Bilirubin levels in obese humans and rodents have been shown to be lower than in their lean counterparts. Some studies have proposed that the glucuronyl UGT1A1 enzyme that clears bilirubin from the blood increases in the liver with obesity. UGT1A1 clearance of bilirubin allows more conjugated bilirubin to enter the intestine, where it is catabolized into urobilin, which can be then absorbed via the hepatic portal vein. We hypothesized that when bilirubin levels are decreased, the urobilin increases in the plasma of obese humans, as compared to lean humans. Plant-based proteins, in particular pulse proteins, have grown in popularity worldwide. Germination, or sprouting, is an effective method to release peptides and other dietary compounds. However, the combination of germination and gastrointestinal digestion in enhancing the release of dietary compounds with potential health-beneficial biological activity has yet to be entirely elucidated. The present study illustrates the impact of germination and gastrointestinal digestion on the release of dietary compounds with antioxidant activity from chickpeas (Cicer arietinum L.). Peanut allergen Ara h 6 is known to maintain IgE‐binding capacity upon exposure to digestive enzymes1 and its presence in circulation after consumption of peanut has been demonstrated.2,3 Therefore, it has been speculated that food‐derived allergens could be transferred via blood transfusion products, causing an allergic reaction in food-allergic recipients.4,5 However, in published case reports, presence of food allergen in donated material could not be confirmed due to lack of remaining transfusion material and/or lack of sensitive analytical methods. Controlled environment research on tomato (Solanum lycopersicum) is often hindered by large plant size. Desired cultivar traits for research include a compact plant size, fast flowering time, and good fruit set. We grew eight micro-dwarf tomato cultivars to examine their suitability as model plants for research. The cultivar ‘Rejina Red’ had the highest harvest index and most ripe fruits among the red-fruited cultivars; ‘Jochalos’ had the highest harvest index and most ripe fruits among the yellow-fruited cultivars. ‘Microtina’ had a higher harvest index than ‘Rosy Finch’, but fruits were smaller, and growth was less determinate. ‘Monetka’ had a …

The weight changes, survival/mortality rates, and proximate compositions of Tenebrio molitor (yellow mealworm) larvae whose diets were supplemented with apple pomace were analyzed after a 4-week feeding study to examine the nutritional quality of the insects for use as a future potential food source. Going forward, the terms “mealworm(s)”, "yellow mealworm(s)”, “T. molitor” will be used interchangeably and will always refer to the same species. Background: Recent foodborne illness outbreaks have been linked to fresh fruits and vegetables. For public safety, awareness of the risks of contamination from foodborne pathogens that can occur during post-harvest farming practices is essential to prevent foodborne outbreaks. Controlling the spread of foodborne pathogens on produce requires proper washing procedures, antimicrobials and doses. Given the speed and diversity of the produce being distributed, local incidents may become international emergencies. Background:Withania somnifera (L.) Dunal, popularly known as Ashwagandha, is an ethnomedicinal plant with multiple pharmacotherapeutic applications. The diverse medicinal properties of the plant are largely due to the presence of withanolides, a group of C28 ergostane based steroidal lactones, with several sites of unsaturation and oxygenation. Withaferin A, a major with anolide present in Ashwagandha plant accounts for its emerging new roles to treat cancer, arthritis, inflammatory responses, immunomodulatory properties, and neuronal disorders. A growing interest in sustainable waste management and the implementation of new policies have prompted a shift towards alternative resource recovery methods for organic waste, including food waste. To effectively assess alternative food waste treatment scenarios, it is important to evaluate the life cycle impacts associated with each scenario. The purpose of this experiment is to determine the thermal kinetic parameters of Salmonella in moisture-enhanced, reconstructed ground chicken patties as affected by temperatures and salt concentrations. Salmonella is responsible for 35% of the foodborne illnesses associated with poultry products (Batz et al., 2011). Nonintact reconstructed chicken meat is mixed with brine solutions containing various salt and polyphosphate concentrations to increase water-holding capacity, decrease cooking losses, improve sensory tasting scores, and maintain the good quality of completed chicken products (Gill et al., 2004). Blackberries and raspberries, commonly known as Rubus berries, are commercially grown worldwide across different climates. Rubus berries contain wide array of phytochemicals, vitamins, dietary fibers, minerals, and unsaturated fatty acids. Nevertheless, these berries have short storage life which is the major constraint in their supply chains leading to higher postharvest losses. Inappropriate harvest handling, physical bruising, insect pests, and postharvest diseases lower the acceptability of fruit among consumers and other supply chain stakeholders. Algae-derived protein has immense potential to provide high-quality protein foods for the expanding human population. To meet its potential, a broad range of scientific tools are required to identify optimal algal strains from the hundreds of thousands available and identify ideal growing conditions for strains that produce high-quality protein with functional benefits. A research pipeline that includes proteomics can provide a deeper interpretation of microalgal composition and biochemistry in the pursuit of these goals. A massive amount of crustaceans and bivalves are consumed each year, leading to millions of tons of processing side streams from the seafood industry. Considering the current trend of (bio)circular and zero-waste food production, crustacean and bivalve processing side streams (CBPS) seem a promising and emerging resource for producing high-value-added products. This paper highlights the general composition of CBPS with high commercial values, namely, protein, lipids, carotenoids, minerals and chitins. The extraction strategies of these fractions, including conventional chemical and environmentally friendly methods, are also discussed. This paper investigates a novel biorefinery process designed for the extraction of valuable compounds from brown seaweed Alaria esculenta using hydrodynamic cavitation (HDC). A two-stage process was developed to maximize the value of seaweed biomass by control of the processing time, solvent selection and HDC conditions to extract laminarin, alginate, mannitol and protein in a cascading manner, maximizing the value of seaweed biomass. After the first extraction stage using 0.1 M HCl, membrane ultrafiltration was employed to separate laminarin and mannitol. From the early twentieth century onward, much research has focused on improving infant milk formula (IMF). During the development of IMF, breast milk is commonly considered as the reference and IMF manufacturers are thriving to mimic the composition and/or to match the functionality of breast milk as closely as possible. Spent coffee grounds (SCG) are a by-product from coffee brewing process. SCG contains a considerable amount of organic compounds and is a great source of antioxidants. This research aimed to evaluate the antioxidant activities of SCG and SCG extracts by comparing different solvent (hexane and 60 - 90% ethanol) extractions, together with determining the effect of different concentration (5, 10, 15, 20 and 25%) of SCG extracts (SCG) and comparing these extracts with commercial antioxidants (BHA (A), BHT (T), tocopherol (TO)) for application to vegetable oil. โคพีพอด Apocyclops royi เป็นแพลงก์ตอนสัตว์ในกลุ่มครัสเตเชียนที่มีบทบาทสำคัญต่อการอนุบาลสัตว์น้ำวัยอ่อนเนื่องจากมีคุณค่าทางโภชนาการที่โดดเด่นและสามารถสังเคราะห์กรดไขมันสายยาวไม่อิ่มตัวเชิงซ้อน (LC-PUFA) ในงานวิจัยนี้ได้ศึกษาหน้าที่และการแสดงออกของยีน Fatty acid-binding protein (FABP) ซึ่งเป็นโปรตีนที่มีหน้าที่สำคัญในการขนส่งกรดไขมัน ผลจากการศึกษาลักษณะสมบัติของยีน ArFABP ของโคพีพอดสายพันธุ์ไทย A. royi-TH พบว่าประกอบด้วยบริเวณ open reading frame จำนวน 465 คู่เบส ซึ่งสามารถแปลรหัสเป็นโปรตีนขนาด 154 กรดอะมิโน โดยโปรตีน ArFABP ประกอบด้วยบริเวณ Lipocalin_7 domain ซึ่งมีความเหมือนกับโปรตีน FABP ในโคพีพอด Caligus rogercresseyi 55% จากการศึกษาหน้าที่ของยีน ArFABP ต่อความเกี่ยวข้องในการสังเคราะห์กรดไขมัน PUFA ในโคพีพอด ได้ทำการตรวจสอบการแสดงออกของยีน ArFABP ในตัวอย่างโคพีพอด A. royi-TH กลุ่มที่เลี้ยงด้วย Tetraselmis sp. (THA) พบว่าโคพีพอดกลุ่มที่เลี้ยงด้วย THA มีระดับการแสดงออกของยีน ArFABP สูงกว่าโคพีพอดกลุ่มที่เลี้ยงด้วย TET อย่างมีนัยสำคัญทางสถิติ ซึ่งสอดคล้องกับผลการวิเคราะห์องค์ประกอบของกรดไขมัน พบว่าโคพีพอดกลุ่มที่เลี้ยงด้วย THA มีสัดส่วนของกรดไขมัน LC-PUFA และกรดไขมัน arachidonic acid (ARA) สูงกว่ากลุ่มที่เลี้ยงด้วย TET อย่างมีนัยสำคัญทางสถิติ นอกจากนี้ผลจากงานวิจัยยังพบว่าระดับการแสดงออกของยีน ArFABP มีการแสดงออกสูงในโคพีพอดที่เลี้ยงในสภาวะความเค็ม 15 พีพีที (ความเค็มต่ำ) เปรียบเทียบกับกลุ่มโคพีพอดที่เลี้ยงในสภาวะความเค็ม 25 พีพีที (กลุ่มควบคุม) โดยพบว่าโคพีพอดกลุ่มความเค็ม 15 พีพีที มีสัดส่วนของกรดไขมัน ARA สูงกว่ากลุ่มความเค็ม 25 พีพีที อย่างมีนัยสำคัญทางสถิติ โดยจากผลการศึกษานี้แสดงให้เห็นว่ายีน ArFABP อาจมีบทบาทเกี่ยวข้องกับการขนส่งกรดไขมันในการสังเคราะห์กรดไขมัน LC-PUFA ในโคพีพอด และจากการศึกษาไมโครไบโอมพบว่าการเพาะเลี้ยงโคพีพอด A. …

อาหารที่มีคุณค่าทางโภชนาการสูงเป็นสิ่งสำคัญสำหรับการอนุบาลลูกสัตว์น้ำแรกเกิด ซึ่งจะส่งผลทำให้สิ่งมีชีวิตเติบโตได้อย่างมีประสิทธิภาพและช่วยเพิ่มอัตราการรอดของสัตว์น้ำวัยอ่อน โคพีพอด Apocyclops royi จัดอยู่ในกลุ่มของครัสเตเชียนขนาดเล็ก เป็นอาหารของสัตว์น้ำ ที่อุดมไปด้วยคุณค่าทางโภชนาการที่ดี เนื่องจากสามารถสังเคราะห์กรดไขมันไม่อิ่มตัวเชิงซ้อนสายยาว (LC-PUFA) ได้สูง โดยงานวิจัยมีวัตถุประสงค์เพื่อศึกษาลักษณะสมบัติและบทบาทของยีน Sterol regulatory element-binding protein 1 (ArSREBP-1), ยีน Carbohydrate-responsive element-binding protein (ArChREBP) และยีน Max-like factor X (ArMLX) ในโคพีพอด Apocyclops royi สายพันธุ์ไทย (A. royi-TH) และศึกษาอิทธิพลขององค์ประกอบไขมันในอาหารต่างชนิดกันที่ส่งผลต่อปริมาณกรดไขมันในโคพีพอด A.royi-TH จากการศึกษาพบว่ายีน ArSREBP-1 มีความเหมือนกับยีน SREBP-1 ของ Tigriopus kingsejongensis เท่ากับ 64%, ยีน ArChREBP มีความเหมือนกับยีน ChREBP ของParacyclopina nana เท่ากับ 58% และ ยีน ArMLX มีความเหมือนกับยีน MLX ของ Paracyclopina nana เท่ากับ 62% จากผลการศึกษาการแสดงออกของยีน Delta 6 desaturase (ArD6D), ยีน ArSREBP-1, ยีน ArChREBP และ ยีน ArMLX ต่อความสำคัญในการสังเคราะห์กรดไขมันในโคพีพอด A. royi-TH โดยเลี้ยงโคพีพอดด้วยอาหารที่แตกต่างกัน 2 ชนิด คือ สาหร่าย Tetraselmis sp. This study aimed to investigate the impact of using dietary fibers inulin (IN) and pectin (PE) combined with maltodextrin (MD) as wall materials for betacyanin encapsulation on its physicochemical properties, storage stability, and in vitro release behavior. The objective of this study was to optimize the ultrasound-assisted extraction (UAE) conditions for tamarind seed extract (TSE) using response surface methodology (RSM). Subsequently, microcapsules were produced via spray drying using various wall materials and ratios. The extraction conditions were temperature levels (30, 40, and 50 °C), exposure periods (5, 10, and 15 minutes), and ethanol concentrations (30, 40, and 50 % v/v). The optimization criteria focused on maximizing the total phenolic compound, total flavonoid content, and antioxidant activity, assessed using DPPH free radical scavenging and FRAP assays. Thua nao is a fermented soybean product that is widely consumed, especially in the northern part of Thailand. Thua nao can be used as a condiment to enhance the aroma and flavor of foods. In this study, stir bar sorptive extraction (SBSE) coupled with gas chromatography‒mass spectrometry/olfactometry (GC‒MS/O) was used to analyze volatile aroma compounds in thua nao products. Thua nao fermented with commercial Bacillus subtilis under controlled conditions exhibited the presence of compounds such as 2-methyl butanoic acid, phenylethyl alcohol, benzaldehyde, 2,5-dimethylpyrazine, 2,6-dimethylpyrazine, and 2-methoxy phenol.
