemical processes and new equilibrium in the system. In this study, fresh garlic was processed into black garlic at 60 °C for 24 days. Changes in physical and chemical parameters, such as browning and protein content, reducing sugar content, and antioxidative components were recorded. Protein content was measured by Kjeldahl method, brown color development was analyzed using a color reader, reducing sugar was examined using a dinitro salicylic DNS reagent, and antioxidative activities were studied with a …

Metabolite Signature Of Fresh And Long-Term Stored Coffee Pulp And Husk, Wahyu Lestari, Kartini Hasballah, Muhammad Yulianto Listiawan, Sofia Sofia

Makara Journal of Science

Every product from the food and agriculture industry produces waste that can cause environmental pollution when carelessly discarded. Coffee husk and pulp are the main wastes generated by coffee processing. The secondary metabolites in these wastes can still be utilized, but their level can be affected by long storage. This research aims to determine the differences in the compounds obtained from old and fresh Gayo Arabica coffee pulp and husk. Coffee husk and pulp samples from Gayo Arabica coffee are extracted for GC-MS analysis to determine similarities between fresh and long-term stored Gayo Arabica coffee husk and pulp. Results show …

Analysis Of Total Acidity Toward Bacterial And Endophytic Fungi Profile Dur-Ing Black Garlic Processing From Garlic (Allium Sativum L.) And Shallot (Allium Ascalonicum L.), Ayu Rahmania Lestari, Surjani Wonorahardjo, Suharti Suharti

Makara Journal of Science

Black garlic or shallot are products of processed garlic and shallots obtained through a heating process conducted over a certain period. Black garlic/shallots have a mild aroma with a sweet and sour taste. The heating process causes chemical compound transition in the garlic, including acidity. In addition to the chemical process, the garlic’s color and component changes are due to the role of microorganisms during black garlic processing. However, the presence and function of such microorganisms have not been identified. Therefore, this research explores the black garlic’s microorganisms, their role in black garlic processing, and their relation to the total …
