The transmission and infection of enteric viruses can be influenced by co-existing bacteria within the environment and host. However, the viral binding ligands on bacteria and the underlying interaction mechanisms remain unclear. This study characterized the association of norovirus surrogate Tulane virus (TuV) and murine norovirus (MNV) as well as the human enteric virus Aichi virus (AiV) with six bacteria strains (Pantoea agglomerans, Pantoea ananatis, Bacillus cereus, Enterobacter cloacae, Exiguobacterium sibiricum, Pseudomonas spp.). At room temperature, the viruses bound to all bacteria in strain-dependent rates and remained bound for at least 2 h. The virus association with two gram-positive bacteria …

The goal of this research was to use supercritical carbon dioxide (SC-CO2) drying as a novel approach to generate sorghum protein concentrates with enhanced functional characteristics. Sorghum protein concentrates were extracted from white whole-grain sorghum flour and dried in two ways: freeze-drying and SC-CO2 drying. The dried proteins were characterized for their volatile compound content, in vitro digestibility, and amino acid composition. A more porous structure was observed for the SC-CO2-dried sorghum proteins compared with their freeze-dried counterparts. Nearly two out of every five households in Rhode Island experience difficulties accessing adequate and nutritious food, falling into the category of food insecure. While it is not the responsibility of a sole organization to reverse this complex systemic issue, collaborative efforts are a step toward combating food insecurity and systems resilience through improving food literacy. When accomplished within a community, adequate food literacy can combat food insecurity. To the same effect, food insecurity may cause a lack of food literacy.

Wild rice (mannoomin; Zizania palustris) is an aquatic grain that grows in slow-moving rivers and shallow bays throughout northern Minnesota. In Headquarters Bay on Leech Lake, wild rice has served as a cultural staple for Indigenous communities for centuries. However, its population has declined in recent years due to multiple environmental issues. One potential contributor is Eurasian watermilfoil (Myriophyllum spicatum; EWM), an invasive species that forms dense mats capable of outcompeting native aquatic vegetation, including wild rice. The highly perishable nature of Rubus berries, particularly their susceptibility to water loss and earlier senescence, significantly limits their shelf life. In this study, we investigated the mechanistic role of modified atmosphere packaging (MAP) on the physiochemical quality, phenolic metabolism, and antioxidant potential of blackberries and raspberries during cold storage (2 ± 1 °C) for 12 and 10 days, respectively. Modified atmosphere (MA)-packed Rubus berries exhibited higher total phenolics accompanied by higher activities of shikimate dehydrogenase, and phenylalanine ammonia-lyase. Furthermore, MA-packed Rubus berries demonstrated lower hydrogen peroxide by maintaining higher catalase activity and delayed lipid peroxidation during the entire period …

The increased interest in black soldier fly larvae (BSFL) oil is driven by its beneficial fatty acid composition, leading to the development of effective extraction methods. This study evaluated the impact of solvent extraction (SE) and enzyme-assisted extraction (EAE) on the yield and quality of BSFL oil. SE using hexane, petroleum ether, isopropanol, and ethanol after 6 hr of extraction resulted in higher yields compared to EAE using alcalase, papain, and trypsin after 24 hr, with the highest yield recorded for petroleum ether (33%), followed by isopropanol (30%). Chilling injury (CI) hinders prolonged cold storage of mangoes (Mangifera indica L.). Hence, the influence of postharvest aqueous ozonation (PAO) (1 mg ozone s− 1) of mature green ‘Kensington Pride’ mangoes for 10, 20 and 30 min preceding storage at 5 °C for 21 and 28 d on modulating CI, cell membrane integrity, ascorbate-glutathione (AsA-GSH) cycle, antioxidant enzymes and fruit quality were investigated. The effects of preharvest methyl jasmonate (MeJA) spray application on the physicochemical quality, metabolism of phenolics, and cell wall components in raspberries were investigated during a 10-day cold storage period. MeJA spray reduced firmness loss, decay incidence, and weight loss, while maintained higher levels of soluble solids content, ascorbic acid, anthocyanins and flavonoids in raspberries. Furthermore, MeJA application resulted in increased total pectin and protopectin levels, as well as lowered water-soluble pectin, and activities of pectin methyl esterase, polygalacturonase and cellulase enzymes. Methyl jasmonate (MeJA) is widely studied for maintaining fruit quality during storage, but its effects on jackfruit remain unexplored. The efficacy of postharvest MeJA dip application (0, 0.25, 0.5, and 1.0 mM) in maintaining postharvest quality of cold stored jackfruit bulbs was evaluated over 20 d cold storage duration at 6 °C and 85–90% relative humidity. Bulbs treated with 1.0 mM MeJA did not exhibit any disease symptoms over the entire cold storage duration. Low-lying deltas worldwide are extremely vulnerable to sea-level rise. As the risks of climate-induced flooding become increasingly clear, the thirst for infrastructure-driven adaptation increases. This highlights a patent need to understand the impacts of engineering adaptation solutions, especially those targeting built structures such as dykes and sluices, on farmers from a bottom-up, farmer-centred perspective. The study addresses this call by examining cases where dyke policies, while successful in some dimensions, have undermined small-scale farmer livelihoods in Ca Mau ― Vietnam’s southernmost rural province. JBS has been at the center of various controversies over the last several years, including sourcing cattle from ranches acquired through illegal deforestation, engaging in greenwashing practices, incorrectly reporting greenhouse gas emissions, and engaging in human rights abuses. This study aimed to optimize the extraction of bioactive compounds from rambutan peel using Pulsed Electric Field (PEF) technology and evaluate its functionality as a natural antioxidant. A Central Composite Design (CCD) was employed to examine the effects of ethanol concentration, electric field intensity, and pulse number on extraction efficiency. Response Surface Methodology (RSM) analysis revealed that the optimization model achieved a high composite desirability (D = 0.982). The optimal extraction conditions were identified as 70% ethanol, an electric field intensity of 4,000 V/cm, and 120 pulses. Eastern oyster aquaculture has increased steadily over the last three decades, but the industry has yet to achieve its full potential. In the Northeast USA, production is limited in part by a lack of high performing stocks suited to the geographically broad and heterogenous growing environments. This thesis addresses the feasibility of reusing reverse osmosis concentrate (ROC) in the bourbon whiskey fermentation processes. Initial work compared laboratory-scale mashing and fermentation methods, demonstrating that simultaneous saccharification and fermentation reliably reflects industrial-scale processes, with lower complexity and process time. Building upon this, laboratory and distillery-scale experiments demonstrated that reusing ROC in the mashing and fermentation steps does not negatively impact ethanol yields. ROC produced by systems with a water softener was found to significantly increase mash rheology, suggesting a need for potential process adjustments. Softened ROC also altered the production of flavor-influencing volatile congeners. Under worst case conditions, …

However, concerns about food safety, particularly the presence of pathogenic bacteria such as Escherichia coli and Listeria monocytogenes, remain a barrier to consumer acceptance and industrial use. This study evaluated the effectiveness of thermal processing in inactivating E. coli, L. monocytogenes, and their non-pathogenic surrogates (E. coli JM109 and Listeria innocua) in both fresh and dehydrated forms of Tenebrio molitor (mealworm) and Acheta domesticus (cricket). Globally, soybean is the most widely cultivated oilseed crops, and serve as the primary source of cooking oil, contributing to around 50% of global oilseed production. During the industrial processing of soybean oil, a significant amount of soybean hull (SH) is produced, which makes up about 8% of the grain yield, resulting in approximately 18–20 million tons of hulls, one of the largest by-products in the soybean industry. Conventional meat consumption derived from livestock farming is one of the leading causes of greenhouse gas emissions and environmental degradation on our planet. Substituting conventional meat products with “meat alternatives” such as plant-based meat or cultured meat would drastically decrease greenhouse gas emissions, reduce land and water pollution, and decrease land and water usage. However, it is necessary to first gauge how people feel about eating plant-based meat and cultured meat before it is possible to discern the magnitude of environmental benefits that occur with a significant dietary change such as this. Since the early 2010s, the seaweed aquaculture industry has steadily expanded in the United States, with states like Alaska, Maine, Hawaii, and Connecticut leading the way in the development of this emerging sector. However, information gaps remain concerning certain aspects of the domestic seaweed aquaculture industry. The purpose of this study was to examine the status of the seaweed aquaculture industry along the West Coast of the United States; specifically in the states of California, Oregon, and Washington.
