Quality And Safety Of Vegetables Based On Nitrogen Determination And Intake, Mariola Kodra, Ariola Devolli, Edlira Shahinasi, Dhurata Feta

Vegetables are one of the main sources of nitrogen on human diet.Nitrogen content in 30 soil samples and 30 vegetables samples are reported. The results indicate that nitrogen content was low in 33% of soil samples,normal in 50% of the samples, and high in 17% of soil samples. Reportedresults indicate that 47% of vegetables samples had low nitrogen content, 30%of them had normal nitrogen content, and 13% and 10% of them had high andvery high nitrogen content, respectively. Soil nitrogen is also reported asammonium and nitrate, and results indicate that nitrate is the dominant form ofnitrogen. There was a good …

The vegetables represent a food with high nutritional values, especially rich in vitamins, minerals and antioxidants, therefore it is recommended their daily consumption at least once up to twice rations per day. Based on this fact, it is of great importance to take into consideration the safety of consumption of vegetables for human health. Objective: To compare the fruit, vegetable, and sugar sweetened beverage intake of college students who do and do not participate in dinner groups. Also, to determine if dinner group participation affects college students' perception of their overall health and adequacy of their fruit and vegetable intake. Design: A quantitative study of college students' fruit, vegetable, and sugar sweetened beverage intake through a one-time online survey. Setting: The survey was accessed via the internet at the time and place of students' convenience. Fruits and vegetables are a rich source of health promoting micronutrients and phytochemicals, and their consumption has been associated with reduction of many chronic and degenerative disease. Thermal processing techniques are used to preserve quality and extent of the shelf life of foods, although these traditional processes are associated with specific quality changes in fruits and vegetables. Compared to traditional thermal processing methods, microwave heating provides the potential to improve product quality by virtue of its energy transfer mechanism that provides rapid volumetric heating of food and can potentially enhance overall quality of processed fruit and vegetable products. Objective—Characterize the process of family vegetable selection (especially cruciferous, deep orange, and dark green leafy vegetables); demonstrate the usefulness of Exchange Theory (how family norms and past experiences interact with rewards and costs) for interpreting the data.
Design—Eight focus groups, two with each segment (men/women vegetable-likers/dislikers based on a screening form). Participants completed a vegetable intake form.
Setting—Rural Appalachian Pennsylvania.
Participants—61 low-income, married/cohabiting men (n=28) and women (n=33).
Analysis—Thematic analysis within Exchange Theory framework for qualitative data. Descriptive analysis, t-tests and chi-square tests for quantitative data.

Cardiovascular disease (CVD) is a leading cause of mortality and morbidity in the United States. The prevalence of CVD will increase in conjunction with the rise in obesity and type 2 diabetes and decrease in physical activity, due to the adverse effects of adiposity and atherosclerosis associated with these syndromes. Excellent inpatient, outpatient, and community-based program s are available to educate and direct healthy behavioral changes, yet the number of programs available is not sufficient for the volume of patients, nor widely distributed in all areas (particularly rural areas). The purpose of this study was to determine the effect of a combination of a 1% calcium chloride dip with low dose irradiation on microbial populations, and biochemical and physical properties, of fresh diced tomatoes during a two-week storage period. Vine tomatoes at the light-red stage (trial 1) and Celebrity tomatoes at the table ripe stage (trial 2) were diced, dipped in 1% CaCl2, and irradiated at 1 kGy from a Co-60 source. Tomatoes were also contaminated with cocktail of nalidixic-acid resistant Salmonella strains (S. Poona, S. Hartford, S. Gaminara, S. Michigan, and S. Montevideo) and subjected to gamma irradiation. …

New uses of enzymes are of major importance for value-added quality of foods. At the production and postharvest handling levels, enzymes associated with maturation , color , texture, flavor and nutritional changes are important. Recent examples are discussed which include longer storage prior to initiation of ripening , deletion or control of genes that result in softening1 browning and other quality defects and the enhancement of genes that improve the nutritional quality of foods. PLANNING is important to obtain the best value from growing vegetables at home and many types can be satisfactorily stored for later use to provide a welcome change of diet when they are not generally available.
Whatever is home grown can be picked absolutely fresh and at the best stage for eating, but there is no advantage in growing too much or in growing lines which are plentiful and cheap on the market when yours are ready to pick.
