Antioxidants sourced from nature play a pivotal role in maintaining human health. Enzymatic antioxidants like catalase and peroxidase, alongside high-molecular-weight non-enzymatic antioxidants such as albumin and ferritin, bolster cellular defense mechanisms. Phenolic compounds, plentiful in plants, act as antioxidants and fall into different categories like phenolic acids, flavonoids, tannins, lignans, and lignin. These compounds showcase antioxidant prowess by neutralizing free radicals and binding metals, with their efficacy influenced by structural nuances and environmental factors. The human gastrointestinal tract (GIT) harnesses various microbial organisms involved in almost all processes of physiological homeostasis, among these are lactic acid bacteria (LAB). These bacteria, almost all of which belong to the order Lactobacillales, are able to produce lactic acid, and play an important role in food preservation because they produce bacteriocins. Bacteriocins are antimicrobial proteins that are used to fight off related bacteria in their environment that are competing for the same resources. Streptomyces bacteria from soil often produce antibiotics which inhibit growth of other microbes. When comparing Streptomyces’ inhibitory ability between different soils, it may be important to match the pH of the medium used in assays to the pH of the soil they came from. We assayed Streptomyces isolates collected from a long-term agricultural experiment with nitrogen-fertilized and non-fertilized treatments to determine their ability to inhibit growth of other bacteria by producing antibiotics. Average soil pH was 6.8 in fertilized soil and 7.2 in non-fertilized soil. We dotted isolates on a glucose-asparagine agar medium adjusted to different pH values and overlaid …

Foraging is a broad topic, practiced in different locations throughout history. This study looks into the specific practices, values, and views of foraging in Iceland. There is little previous research that has been done, working with Icelanders, and hearing their stories. Through conducting several interviews of local Icelanders with different backgrounds and a brief six-question survey via the Inaturalist application, this study looks into exactly that. A sanitary challenge was carried out to induce suboptimal herd health while investigating the effect of amino acids supplementation on piglet responses. Weaned piglets of high sanitary status (6.33 ± 0.91 kg of BW) were distributed in a 2 × 2 factorial arrangement into two similar facilities with contrasting sanitary conditions and two different diets. Our results suggest that increased Trp, Thr, and Met dietary supplementation could support the immune systems of piglets under a sanitary challenge. In this manner, AA+ supplementation improved the performance and metabolism of piglets under mixed management and poor sanitary conditions. No major temporal microbiome …

Pentadesma butyracea seed butter or fat (PBSB) is a vegetable fat extracted from the seeds of the P. butyracea plant. The butter has potential use in the food, pharmaceutical, and cosmetic industries. The study investigated traditional PBSB processing methods in Ghana and evaluated their effects on yield, physicochemical parameters, and fatty acid composition. Background

Extracellular vesicles in human milk are critical in supporting newborn growth and development. Bioavailability of dietary extracellular vesicles may depend on the composition of membrane lipids. Single-nucleotide polymorphisms (SNPs) in the fatty acid desaturase gene cluster impact the content of long-chain polyunsaturated fatty acids in human milk phospholipids. This study investigated the relation between variation in FADS1 and FADS2 with the content of polyunsaturated fatty acids in extracellular vesicles from human milk.

The objective of the present study was to evaluate whether the content of sugar, protein, fat, or fibre in commercially available and specially formulated plant-based beverages (oat, soya and pea) influences the growth rates of Listeria. Beverages were inoculated with a strain cocktail of Listeria (approximately 1 × 103 CFU/mL), and the data demonstrated that Listeria could proliferate in all tested beverages. Moreover, varying concentrations of naturally occurring or added sugar (0–3.3%), protein (3.3–5%), fat (1.1–3.5%) and added fibre (0–1.5%) did not have a statistically significant (p > 0.05) impact on the growth rates of Listeria in the tested …

Recent studies have shown that the analytic-holistic theory is applicable in sensory science-related areas. Analytic and holistic cognitive style groups have been found to have significantly different perceptions and behaviors within food-related scenarios. These differences were further investigated and identified within the current study, focusing on specific areas of common sensory tests and analyses where analytic and holistic cognitive style groups may differ from one another. Before the main study, 419 volunteers were classified into three groups based on their scores to the Analysis-Holism Scale (AHS). This study focuses on producing and characterizing protein-polyphenol complexes derived from pea and hemp proteins, paired with a variety of polyphenols including 2,4-Dihydroxybenzoic acid, Ferulic acid, and Rutin. The complexes were characterized using various techniques: UV-visible spectroscopy, fluorescence spectroscopy, total phenolic content analysis, and radical scavenging activities. Further, oil-in-water emulsions stabilised using these protein-polyphenol complexes and starch were explored as delivery systems for curcumin respectively. The formation of complexes was revealed by UV-visible spectroscopy, which indicated significant changes in the spectra of hemp and pea proteins upon complexation with polyphenols. High-fiber, low-cost agricultural byproducts offer a sustainable alternative for mitigating the competition for crops between humans and livestock. Pigs predominantly utilize dietary fibers through the process of microbial fermentation within the gut. This study explored the gut microbiota and the capacity for carbohydrate degradation in 30 individual Lantang pigs, a breed indigenous to China. Through metagenomic analysis, a total of 671 metagenome-assembled genomes (MAGs) were assembled and assigned into 14 bacterial and 1 archaeal phylum, including 97 species from uncultured microbes. Sulfur containing compounds including glucosinolates (GLS), sulforaphane (SFN) and S-methyl-L-cysteine sulfoxide (SMCSO) have been proposed to be partly responsible for the beneficial health effects of cruciferous vegetables. As such, greater understanding of their measurements within foods is important to estimate intake in humans and to inform dietary intervention studies. Herein is described a simple and sensitive method for simultaneous analysis of 20 GLS, SFN and SMCSO by liquid chromatography mass spectrometry. The prevailing climate is an important factor affecting the development of the physical quality and flavor of cacao (Theobroma cacao L.) beans. The influence of harvest seasons on the physical, chemical, and flavor characteristics of cacao beans from Nakhon Si Thammarat Province, southern Thailand, was assessed. Among cacao beans, those harvested in the rainy season (R) had the highest fresh and dry weights and the lowest bean count per 100 g (87.00 ± 2.83). Pesticides are specially designed to control pests and help in increasing the yield of crops. This study aims to investigate the genotoxic effect of the major ingredients of commonly used pesticides (Profenophos and Cypermethrin) on Allium cepa L. in different regions of the province of Punjab, Pakistan. Profenophos and Cypermethrin pesticides are extensively used by local farmers. Six different dilutions of Profenophos and Cypermethrin pesticide ranging from, 0.5 ml/L, 1 ml/L, 1.5 ml/L, 2 ml/L, 2.5 ml/L and 3.0 ml/L were applied initially on seeds germination. Human milk oligosaccharides (HMOs) are a group of complex glycans in human milk and play an important role in promoting the growth and development of infants, and more than 200 kinds of HMOs have been identified so far. In this paper, the types and structures of HMOs and their roles in improving infant intestinal health, promoting immune system development and brain development were reviewed. The application status of HMOs was summarized, the possibility and necessity of industrial production and application of HMOs in the future were prospected.

Microfluidic chips are driven by microfluidic pumps and controlled by microfluidic valves in microfluidic systems to achieve accurate manipulation of microfluidics. With the continuous improvement of microfluidic chip integration, liquid channels have become more complex and have smaller volumes. How to achieve fluid drive and control at the micro scale has become a key focus in chip design. The paper elaborates on the current research status, key technologies, and development trends of micro pumps and micro valves both domestically and internationally, aiming to provide reference and guidance for the development of related industries and technological research.

Objective: To find, prepare and identify a new oxyphenisatine di(acetate) analogue. Methods: A suspected derivative of oxyphenisatine di(acetate) was found by high-performance liquid chromatography-quadrupole-time-of-flight-mass spectrometry during the routine screening of weight loss healthcare product. The compound was isolated and purified by column chromatography, and the possible structures were inferred from the information of isotope mass spectra, secondary ion mass spectra, one-dimensional and two-dimensional NMR spectra. Finally, all possible structures were prepared by de novo synthesis strategy, and their fine structures were confirmed by spectral comparison. Objective: This study aimed to explore the optimal medium composition and culture conditions for obtaining the maximum viable count of Brevibacillus laterosporus. Methods: Based on establishing the correlation regression equation between the MTT colorimetric method and plate counting method, the optimal medium composition (carbon source, nitrogen source, inorganic salt) and fermentation conditions (initial pH, temperature, inoculation amount, KH2PO4) for obtaining the maximum viable count of B. laterosporus were optimized. Objective: A formaldehyde detection method was established for the accurate analysis of the migration of formaldehyde in water and acid simulants from the polylactic acid straws. Methods: The preferred chromatographic conditions were: mobile phase water-acetonitrile (VwaterVacetonitrile of 55∶45), column temperature of 35 ℃, detection wavelength of 355 nm.
