The recent demand for plant-based dairy alternatives has increased the focus on improving the organoleptic, and nutritional attributes of plant cheeses to match their dairy counterparts. This study aimed to develop a functional cheese using the synergistic interactions of rice glutelin and chickpea proteins to enhance both nutritional and textural properties. Functional characterization revealed that rice glutelin exhibited a higher water-holding capacity of 340 % and elevated solubility, while chickpea protein showed a superior oil-holding capacity of 550 % and higher surface hydrophobicity. Cheeses were prepared using a 40:60 blend of rice glutelin to chickpea protein, which yielded 21.3 % …

Strawberries deteriorate rapidly under warm, humid conditions, and to make things worse, in many tropical settings refrigerated logistics are limited. Edible biopolymer coatings offer a low-cost method to slow quality loss, but multicomponent formulations behave nonlinearly. In this study, ten types of coatings were developed and evaluated for their effects on the physicochemical (weight loss, firmness, total soluble solids (TSS), pH, color change (Delta E)) and biochemical properties (total phenolic content (TPC), antioxidant property (DPPH) of strawberries over a 6-day storage period at 25 degrees C (298.15K). The optimal formulation, consisting of 0.56 % (w/v) alginate, 0.33 % (w/v) guar …

Escherichia coli is a foodborne pathogenic bacterium that can cause diarrhea, while yhaV is a virulence-associated gene linked to the toxin–antitoxin system in E. coli. This study was aimed at evaluating the confirmation, specificity, and sensitivity of a yhaV gene primer using real-time polymerase chain reaction. The yhaV-targeting PCR successfully amplified a DNA fragment with an amplicon length of 207 bp (base pairs) under an annealing temperature optimized to a range of 54 °C to 62 °C via gradient PCR. The PCR using the primer pair produced a consistent Ct (cycle threshold) of 14.14 ± 0.05 and showed …

Effective environmental monitoring is critical for preventing microbial and allergenic cross-contamination. However, manual swabbing methods, commonly used to verify hygienic conditions, are prone to inconsistent results because of variability in pressure, coverage, and techniques. Two novel solutions will be explored to address these challenges: a robotic swabbing system with tactile sensing control, and a fluorescence/absorbance spectrometer for non-contact, protein-based residue detection. The robotic system was evaluated against trained and untrained humans, measuring water pickup, surface coverage, and pressure consistency. Concurrently, the fluorescence system analyzed model poultry protein soil to correlate spectral patterns with contamination levels. The robotic system demonstrated statistically …

Comparison Of Pcr-Based Methods For The Detection Of Canned Tuna Species, Chloe P. Castanon, Denise Hernandez, Akshay N. Khetrapal, Rosalee S. Hellberg

Food Science Faculty Articles and Research

Canned tuna is susceptible to mislabeling due to its high consumer demand, complex global supply chains, and range of prices. DNA barcoding of a short fragment of the mitochondrial control region (CR), termed the CR mini-barcode, has been established as an effective method for tuna species identification. However, the high level of DNA degradation in canned tuna products reduces the effectiveness of this method. Therefore, this study aimed to compare CR mini-barcoding to targeted (i.e., real-time or multiplex) PCR-based methods to determine the most effective approach for canned tuna species identification. DNA was extracted in duplicate from 24 canned tuna …

Nanovesicles Derived From Protocorm-Like Bodies Of Dendrobium Officinal Enhance Corneal Epithelial Repair And Reduce Inflammation In Dry Eye Disease Models, Bao Yuqing, Peng Chengyu, Zhang Fenglei, Zheng Yuqiang, Zhang Mingqi, He Wei

Journal of Food and Drug Analysis

Plant-derived nanovesicles (PDNVs) offer a promising, biocompatible therapeutic platform. In this study, we isolatednanovesicles from protocorm-like bodies of Dendrobium officinale (PLBs-NVs) and evaluated their efficacy in dry eyedisease (DED) models. PLBs-NVs protected human corneal epithelial cells against hyperosmotic stress, supportedwound repair, and inhibited inflammation in vitro. In a desiccating stress-induced DED mouse model, topical PLBs-NVstreatment significantly restored tear secretion, reduced corneal epithelial damage, and lowered levels of proinflammatorycytokines. These results suggest that PLBs-NVs are a safe, natural, and effective therapeutic strategy for DED, sup-porting their potential for future clinical translation in ocular surface disorders.

Protective Effects Of Jujube Seed Extract Against Oxidative Stress In Ht22 Cells And Its Sleep-Promoting Action Through Gabaergic Receptors, Seok Hyun Chung, Hyeongyeong Kim, Singeun Kim, Pan-Young Jeong, Hyowon Lee

Journal of Food and Drug Analysis

Jujube seed extract (JSE), rich in polyphenols and flavonoids, exhibits neuroprotective and sleep-enhancing properties. In vitro, JSE protected HT22 cells against oxidative stress by activating the Nrf2/HO-1 pathway and upregulatingantioxidant enzymes. In vivo, JSE increased non-REM sleep and delta wave activity in pentobarbital- and caffeine-induced sleep models. Spinosin contributed to these effects. Long-term JSE administration upregulated GABAA, GABAB, and 5-HT1A receptors in brain tissue. These findings suggest that JSE offers dual benefits in mitigating oxidativestress and promoting sleep through antioxidant defense and neurotransmitter modulation, supporting its potential as a natural therapeutic agent.

Research outputs 2022 to 2026

Persimmon fruit is highly susceptible to chilling injury (CI) during cold storage. This study was aimed at evaluating the effects of cinnamon bark oil (CBO, 4 μM) fumigation, modified atmosphere packaging (MAP), and a combination of CBO and MAP on CI of ‘Fuyu’ persimmons. Fourier-transform infrared (FT-IR) analysis revealed changes in the peel surface of CBO fumigated persimmons. Peel and flesh CI incidence and CI index were significantly reduced with a combined application of CBO and MAP. CBO + MAP exhibited lower ethylene production, malondialdehyde (MDA), hydrogen peroxide (H2O2), and lipoxygenase (LOX) activity, maintained higher flavonoids, and upregulated the ascorbate …
