Background: Using the framework of the Socio-Ecological Model, the current study aimed to investigate the associations between nutritional knowledge, food environment, food acquisition behavior, and daily recommended fruit and vegetable consumption (≥5 cups of fruits and vegetables) among Burmese refugees and immigrants in the Capital Region, New York. Methods: During July - November 2018, a cross-sectional survey with face-to-face interviews was conducted among Burmese refugees and immigrants aged 18 years and older living in Albany and Rensselaer counties (n=173, 52.0% female, mean age = 42.8). Food consumption has been largely researched in many areas. Most extant studies have highlighted the influences of socio-economic and cultural factors on people’s eating habits. These studies inform policy strategies by proposing campaigns and methods to improve nutritional intake among people of diverse socio-economic and geographical backgrounds. At the same time, they implicitly point out that food consumption may carry educational values that are co-constructed through food eaters’ engagement with the world. This requires researchers to go beyond the current methodological approaches that epistemologically focus on the factors that influence nutritional intake and eating habits. Background: Forty percent of the US population ages 20-39 are categorized as obese,
their BMI is over 30, and 35% of college age students are obese or overweight. Issues related to obesity cost the US $147 billion annually. Between 40%-50% of college students are reported to be inactive. Inactivity can lead to increased morbidity and mortality related to increased risks of cardiovascular disease, diabetes, hypertension, musculoskeletal issues, and depression. Providing dietary and physical activity education and access to nutritional information promotes behavior change in young adults.

The purpose of this pragmatic mixed-methods study was to identify the factors that impact a nutrition professional’s preceptorship decision and potential solutions to combat preceptor shortages within accredited nutrition and dietetics programs. Homan’s social exchange theory provided the theoretical framework that if perceived costs of preceptorship outweigh the perceived benefits, then the activity will cease.
Phase one of the study included an online mixed-methods questionnaire. Phase two included a qualitative focus group and interview with self-identified volunteers from phase one. Nutrition therapy has lately gained attention as an effective way of combating the novel Coronavirus 2019 (COVID-19), especially to address the immunity in an individual and their overall health. The present study is a bibliometric assessment of research conducted to understand the role of nutrition in treating COVID-19 which was carried out since the pandemic's sudden outburst during 2020 and 2021 and published in the Scopus database. Although the root is widely consumed, sweetpotato leaves (SPL) are often discarded and are only consumed in a few countries. In the United States, SPL consumption is limited to private gardens, particularly in the Southeastern United States. Not only are SPL a good source of nutrients such as vitamins and minerals, but they also contain polyphenol compounds including the caffeoylquinic acid derivatives and carotenoids such as lutein. Food Insecurity (FI) is defined as a condition in which individuals lack access to adequate food due to limited financial resources. FI is estimated to impact 12% of households in United States. Date seeds are an ideal source of polyphenols for the food industry. This doctoral work investigated Khalas variety date seeds in three forms, as powder (DSP), ethanolic extract (DSE) and functional food developed with the seeds; pita bread (DSB). The study characterised the polyphenol profile by mass spectrometry and investigated the bioaccessibility using simulated in vitro digestion coupled with Caco- 2 model for absorption and transport. It further explored the bioavailability of date seed polyphenols in vivo in humans by conducting a cross-over study in 16 healthy volunteers. Edible insects are increasingly being considered as food and feed ingredients because of their rich nutrient content. Already, edible insect farming has taken-off in Africa, but quality and safety concerns call for simple, actionable hazard control mechanisms. We examined the effects of traditional processing techniques—boiling, toasting, solar-drying, oven-drying, boiling + oven-drying, boiling + solar-drying, toasting + oven-drying, toasting + solar-drying—on the proximate composition and microbiological quality of adult Acheta domesticus and Ruspolia differens, the prepupae of Hermetia illucens and 5th instar larvae of Spodoptera littoralis. Depression is a major clinical concern, having a complex onset and the presence of multiple, often unidentifiable causes. Depression affects millions of individuals worldwide, with a high prevalence in regions of the world with a Western-style diet as compared to regions with a Mediterranean diet. An in vitro study was planned to assess the effects of a homofermentative microbial inoculant on the fermentation parameters and nutritive value of corn silage. The inoculant was applied at concentrations of 5x104cfu/g of forage (T1), 1x105cfu/g of forage (T2) 1.5x105cfu/g of forage (T3) and a negative control group (T0) without bacterial inoculant in three replicates each. At day 3, 7, 45 and 90 of the experiment individual buckets were opened to characterize the material, quick acidification, dry matter recovery, and aerobic stability of silage respectively. The utilization of brewer's spent grain for the production of malt flour is the focus of this article. The reader is presented with superheated steam and extrusion as technologies to reduce mycotoxin contamination and improve shelf life. Another option is the fermentation of brewer's spent grain with a cereal grade lactic acid bacteria for the production of sourdough bread. Milling of the brewer's spent grain for the production of bread is also covered.

The Double Your Dollar (DYD) Program is a program that gives Supplemental Nutrition Assistance Program (SNAP) beneficiaries and Senior Farmers Market Nutrition Program (SFMNP) participants match dollars to spend at local farmers markets. The DYD’s goal is to incentivize healthy eating among individuals of low income and promote spending at farmers markets. Food insecurity affects over 60,000 individuals in Washington and Benton counties in Arkansas. The purpose of this study was to evaluate the acceptability and usability of an online training to prepare Expanded Food and Nutrition Education Program (EFNEP) educators to collect 24-hr dietary recalls using the Automated Self-Administered 24-Hour Dietary Assessment Tool (ASA24). Fifty-eight educators in 17 states were recruited to take the training; 29 completed the online training, assisted two individuals in completing a 24-hr recall using ASA24, and completed a survey about their experiences. Background: Quality of life for patients with end stage renal disease is less than similar-aged, general population counterparts. A large part of the decrease in quality of life is change of diet and nutritional restrictions, oral nutrition supplements are a way to combat this decrease in quality of life.
Methods: An ice cream substitute product was developed for patients with end stage renal disease and that are on dialysis. The product consisted of rice milk, egg whites, evaporated coconut milk, sugar, and vanilla bean paste. There were two flavors: cinnamon and lemon. Selenium (Se) biofortification of plants has been suggested as a method for enhancing dietary Se intake. Popular herbs such as basil (Ocimum basilicum), cilantro (Coriandrum sativum), and scallions (Allium fistulosum) are used for enhancing flavors. Microgreens are young seedlings harvested with one to two true leaves and are increasingly popular in the consumer marketplace. Recently published scientific articles have led to mixed nutritional advice on dietary saturated fatty acids. Lesser et. al (2007) identified that mixed conclusions in scientific articles on sweetened beverages might be attributed industry funding, as articles funded by the beverage industry are four to eight times more likely to report conclusions in favor of the sponsor’s products. This thesis applies Lesser’s methods to determine whether industry funding influences the inconsistent conclusions on saturated fatty acids. This thesis analyzes 100 articles on foods high in dietary saturated fatty acids. While studies with food industry funding are more likely to produce favorable …
