In order to relate composition, processing and product properties of fat spreads, a proper description of the microstructure of these products is required . A technique for the observation of the three-dimensional product structure has been developed which allows free observation of the solid crystalline matrix by removing the liquid oil phase from a fat spread with a solvent system. To perform the different preparation steps required in a reproducible and efficient way, a special sample holder was constructed. Application of preformed sintered bronze elements allows free penetration of the organic solvents. In general, reproducible results are obtained with retention …

The aim of this investigation was to observe the effects of three drying methods on the microstructure and rehydration properties of the Phoenix Oyster mushroom. Mushrooms were dried at 55C by air-, freeze- and vacuum-drying pilot plant processes. At the microstructural level, the hyphae of the air-dried samples were more flattened and collapsed than the vacuum - and freeze dried samples. The Basidia were distorted by all three treatments to a certain extent, but there seemed to be less damage on the gill surface of the vacuum-dried samples. The structure of the hen's egg shell can be divided into five separate layers . The Innermost layer consists of two distinct membranes known as the inner and outer shell membranes. These membranes are compos ed of networks of protein/polysaccharide fibres and are =70 mm thick. The objective of this study was to document the microstructure of finger millet wlth scanning electron and fluorescence microscopies. Finger millet is an utricle which is spheri ca 1 and about 1 . 5 ITlT1 in diameter. The membranous peri carp of finger millet was loosely associated with the seed at maturity. Beneath the loose pericarp wa s a five-layered testa that varied from red to purple in color. The coagulating properties of five coagulants and the nature of the curd obtained from soymilk was investigated . Viscosity changes during coagulation were studied using a Namctrc Vibrating Sphere Viscometer and texture measurements were made by compression and computer assisted analysis. pH and amount of solids in the whey were determined. The microstructure of the tofu was examined by sca nning electron microscopy. It was observed that CaCI2.2H20 and MgCI2.6H20 coagulaled the milk in stantl y while CaS04 .1/2H20. glucono delta l a~tonc (GOL) and MgS04 .7H20 acted comparatively slowly. Light and scanning electron microscopy have been employed as part of an on-going study on the effect of the milling system on flour composition and quality. Examples are given of some areas where microscopy has been particularly useful in understanding the functional changes that take place during milling or the subsequent processing of the flour . The use of heavy reduction roll pressures was shown to modify gluten protein quality as well as produce the desired increase in starch damage. Chiarella and Spirulina algae were spray-dried and freezedried under several different conditions, and the morphological changes induced were studied by scanning electron microscopy. The internal structure of the particles (granules) was revealed by cryofracturing. The cellular composition of the two algae, method of drying, cell concentration, feed conditions, temperature, and drying times all affected the external morphology of the resulting powders. In the case of spray-drying, at a temperature of 160 °C for 6 sec, the particles shrunk or collapsed; if the drying time was over 10 sec at 160 °C, similar results were observed. Miso was prepared from winged bean, being substituted for soybean. Microstructural changes of winged bean miso at various stages of the manufacturing processes were studied by means of light and transmission electron microscopies. Soybean was also studied for comparison.
After steaming , winged bean and soybean cells were shrunken and intracellular spaces enlarged and cell wall structure was degraded, showing layered structures and aggregated lumps in intraspaces between cell walls during fermentation into misc . The practice of selecting representative fields ignores variation and leads to word descriptions that cannot be correlated with numerical scores for functional or sensory tests . Milk contains different types of colloidal or coarsely dispersed particles, such as casein micelles, membrane fragments, fat globules and cells. The fat globules are composed of subpopulations of differently sized particles. In contrast to COW 1S milk, the overall average diameter (dys), increases with advancing lactation from about 1.8 ~min colostrum to 4.0 ~min mature milk. Membrane materials originating from the milk fat globule membrane, plasma membrane, secretory vesicles and other sources can be found in milk serum. Four batches of pasteurized process cheese were prepared from the same Cheddar cheese by cooking to 82C in the presence of sodium citrate, disodium phosphate, tetrasodium pyrophosphate or sodium aluminum phosphate. Each batch contained the same moisture (40.6%) and emulsifying salt concentration (2.5%). The process cheese was sampled for microstructural and rheological examination after 0, 5, 10, 20 and 40 min in the cooker at 82C.
Even though each emulsifying salt affected the physical properties of the process cheese differently, the cheese generally became firmer, stiffer, more elastic and less meltable as cooking time increased from 0 to 40 min. …
