The conversion of raw barley (Hordeum vulgare L.) to malt requires a process of controlled germination, where the grain is submerged in water to raise the moisture content to > 40%. The transmembrane proteins, aquaporins, influence water uptake during the initial stage of controlled germination, yet little is known of their involvement in malting. With the current focus on sustainability, understanding the mechanisms of water uptake and usage during the initial stages of malting has become vital in improving efficient malting practices. Jackfruit (Artocarpus heterophyllus Lam.), also known as ‘vegetarian’s meat’, is an excellent source of carbohydrates, protein, fiber, vitamins, minerals, and several phytochemicals. It is a climacteric fruit that exhibits an increase in ethylene biosynthesis and respiration rate during fruit ripening. The market value of jackfruit is reduced due to the deterioration of fruit quality during storage and transportation. Raspberries are highly perishable and have a short storage life. To extend its storage life, we evaluated the impact of preharvest melatonin (MEL) application (0, 50, 100, 200 mol L−1), three days before harvest, on the activities of oxidative and antioxidative enzymes and quality attributes in ‘Esperanza’ raspberries up to 10 d cold storage. The 200 mol L−1 MEL-treated raspberries exhibited a significant reduction in disease incidence while maintaining higher marketable fruit and activities of superoxide dismutase, glutathione reductase, dehydroascorbate reductase, monodehydroascorbate reductase, ascorbate peroxidase and catalase as compared to control. Apple fruit can be stored for long periods of time, especially with the use of controlled atmosphere storage, but like many fruits and vegetables are susceptible to water loss. Water loss can result in compromised appearance such as skin shriveling, as well as loss of firmness, and reduced saleable weight, which in turn affect the income of growers and other industry stakeholders. Preharvest factors that can influence water loss in apples during the postharvest period include climate, cultivar, fruit size, tree age, orchard practices, and harvest maturity. Scope: Edible insect proteins are increasingly introduced as an alternative sustainable food source to address the world's need to feed the growing population. Tropomyosin is the main insect allergen; however, additional potential allergens are not well characterized and the impact of extraction procedures on immunological reactivity is unknown. Methods and results: Proteins from different commercial food products derived from cricket (Acheta domesticus) and black soldier fly (BSF) (Hermetia illucens) are extracted using five different extraction buffers. However, similar regulations for alcohol alternative beverages are less explored, which could allow alcohol alternative products to create awareness for alcoholic beverages among youth. ackground Gut microbiome metabolites are important modulators of host health and disease. However, the overall metabolic potential of the gut microbiome and interactions with the host organs have been underexplored. Results Using stable isotope resolved metabolomics (SIRM) in mice orally gavaged with 13 C-inulin (a tracer), we first observed dynamic enrichment of 13 C-metabolites in cecum contents in the amino acids and short-chain fatty acid metabolism pathways. 13 C labeled metabolites were subsequently profiled comparatively in plasma, liver, brain, and skeletal muscle collected at 6, 12, and 24 h after the tracer administration. Objective: A study involving 7 experiment stations evaluated the effects of a second iron injection administered before weaning on growth and hematological measures of pigs.

Materials and Methods: Pigs (n = 514) were given an iron injection (100–200 mg) on the first day of life. Piglets were then allotted to pairs of similar-weight, samesex siblings 3 to 5 d before weaning (on d 18–24) with one piglet from each pair receiving a second iron injection. This study aimed to develop rice starch nanoparticles with enhanced heat resistance through a sequential combination of acid hydrolysis, ball milling, and cross-linking modification using sodium trimetaphosphate (STMP), while investigating the effects of these modifications on the physicochemical properties of rice starch. Native rice starch (25.2% amylose) was hydrolyzed using 3.16 M sulfuric acid at 40°C for up to 24 hours. A significant yield reduction occurred within the first 16 hours, followed by a slower decline; therefore, starch hydrolyzed within 16 hours was selected to minimize crystalline structure damage. This thesis contains 5 chapters: an introduction, three study sections, and a conclusion. Chapter 1 highlights the rationale and significance of studying dysphagic drinks through rheology. It introduces new high-protein, plant-based formulations and literature review of hydrocolloid studies for dysphagia management, utilizing both shear and extensional rheology to explore fluid behavior during swallowing. Chapter 2 presents the first study, which developed six high-protein soy-based supplement formulations for dysphagia management with varying caloric densities. Formulations with higher caloric densities than 1.5 kcal/mL showed increased viscosity and visual cohesiveness, making them suitable for extensional flow analysis. During the feedlot receiving period, newly weaned beef cattle face various stressors, including weaning, transportation, vaccination, and exposure to pathogens. Additionally, changes in diet and low dry matter intake contribute to nutrient deficiencies, heightening susceptibility to disease and performance declines. Therefore, we examined the effects of dietary supplementation with a multicomponent blend of prebiotics and probiotics on the health, immune status, metabolism, and performance of newly weaned beef steers during a 35-day receiving period. An average of 0.21 kg spent gin botanicals (SGB) is generated for every 1 L of gin, making it the major by-product of gin distillation. The present circular economy dynamics and increased awareness on resource use presents an opportunity for valorisation of SGB. SGB was optimised for polyphenol extraction using a three-factor Box-Behnken Design in response surface methodology (RSM). This was used to both optimise and study how the extraction variables affected yields and values of polyphenol and antioxidant activity of SGB. Agricultural effects on the environment are extensive, from loss of habitat and declines in regional biodiversity to disruption of global nutrient cycles and climate change. Global food production accounts for 26-34% of annual anthropogenic greenhouse gas emissions, makes up 38-46% of habitable land, and is responsible for 70% of freshwater extraction. The effects of caffeine and additives commonly found in energy drinks were tested on crayfish to record changes, if any, in their metabolism. Three experimental groups were studied: 1. Caffeine; 2. Caffeine + Glucuronolactone; 3.) Caffeine + Glucuronolactone + Taurine. Caffeine is a common stimulant used to improve mental awareness, headaches, memory, and athletic performance. Glucuronolactone is connected with cardiovascular issues and aggressive behavior. Taurine is said to improve mood and focus. Genome-to-phenome research in agriculture aims to improve crops through in silico predictions. Genome-wide association study (GWAS) is potent in identifying genomic loci that underlie important traits. As a statistical method, increasing the sample quantity, data quality, or diversity of the GWAS dataset positively impacts GWAS power. For more precise breeding, concrete candidate genes with exact functional variants must be discovered. Many post-GWAS methods have been developed to narrow down the associated genomic regions and, ideally, to predict candidate genes and causative mutations (CMs).
