Mechanisms Of The Quality Changes Of Polygonati Rhizoma Processed By Steaming-Drying Cycles, Zicong Yu, Liuping Fan

[Objective ] This study aims to investigate the effects of steaming-drying cycles on the quality changes of Polygonati rhizoma and optimize the processing technology to enhance its application value.[Method ] Slices of Polygonati rhizoma processed by 0~5 steaming-drying cycles were prepared.The drying rate and drying kinetics during the drying stage after each cycle were analyzed,and a drying model was fitted.Changes in color difference,appearance,hardness,and mass fractions of polysaccharides,reducing sugars,polyphenols,flavonoids,saponins,and calcium oxalate raphides were measured.[Result ] The number of steaming-drying cycles significantly affected the quality of Polygonati rhizoma.The drying rate decreased as the drying time increased,conforming to the Modified Page model,while the …

[Objective ] This study determined the mold count,total plate count,and osmophilic yeast count in Apis cerana honey and explored the correlations of osmophilic yeasts with quality parameters and storage conditions of the honey.[Method ] A total of 105 Apis cerana honey samples were used for the determination of mold count,total plate count,and osmophilic yeast count,as well as odor,moisture,phenolic acids,and carbohydrates.The correlations between quality indexes and osmophilic yeasts and the effects of different storage conditions on osmophilic yeast count were explored.[Result ] Among the 105 samples,1,1,and 67 samples showed the mold count,total plate count,and osmophilic yeast count exceeding the national standards.All …

[Objective ] This study aims to enhance the high osmotic pressure tolerance of Escherichia coli (E.coli ) for the efficient production of succinic acid.[Method ] Adaptive evolution,transcriptomic analysis,reverse metabolic engineering,and fermentation optimization were employed for improving E.coli tolerance to high osmotic pressure.[Result ] By analyzing the key factors influencing succinic acid production by fermentation,osmotic pressure was identified as the critical factor reducing succinic acid production efficiency.A mutant strain,E.coli FN-6,with tolerance to high osmotic pressure was obtained through adaptive evolution.The key gene cusC responsible for osmotic pressure tolerance was identified by transcriptomic analysis.After optimization of the expression level of cusC,the engineered …

[Objective ] The aim of this study is to evaluate and improve the antioxidant effects of natural antioxidants and their derivatives on anchovy (Engraulis japonicus ) oil.[Method ] The 60 ℃ accelerated oxidation model was used to evaluate the antioxidant effects of phytic acid,tea polyphenols (TP),rosemary extract,ascorbyl palmitate,vitamin E,tea polyphenol palmitate (TPP),and bamboo leaf extract on anchovy oil based on the peroxide value (POV ),thiobarbituric acid reactive substances (TBARS ) value,relative intensity of free radicals,and fatty acid composition.[Result ] TPP (single antioxidant ) and TPP+TP (composite antioxidant ) demonstrated the strongest antioxidant effects on anchovy oil.[Conclusion ] Although the antioxidant …

[Objective ] A fluorescent immunochromatographic assay was established based on vitamin B 1 monoclonal antibody to measure the vitamin B 1 in infant formula milk powder.[Method ] The performance of vitamin B 1 monoclonal antibody was evaluated.On this basis,a highly sensitive fluorescent immunochromatographic test strip was developed.[Result ] The vitamin B 1 monoclonal antibody showed high sensitivity,affinity,and specificity.The fluorescent immunochromatographic test strip showed a visual limit of detection (vLOD ) of 10 μg/kg,a cut-off value of 200 μg/kg,and a calculated limit of detection (cLOD ) of 2.056 μg/kg.In addition,the recovery rate of this method was 97.3%~115.4%.The test results of the …

[Objective ] This study aims to explore the physicochemical indicators,microbial diversity,and volatile substances in the Qupi (surface ) and Quxin (core) of high-temperature Daqu.[Method ] High-throughput sequencing and headspace solid-phase microextraction coupled with gas chromatography-mass spectrometry (HS-SPME-GC-MS ) were employed to compare the microbial diversity,volatile substances,and physicochemical indicators between Qupi and Quxin of three types of Daqu.[Result ] The moisture mass fraction in Qupi of the three types of Daqu was lower than that in Quxin (P<0.05),and the moisture mass fraction was the lowest in the Qupi of white Daqu (WP) and the highest in the Quxin of yellow Daqu (YX).The acidity of Qupi and Quxin were in the order of Quxin of black Daqu (BX) > YX > Qupi of black Daqu (BP) > Quxin of white Daqu (WX) > Qupi of yellow Daqu (YP) > WP.High-throughput sequencing results showed that Firmicutes and …

Following the observed significant improvements in overall survival and progression-free survival in clinical trials, the combination of atezolizumab and bevacizumab has been recommended as a first-line therapy for patients with unresectable hepatocellular carcinoma. Despite its clinical benefits, the high cost associated with this treatment poses a substantial challenge in routine practice in Taiwan. Synthetic cathinones are a widely abused class of new psychoactive substances that pose significant challenges in forensic toxicology owing to their complex metabolic pathways and lack of verified reference standards. This study investigated the in vitro metabolism of nine methylenedioxy-substituted synthetic cathinones, including methylone and eight structural isomers, which were categorized into three groups: Group 1 (dimethylone, ethylone, and butylone), Group 2 (dibutylone, pentylone, and eutylone), and Group 3 (N-ethylpentylone and dipentylone). Chronic atrophic gastritis (CAG) is precancerosis with limited treatment options. This study investigated the therapeutic effects of velvet antler (VA), a traditional natural medicine, on CAG, with a focus on ferroptosis. In vivo experiments demonstrated the efficacy of VA in alleviating CAG, and network pharmacology analysis revealed its involvement in related terms, including inflammation, oxidative stress, and cell proliferation. Analyses further confirmed the modulation of ferroptosis by VA, particularly via the Keap1-Nrf2/HO-1/GPX4 pathway. Jiao Sanxian (JSX) consists of three traditional Chinese medicine including charred hawthorn, malt and Liu Shen Qu, they are also from Chinese medicine homologous food. It is commonly used to relieve functional dyspepsia (FD). The present study aims to explore the mechanism of JSX (granule), with the addition of prebiotics for the treatment of FD using mice model. The network pharmacology and molecular docking were used to forecast therapeutic targets for JSX. This study investigated the use of 3D printing to co-encapsulate, protect, and enhance the bioaccessibility of lutein and anthocyanins. Coaxial extrusion 3D printing in a spiral-cube geometry was utilized with lutein-loaded zein as the core material and anthocyanins-loaded corn starch paste as the shell material. The research examined various printing conditions, including starch concentrations of 10% and 11%, and printing temperatures ranging from 45 °C to 85 °C. A comprehensive analysis of the inks’ properties, such as printability, viscosity, microstructural characteristics, storage stability, and bioaccessibility of the encapsulated compounds, was conducted. Foodborne pathogens pose significant risks to public health and food safety, necessitating innovative control strategies. High-pressure processing (HPP) was evaluated as an intervention against Listeria monocytogenes in cold-smoked rainbow trout, with treatments at 500 MPa and 4.4 °C and 60.0 °C achieving up to a 5.03 log CFU/g reduction. The efficacy of nisin in suppressing Listeria monocytogenes and Listeria innocua during refrigerated storage was also examined, demonstrating significant microbial inhibition, particularly in the early storage phase, supporting its application as a hurdle technology. While diet is known to affect gut microbes, less attention has been given to how food processing methods, such as heating, fermentation, and cold processing, change food in ways that influence the gut microbiome and health. Fresh-market blackberries face challenges with inconsistent flavor, limiting consumer demand. This study examines how harvest date and environmental conditions impact the physicochemical and volatile profiles of three cultivars (Sweet-Ark (R) Ponca, Sweet-Ark (R) Caddo, and Ouachita) grown in Fayetteville, AR, during the 2022-2023 seasons. Using targeted and untargeted GC-MS/MS approach, 262 volatile compounds across 12 classes were identified. Increased rainfall and cooler temperatures in 2023 positively affected Ouachita and Sweet-Ark (R) Caddo's physical attributes but reduced Sweet-Ark (R) Ponca's firmness and weight. Hepatitis A viral outbreaks continue to occur. It can be transmitted through aerosolized droplets and thus can contaminate surfaces and the environment. Ultraviolet light emitting diode (UV-C LED) systems are used for inactivation of microbes, though research is needed to determine optimal doses for aerosolized HAV inactivation. This study evaluates the UV-C LED doses for the inactivation of aerosolized hepatitis A virus (HAV) deposited on stainless-steel and glass discs. Two studies investigated various aspects of channel and hybrid catfish production and processing. The first study examined the effects of ammonia stress (15 mg/L vs. 1 mg/L control) on growth performance and fillet quality. While channel catfish demonstrated superior growth, ammonia stress minimally impacted the sensory profiles of both species. Gut microbiota analysis revealed species-specific differences, with Lactococcus lactis dominating hybrid catfish communities. The second study evaluated buffered vinegar treatment (1.5%) on fillet shelf life during refrigerated storage. Vinegar-treated fillets maintained better microbiological quality, with aerobic plate counts remaining below 7 log cfu/g through day 6, while untreated fillets exceeded …

The objective of this research was to investigate the biopreservative effects of chitosan and lemon essential oil in slush ice treatments on the microbial shelf life of refrigerated catfish fillets. Catfish fillets were stored in slush ice treatments containing chitosan (CH), lemon essential oil (LO), a combination (CH+LO), water (CTRL), and no slush (NS) for three d at 4 C, then stored at 4C for twelve d post-slush. The growth of background microflora in catfish fillets treated with CH and CH+LO was reduced (P<0.05), maintaining total aerobic counts below 4.5 log CFU/g, while the control reached spoilage levels (>7 log CFU/g) by Day 6.
