In order to establish optimal drying modes for an aqueous extract from the aboveground part of Scutellaria adenostegia, the following parameters were studied: solution concentration; solution feed rate; temperature of the drying agent at the inlet and outlet; pressure when the solution is fed into the drying chamber. It was found that in order to obtain a dry extract from the aboveground part of Scutellaria adenostegia, antihypoxic action, an aqueous extract obtained with water at a temperature of 60 ° C must be concentrated to a content of 15% of dry substances and dried in a spray dryer of the …

OBJECTIVE, The consumption of red and processed meat in the U.S. diet is rooted in psychological and social determinants. While meat alternatives (e.g., Beyond Beef) have recently entered the food and beverage market, they are not well received by consumers. This project was intended to investigate the feasibility of a proposed modular dairy processing facility collocated with a small dairy on the University of Nebraska–Lincoln’s Innovation Campus. Priority was placed upon cost savings for equipment to be used in processing. Process flow diagrams, floor plans, production schedules, risk assessments, and plans for wastewater treatment were all developed to address the needs of the plant should it be built. A Monte Carlo simulation was conducted to evaluate the timeline for breaking even financially, resulting in the potential for a payback period of 4.5 years. Growing butter markets, domestically and globally, provide opportunities for value-added variants of butter. Adding probiotics to butter could boosts its bioactivity; however, maintaining probiotic viability during storage is a major challenge. Mathematical analysis of probiotic population changes could help improve our understanding of how probiotics interact with butter and storage conditions. With the growing demand and variety of meat analogs on the commercial market, there is a need to revisit the methodology for the detection of foodborne pathogens in these products. The current Food and Drug Administration (FDA) regulatory methods for Salmonella enterica detection in meat analogs follow the Bacteriological Analytical Manual (BAM) and are time-consuming and costly, requiring pre-enrichment using lactose broth (LB) with a surfactant (e.g., Triton X-100). The glycation of amino acids with carbonyl groups of reducing sugars produces advanced glycation end-products (AGEs). These AGEs can be harmful to health over time. The research objective was to compare the effects of 0-1.00 mM chlorogenic acid (CGA) and caffeic acid (CA) on AGEs formed in glucose-lysine solutions at 25 °C, 63 °C and 100 °C for 30 and 60 minutes by measuring fluorescent AGEs: vesperlysine A and B, vesperlysine C, and total AGEs, and non- fluorescent carboxymethyl-lysine (CML) and carboxyethyl-lysine (CEL) with LC-MS. The popularity of insect protein as a food and feed supplement is growing. Protein quality, end use and prices vary considerably between different insect species, which may incentivise insect protein adulteration. Here, near-infrared (NIR) spectroscopy and chemometrics were used to detect the presence of cricket, black soldier fly larvae (BSFL) and mealworm proteins in a simulated complex insect protein mixture. Additionally, BSFL protein powders collected from three commercial sources were investigated to determine whether the NIR-based technology can discriminate the proteins obtained from different companies based on their composition. This study evaluates the structural, physicochemical, functional and rheological properties of papaya dietary fibers (DFs) extracted by alkaline, water and combination of water/wet ball milling. The particle size of DF subjected to water/wet ball milling (WB-DF) was considerably reduced compared to DF extracted by water (W-DF) or alkaline (AL-DF) methods. WB-DF in comparison AL-DF increased the water holding capacity (WHC) by 4.1 folds, oil holding capacity (OHC) by 1.7 folds and water swelling capacity (WSC) by 2.6 folds. A straightforward, fast and efficient analytical method was developed which utilizes a magnetic composite called three-dimensional graphene (3D-G@Fe3O4) as an adsorbent to recover nitrite ions (NO2) from environmental water samples. The investigation into the synthesized adsorbent contained an examination of its morphology, chemical composition, structural attributes, and magnetic properties. A surrogate is commonly used for process validations. The industry often uses the target log cycle reduction for the test (LCRTest) microorganism (surrogate) to be equal to the desired log cycle reduction for the target (LCRTarget) microorganism (pathogen). When the surrogate is too conservative with far greater resistance than the pathogen, the food may be overprocessed with quality and cost consequences. This study investigated the phenolic compounds in date fruits, mainly soluble and hydrolyzable compounds, and insoluble melanin. Soluble (27.5–54.0 mg/100 g FW) and hydrolyzable (24.0–78.5 mg/100g FW) phenolic compounds were determined in 18 cultivars using ultra-performance liquid chromatography coupled with mass spectrometry. Phenolic acids were predominant in both fractions while flavonoids were mainly present in the soluble phenolic fraction and the proanthocyanidin B1 and B2 were only present in the hydrolyzable fraction. Four total antioxidant activity assays (total phenolic content, ABTS, FRAP, and DPPH) gave different results for both the soluble and hydrolysable fractions of 26 date fruit cultivars, which …

Objective: This study aimed to develop novel soybean protein isolate (SPI)-based emulsifiers. Methods: The structure of SPI was modified by limited enzymolysis combined with glycosylation and the effects of this synergistic modification on the emulsification characteristics of SPI was studied. Results: Among the different components obtained from the SPI hydrolysate (SPIH), the high molecular mass component (F30) exhibited the best emulsifying property. The emulsifying stability of F30-dextran conjugates obtained for 4 h was the best. Objective: Exploring the optimal process for the degradation of T-2 toxin in beer by glow discharge plasma(GDP) and its impact on the physicochemical indicators of beer. Methods: Based on single-factor experiments, a response surface optimization experiment with four factors and three levels was conducted using the Box Behnken method to determine the optimal degradation conditions for T-2 toxin in beer.
