Two cosegregating single-nucleotide polymorphisms (SNPs) in human TLR4, an A896G transition at SNP rs4986790 (D299G) and a C1196T transition at SNP rs4986791 (T399I), have been associated with LPS hyporesponsiveness and differential susceptibility to many infectious or inflammatory diseases. However, many studies failed to confirm these associations, and transfection experiments resulted in conflicting conclusions about the impact of these SNPs on TLR4 signaling. Using advanced protein modeling from crystallographic data of human and murine TLR4, we identified homologous substitutions of these SNPs in murine Tlr4, engineered a knock-in strain expressing the D298G and N397I TLR4 SNPs homozygously, and characterized in vivo …

Production And Properties Of Resistant Maltodextrin From Cassava Starch, Kamonrat Trithavisup

This research aimed to determine the effects of processing conditions on molecular structure and selected properties of cassava-derived resistant dextrins (RDs) and resistant maltodextrins (RMDs). Cassava starch was mixed with hydrochloric acid solution to obtain the final acid concentration of 0.04-0.10% dry starch basis, dried at 50oC until having <5% moisture, and dextrinized at 100-120oC for 60-180 min. As acid concentration, heating temperature and time increased, water solubility, reducing sugar content, total dietary fiber (TDF) content and proportion of high molecular weight fiber fraction of RDs increased while their whiteness decreased. For the solution containing RDs produced under mild conditions (0.04-0.08% HCl, 100°C, 60 min), an endothermic peak at 45-70oC, having enthalpy of 1.66-2.14 J/g was detected. However, no endotherm was detected from the solution of RDs processed under extreme conditions. Harsher dextrinization conditions resulted in the RDs with slightly higher molecular weight but containing shorter branched chains. Dextrinization resulted in the formation of α-1,2, α-1,6, β-1,2, β-1,4 and β-1,6 in RDs. Lower proportion of α-1,4 linkage and α-/β-reducing ends with higher proportion of β-1,2, β-1,4, α-/β-1,6 linkages and degree of branching (DB) were found in RDs prepared under stronger dextrinization conditions. Although indigestible portion was enhanced by dextrinization, TDF of the RDs were only 7-47%. To increase the TDF content, RDs prepared from 5 different conditions (0.04% and 0.06% HCl, 120oC, 60-180 min), having >30% TDF, were selected for RMD production. The 30% RD solutions were treated with commercial α-amylase enzyme at 70oC, pH 6, for 90 and 120 min, to obtain the final dextrose equivalent of 8 and 12, respectively. Nanotechnology takes advantage of cellular biology’s natural nanoscale operations by interacting with biomolecules differently than soluble or bulk materials, often altering normal cellular processes such as metabolism or growth. To gain a better understanding of how copper nanoparticles hybridized on cellulose fibers called carboxymethyl cellulose (CMC) affected growth of Saccharomyces cerevisiae, the mechanisms of toxicity were explored. Multiple methodologies covering genetics, proteomics, metallomics, and metabolomics were used during this investigation. The work that lead to this dissertation discovered that these cellulosic copper nanoparticles had a unique toxicity compared to copper. Atmospheric cold plasma (ACP) is under investigation for an extensive range of biocontrol applications in food biosystems. However, the development of a novel intervention technology requires a thorough evaluation of the potential for negative effects and the implications for the human and animal food chains’ safety. In this study, the potential of laser-induced breakdown spectroscopy (LIBS) as an efficient multi-elemental quantification tool for fish feed is determined. A particular focus of this paper is total chromium, an essential element that has the potential to be toxic and carcinogenic. In total six elements, four macro-elements (Ca, Fe, K and Mg) and two micro-elements (Cr and Rb), were modelled using LIBS spectra of aquafeed samples. Reference analysis was conducted via inductively coupled plasma mass spectrometry (ICP-MS) and showed good agreement with LIBS predictions. Rapid prediction of beef quality remains a challenge for meat processors. This study evaluated the potential of Raman spectroscopy followed by chemometrics for prediction of Warner-Bratzler shear force (WBSF), intramuscular fat (IMF), ultimate pH, drip-loss and cook-loss. PLS regression models were developed based on spectra recorded on frozen-thawed day 2 longissimus thoracis et lumborum muscle and validated using test sets randomly selected 3 times. Toxins from marine animals provide molecular tools for the study of many ion channels, including mammalian voltage-gated potassium channels of the Kv1 family. Selectivity profiling and molecular investigation of these toxins have contributed to the development of novel drug leads with therapeutic potential for the treatment of ion channel-related diseases or channelopathies. Cold atmospheric plasma (CAP) is increasingly studied in a growing number of clinical trials for cancer treat-ment1,2 and research is ongoing to explore the combination of CAP with other therapies, including nanoparticles, radiotherapy and chemotherapy3–5.Gold nanoparticles (AuNPs) are known to be weakly-toxic to human cells and be readily manufactured and designed for targeting delivery of various therapeutic compounds into cells. The present study investigated the effects of cold atmospheric plasma on the shelf-life stability of lipids andproteins of commercially packaged mackerelfillets. The results showed no significant effects on lipid oxidationbetween the control samples and those treated at 80 kV for extended treatment times of 5 min using an in-package plasma system. In addition, no significant changes (p > 0.05) were found in the fatty acid compositionor nutritional quality indices after treatment. The aim of this study was to examine the efficacy of lauric arginate (LAE, 1000 ppm – 3000 ppm) as an assisting tool to reduce starved Listeria monocytogenes population in ground beef following sous-vide processing at different temperatures (55–62.5 °C). Ground beef mixed with LAE was vacuum sealed and a laboratory water bath was used for sous-vide cooking. Loglinear and Weibull models were fit to the survival microbial population and the D and Z-values were determined at 55–62.5 °C. Calculated D-values ranged from 33.62 to 3.22 min at temperature 55–62.5 °C. LAE at higher concentration is an effective antimicrobial to …

งานวิจัยนี้มีวัตถุประสงค์เพื่อศึกษาผลของอัตราส่วนของโปรตีนถั่วเหลืองสกัดและเจลาตินปลา รวมทั้งผลของความเข้มข้นของสารสกัดมะขามป้อมต่อสมบัติของฟิล์มโปรตีนบริโภคได้ และเพื่อศึกษาผลของการประยุกต์ฟิล์มที่พัฒนาได้ต่อเสถียรภาพเชิงออกซิเดชันของตัวอย่างอาหาร ในขั้นตอนแรกเป็นการศึกษาผลของอัตราส่วนของโปรตีนถั่วเหลืองสกัดและเจลาตินปลาต่อสมบัติของฟิล์ม แปรอัตราส่วนของโปรตีนถั่วเหลืองสกัดและเจลาตินปลาเป็น 5 อัตราส่วน ได้แก่ 100:0, 75:25, 50:50, 25:75 และ 0:100 พบว่าฟิล์มเจลาตินปลา (0:100) มีความต้านทานแรงดึงขาดสูงกว่าฟิล์มโปรตีนถั่วเหลืองสกัด (100:0) (p≤0.05) สำหรับฟิล์มคอมพอสิตพบว่าฟิล์มที่มีอัตราส่วนของโปรตีนถั่วเหลืองสกัดต่อเจลาตินปลาเท่ากับ 25:75 มีความต้านทานแรงดึงขาดสูงที่สุดและไม่แตกต่างจากฟิล์มเจลาตินปลาอย่างมีนัยสำคัญ (p>0.05) สำหรับการยืดตัวถึงจุดขาด พบว่าฟิล์มคอมพอสิตที่มีอัตราส่วนของโปรตีนถั่วเหลืองสกัดต่อเจลาตินปลาเท่ากับ 25:75 มีการยืดตัวถึงจุดขาดสูงที่สุดและสูงกว่าฟิล์มเจลาตินปลาอย่างมีนัยสำคัญ (p≤0.05) นอกจากนี้ยังพบว่ามีความโปร่งใส สี ความไม่ชอบน้ำของผิว และความสามารถในการละลายน้ำใกล้เคียงกับฟิล์มเจลาตินปลา อย่างไรก็ตามฟิล์มดังกล่าวมีสภาพให้ซึมผ่านได้ของไอน้ำต่ำกว่าฟิล์มเจลาตินปลา เนื่องจากสมบัติเชิงกลที่ดีจึงคัดเลือกฟิล์มคอมพอสิตที่มีอัตราส่วนของโปรตีนถั่วเหลืองสกัดต่อเจลาตินปลาเท่ากับ 25:75 ไปศึกษาในขั้นตอนต่อไป ในขั้นตอนที่สองเป็นการศึกษาผลของสารสกัดมะขามป้อมต่อสมบัติของฟิล์มคอมพอสิตจากโปรตีนถั่วเหลืองและเจลาตินปลาที่อัตราส่วน 25:75 แปรความเข้มข้นของสารสกัดมะขามป้อมเป็น 5 ระดับได้แก่ 0, 2.5, 5.0, 7.5 และ 10.0% โดยน้ำหนักของโปรตีน พบว่าฟิล์มคอมพอสิตที่เติมสารสกัดมะขามป้อมเข้มข้น 5.0% มีความต้านทานแรงดึงขาดสูงที่สุด โดยคิดเป็น 1.3 เท่าของตัวอย่างควบคุมที่ไม่เติมสารสกัดมะขามป้อม ความแข็งแรงเชิงกลที่เพิ่มขึ้นนี้เป็นผลมาจากการเชื่อมข้ามโปรตีนโดยพันธะโควาเลนต์ชนิด C-N และ C-S ซึ่งพิสูจน์ได้โดยใช้เทคนิคฟูเรียร์แทรนสฟอร์มอินฟราเรดสเปกโทรสโกปีและรามานไมโครสโกปี ส่วนการยืดตัวถึงจุดขาดพบว่าการเติมสารสกัดมะขามป้อมทำให้การยืดตัวถึงจุดขาดของฟิล์มคอมพอสิตลดลงอย่างมีนัยสำคัญ (p≤0.05) นอกจากนี้ยังพบว่าการเติมสารสกัดมะขามป้อมทำให้ฟิล์มที่ได้มีความโปร่งใสลดลง มีสีเหลืองส้ม และมีความเข้มสีสูงขึ้น รวมทั้งมีสภาพให้ซึมผ่านได้ของไอน้ำและความไม่ชอบน้ำของผิวสูงกว่าฟิล์มคอมพอสิตที่ไม่เติมสารสกัด การเติมสารสกัดมะขามป้อมทำให้ปริมาณฟีนอลิกทั้งหมดและฤทธิ์ต้านออกซิเดชัน DPPH radical scavenging activity และ ferric reducing antioxidant power ของฟิล์มมีค่าสูงขึ้น จากความต้านทานแรงดึงขาดและฤทธิ์ต้านออกซิเดชันที่สูงที่สุด จึงคัดเลือกฟิล์มคอมพอสิตที่เติมสารสกัดมะขามป้อมเข้มข้น 5.0% ไปศึกษาในขั้นตอนต่อไป ในขั้นตอนที่สามเป็นการศึกษาการประยุกต์ฟิล์มคอมพอสิตจากโปรตีนถั่วเหลืองสกัดและเจลาตินปลาที่เติมสารสกัดมะขามป้อมกับผลิตภัณฑ์หมูแผ่นหวาน โดยแปรการห่อหุ้มหมูแผ่นหวานเป็น 3 แบบ ได้แก่ หมูแผ่นหวานที่ไม่ห่อหุ้มด้วยฟิล์ม (ตัวอย่างควบคุม) หมูแผ่นหวานที่ห่อหุ้มด้วยฟิล์มไนลอน (ตัวอย่างอ้างอิง) และหมูแผ่นหวานที่ห่อหุ้มด้วยฟิล์มคอมพอสิตที่มีอัตราส่วนของโปรตีนถั่วเหลืองสกัดต่อเจลาตินปลาเท่ากับ 25:75 และเติมสารสกัดมะขามป้อมเข้มข้น 5.0% (ตัวอย่างทดลอง) โดยเก็บรักษาผลิตภัณฑ์ไว้ที่อุณหภูมิห้อง (25 องศาเซลเซียส) เป็นระยะเวลา 49 …

The objective of this study was to investigate the effect of sorghum flour substitution to wheat flour on pasting and thermal properties of the composite flours as well as firmness of the flour gels and application of composite flour in pan bread. Wheat-to-sorghum flour ratio used were 100:0 (wheat control), 0:100 (sorghum control), 80:20, 60:40, 40:60 and 20:80, with the wheat control serving as a benchmark. This study develops a prototype of a ready-to-cook Cambodian Korko soup base by surveying the perception of 400 Cambodian consumers and found that 44.5% of replies prefer ready-to-cook Cambodian Korko soup base in powder form. After that, the effect of different drying temperatures on the properties of Cambodian Korko soup base ingredients (herb, spice, and fermented fish) was investigated on physicochemical, antioxidants, and microbiological properties. งานวิจัยนี้มีวัตถุประสงค์เพื่อศึกษาอิทธิผลของกรด น้ำตาล และพลาสติไซเซอร์ต่อคุณสมบัติของฟิล์มบริโภคได้ที่ ละลายน้ำที่ดี และพัฒนาผลิตภัณฑ์แผ่นฟิล์มปรุงรสน้ำยำ โดยใช้มอลโทเดกซ์ทรินเสริมแซนแทนกัมเป็นสารก่อฟิล์ม ในขั้นตอนแรกศึกษาการใส่กลีเซอรอลเพื่อเพิ่มความยืดหยุ่นของฟิล์ม โดยเปรียบเทียบสูตรสารละลายขึ้นรูปฟิล์ม สูตรที่ใช้แซนแทนกัมและกลีเซอรอล (อัตราส่วน 2:3) เปรียบเทียบกับสูตรที่ไม่เติมกลีเซอรอล พบว่า สูตรที่ไม่เติมกลีเซอรอล มีความเปราะมาก เมื่อเทียบกับสูตรที่เติมกลีเซอรอล จึงไม่เหมาะสมในการนำมาขึ้นรูปฟิล์ม ในการศึกษาอิทธิพลของเครื่องปรุงรส ได้แก่ ผลของการแทนที่น้ำมะนาวด้วยน้ำส้มสายชู ผลของน้ำตาลทรายกับน้ำตาลมะพร้าว ซึ่งไม่ใส่ส่วนผสมที่ไม่ละลายน้ำ (ได้แก่ พริกป่น) พบว่าสูตรที่ใช้น้ำมะนาวจะมีค่าความชื้นและร้อยละการยืดตัวของแผ่นฟิล์มสูงกว่าสูตรที่ใช้น้ำส้มสายชู แต่จะทำให้ค่าความต้านทานแรงดึงน้อยกว่า (p

งานวิจัยนี้มีวัตถุประสงค์เพื่อสกัดน้ำอินทผลัมด้วยเอนไซม์เพคติเนสและประยุกต์ในเครื่องดื่ม โดยศึกษาภาวะที่เหมาะสมในการสกัดน้ำอินทผลัมด้วยเอนไซม์เพคติเนสและศึกษาปัจจัยที่ใช้ในการสกัดน้ำอินทผลัมซึ่งประกอบด้วยความเข้มข้นของเอนไซม์เพคติเนส (0 และ 0.1% v/v) อุณหภูมิ (50 60 70 และ 80 องศาเซลเซียส) และระยะเวลาในการบ่มสกัด (60 120 180 และ 240 นาที) ต่อคุณภาพน้ำอินทผลัมสกัด และวิเคราะห์คุณภาพด้านกายภาพและเคมี ซึ่งพิจารณาจากปริมาณสารต้านอนุมูลอิสระ (สารประกอบฟีนอลิกทั้งหมดและสารแคโรทีนอยด์ทั้งหมด) จากผลการทดลองพบว่าภาวะที่เหมาะสมในการสกัดน้ำอินทผลัมคือ การใช้เอนไซม์เพคติเนสความเข้มข้น 0.1% v/v ที่อุณหภูมิบ่มสกัด 50 องศาเซลเซียส เวลา 60 นาที โดยน้ำอินทผลัมมีปริมาณสารประกอบฟีนอลิกทั้งหมดและสารแคโรทีนอยด์ทั้งหมดเท่ากับ 326.33±23.21 mg GAE/100 g fresh wt. และ 1.08±0.04 mg β-CE/100 g fresh wt. ตามลำดับ จากนั้นศึกษาการพัฒนาสูตรเครื่องดื่มพร้อมดื่มจากน้ำอินทผลัมสกัดผสมน้ำมะตูมความเข้มข้น 10% w/v และน้ำพุทราความเข้มข้น 10% w/v โดยออกแบบการทดลองแบบผสม (mixture design) และปัจจัยในการศึกษา ได้แก่ น้ำอินทผลัมสกัด 50-70% v/v น้ำมะตูม 15-25% v/v และน้ำพุทรา 15-25% v/v โดยปริมาตรต่อปริมาตร และศึกษาสมบัติทางเคมี กายภาพ และการทดสอบการยอมรับของผู้บริโภค ผลการทดลองพบว่าสูตรที่ได้คะแนนการยอมรับจากผู้บริโภคมากที่สุด มีสัดส่วนดังนี้ น้ำอินทผลัมสกัด : น้ำมะตูม : น้ำพุทราเท่ากับ 70 : 15 : 15% v/v และเครื่องดื่มพร้อมดื่มจากน้ำอินทผลัมสกัดตัวอย่างนี้มีปริมาณสารประกอบฟีนอลิกทั้งหมด ปริมารสารแคโรทีนอยด์ทั้งหมด ฤทธิ์การต้านอนุมูลอิสระด้วยวิธี DPPH และฤทธิ์การต้านอนุมูลอิสระด้วยวิธี FRAP เท่ากับ 1023.00±26.77 mg GAE/100 mL 7.02±0.07 mg β-CE/100 …

งานวิจัยนี้มีวัตถุประสงค์เพื่อพัฒนาเครื่องดื่มสมุนไพรพร้อมบริโภคผสมสารสกัดจากใบเจียวกู่หลาน โดยศึกษาภาวะที่เหมาะสมในการสกัดใบเจียวกู่หลานโดยใช้คลื่นอัลตราซาวด์ช่วย (ultrasound-assisted extraction, UAE) ซึ่งพิจารณาจากฤทธิ์การต้านอนุมูลอิสระด้วยวิธี 2,2-diphenyl-1-picrylhydrazyl (DPPH) และ ferric reducing antioxidant power (FRAP) โดยปัจจัยที่ใช้ในการศึกษาประกอบด้วยความเข้มข้นของเอทานอล (60, 70 และ 80% v/v) เวลา (10, 20 และ 30 นาที) และความเข้มของแอมพลิจูด (30, 40 และ 50%) และอัตราส่วนของผงใบเจียวกู่หลานต่อตัวทำละลายเอทานอลเท่ากับ 2:100 g/mL และวิเคราะห์ด้วยวิธีพื้นผิวตอบสนอง (response surface methodology, RSM) จากผลการทดลองพบว่าภาวะที่เหมาะสมในการสกัดสารสกัดจากใบเจียวกู่หลานที่มีฤทธิ์การต้านอนุมูลอิสระด้วยวิธี DPPH และ FRAP สูงสุดคือ ความเข้มข้นเอทานอล 68% v/v เวลา 19 นาที และความเข้มของแอมพลิจูด 42% โดยสารสกัดจากใบเจียวกู่หลานที่ภาวะนี้มีฤทธิ์การต้านอนุมูลอิสระด้วยวิธี DPPH และ FRAP เท่ากับ 1834.94 และ 3217.08 µM trolox/100 g dry weight ตามลำดับ จากนั้นศึกษาการพัฒนาเครื่องดื่มสมุนไพรพร้อมบริโภคผสมสารสกัดจากใบเจียวกู่หลาน โดยผสมสารสกัดจากใบเจียวกู่หลาน 0-3% v/v ในชาใบหม่อน (กำหนดสารให้ความหวานซูคราโลส 0.01% w/v และกรดซิตริก 0.08% w/v) และศึกษาสมบัติทางเคมี กายภาพ จุลินทรีย์ และคุณภาพทางประสาทสัมผัส ผลการทดลองพบว่าการเติมสารสกัดจากใบเจียวกู่หลานส่งผลให้ตัวอย่างมีปริมาณสารประกอบฟีนอลิกทั้งหมด ปริมาณสารฟลาโวนอยด์ทั้งหมด ฤทธิ์การต้านอนุมูลอิสระด้วยวิธี DPPH และ FRAP เพิ่มสูงขึ้น โดยตัวอย่างที่เติมสารสกัดจากใบเจียวกู่หลาน 3% v/v มีค่าดังกล่าวสูงที่สุดอย่างมีนัยสำคัญทางสถิติ (p≤0.05) รวมถึงค่า ∆E* จะเพิ่มขึ้นเมื่อปริมาณสารสกัดเจียวกู่หลานเพิ่มขึ้นเช่นกัน ในขณะที่ค่าความเป็นกรด-ด่าง ปริมาณกรดทั้งหมด และปริมาณของแข็งที่ละลายในน้ำได้ทั้งหมดของทุกตัวอย่างไม่มีความแตกต่างกัน (p …

งานวิจัยนี้มีวัตถุประสงค์เพื่อศึกษาผลของภาวะเครียดต่อการงอกและการเพิ่มปริมาณสารออกฤทธิ์ทางชีวภาพในถั่วเพาะงอก และคัดเลือกน้ำนมถั่วเหลือง-ถั่วอะซูกิที่มีสารออกฤทธิ์ทางชีวภาพและฤทธิ์ต้านออกซิเดชันเพิ่มสูงขึ้น ผลการวิจัยพบว่าระยะเวลาในการงอกส่งผลต่อองค์ประกอบทางเคมีภายในเมล็ดอย่างมีนัยสำคัญ (p≤0.05) เช่น ปริมาณโปรตีนหยาบเพิ่มขึ้น ปริมาณไขมันหยาบลดลง และปริมาณสารออกฤทธิ์ทางชีวภาพภายในเมล็ดเพิ่มขึ้น โดยระยะเวลาที่ดีที่สุดในการเพาะงอกถั่วเหลืองคือ 36 ชั่วโมง และถั่วอะซูกิ 30 ชั่วโมง ผลการให้ความเครียดเกลือจากการปรับสภาพถั่วอะซูกิก่อนเพาะงอก 30 ชั่วโมง ด้วยสารละลายเกลือโซเดียมคลอไรด์ความเข้มข้น 50 มิลลิโมลาร์ และความเครียดกรดจากการปรับสภาพถั่วอะซูกิก่อนเพาะงอกด้วยสารละลายกรดซิตริกความเข้มข้น 52 มิลลิโมลาร์ ส่งผลต่อการเพิ่มขึ้นของปริมาณสารประกอบฟีนอลิกทั้งหมดอย่างมีนัยสำคัญ (p≤0.05) เมื่อเทียบกับถั่วอะซูกิเพาะงอกชุดควบคุม แต่ไม่ส่งผลต่อฤทธิ์ต้านออกซิเดชันอย่างมีนัยสำคัญ (p>0.05) และการพัฒนาสูตรน้ำนมถั่วเหลืองทั้งหมด 8 สูตร ด้วย mixture design ที่ได้จากการทดแทนน้ำนมถั่วเหลืองด้วยถั่วอะซูกิ และการทดแทนน้ำนมถั่วเหลืองและน้ำนมถั่วอะซูกิด้วยน้ำนมถั่วเหลืองเพาะงอกและน้ำนมถั่วอะซูกิเพาะงอก พบว่าการเพิ่มขึ้นของอัตราส่วนน้ำนมถั่วอะซูกิ (อัตราส่วนร้อยละ 10-20) และการทดแทนน้ำนมถั่วเหลืองและน้ำนมถั่วอะซูกิด้วยน้ำนมถั่วเหลืองเพาะงอกและน้ำนมถั่วอะซูกิเพาะงอก ส่งผลให้ปริมาณฟลาโวนอยด์ทั้งหมด และฤทธิ์ต้านออกซิเดชันด้วยเทคนิค DPPH radical scavenging และ FRAP สูงขึ้นอย่างมีนัยสำคัญ (p≤0.05) เมื่อเทียบกับน้ำนมถั่วเหลืองที่ไม่ได้ผสมน้ำนมถั่วอะซูกิ โดยการทดแทนน้ำนมถั่วเหลืองด้วยน้ำนมถั่วอะซูกิร้อยละ 20 (อัตราส่วนผสมน้ำนมถั่วเหลือง:น้ำนมถั่วอะซูกิ:น้ำตาล คือ 75:20:5) และการทดแทนน้ำนมถั่วเหลืองและถั่วอะซูกิด้วยน้ำนมถั่วเหลืองเพาะงอกและน้ำนมถั่วอะซูกิเพาะงอก ด้วยอัตราส่วนผสมน้ำนมถั่วเหลืองเพาะงอก:น้ำนมถั่วอะซูกิเพาะงอก:น้ำตาล คือ 75:20:5 ส่งผลให้มีปริมาณสารประกอบฟีนอลิกทั้งหมด ปริมาณฟลาโวนอยด์ทั้งหมด และฤทธิ์ต้านออกซิเดชันด้วยเทคนิค DPPH radical scavenging และ FRAP สูงที่สุด เมื่อเทียบกับน้ำนมถั่วเหลือง-ถั่วอะซูกิในกลุ่มเดียวกัน และจากการเปรียบเทียบน้ำนมถั่วเหลือง-ถั่วอะซูกิสูตรไม่เพาะงอกสูตรที่มีอัตราส่วนผสม 75:20:5 (สูตรที่ 4) กับน้ำนมถั่วเหลือง-ถั่วอะซูกิสูตรเพาะงอก (สูตรที่ 8) ในหน่วยบริโภคอ้างอิง 200 มิลลิลิตร พบว่าน้ำนมถั่วเหลือง-ถั่วอะซูกิสูตรเพาะงอก สูตรที่ 8 มีสารออกฤทธิ์ทางชีวภาพ ฤทธิ์ต้านออกซิเดชันด้วยเทคนิค FRAP และคะแนนความชอบทางประสาทสัมผัส ได้แก่ กลิ่นรสและรสชาติ เพิ่มสูงขึ้นอย่างมีนัยสำคัญ (p≤0.05)

งานวิจัยนี้มีวัตถุประสงค์เพื่อศึกษาผลของของเสริมเซลลูโลสดัดแปรด้วยสารลดแรงตึงผิวและการบ่มด้วยรังสียูวีต่อสมบัติของฟิล์มคอมพอสิตฐานโปรตีนถั่วเหลือง การทดลองส่วนแรกเป็นการดัดแปรเซลลูโลสนาโนคริสตัลด้วยสารลดแรงตึงผิวและการพัฒนาฟิล์มคอมพอสิต ในการดัดแปรเซลลูโลสนาโนคริสตัล แปรชนิดของสารลดแรงตึงผิวเป็น 2 ชนิด ได้แก่ กลีเซอรอลโมโสเทียเรต (glycerol monostearate, GMS) และ โซเดียมสเทียโรอิลแลกทิเลต (sodium stearoyl lactylate, SSL) และแปรความเข้มข้นของสารลดแรงตึงผิวเป็น 3 ระดับ ได้แก่ 1, 5 และ 10% โดยน้ำหนักของของแข็งโดยรวม พบว่าเซลลูโลสนาโนคริสตัลดัดแปรด้วยสารลดแรงตึงผิวมีขนาดอนุภาคเฉลี่ย (z-average) อยู่ในช่วง 67.4-605.0 นาโนเมตร ส่วนศักย์ซีต้ามีค่าเพิ่มขึ้นเมื่อความเข้มข้นของสารลดแรงตึงผิวเพิ่มขึ้น โดยตัวอย่างที่มีศักย์ซีต้าสูงสุด ได้แก่ เซลลูโลสนาโนคริสตัลดัดแปรด้วย GMS และ SSL เข้มข้น 10% ซึ่งมีศักย์ซีต้าเท่ากับ -69.9 และ -84.5 มิลลิโวลต์ ตามลำดับ ซึ่งแสดงให้เห็นว่าอนุภาคนาโนมีเสถียรภาพสูงมาก จึงคัดเลือกมาเพื่อใช้ในการเตรียมฟิล์มคอมพอสิตฐานโปรตีนถั่วเหลือง โดยแปรปริมาณเซลลูโลสนาโนคริสตัลดัดแปรด้วยสารลดแรงตึงผิวเป็น 3 ระดับ ได้แก่ 5, 10 และ 15% โดยน้ำหนักของสารละลายฟิล์ม พบว่าฟิล์มที่เสริมเซลลูโลสนาโนคริสตัลดัดแปรด้วย SSL ในปริมาณ 15% มีความต้านทานแรงดึงขาดสูงสุดเท่ากับ 2.84 เมกะพาสคาล ซึ่งสูงกว่าตัวอย่างควบคุมที่ไม่เสริมเซลลูโลสนาโนคริสตัลดัดแปรถึง 68.0% ในขณะที่การยืดตัวถึงจุดขาดมีแนวโน้มลดลงเมื่อปริมาณเซลลูโลสนาโนคริสตัลดัดแปรเพิ่มสูงขึ้น นอกจากนี้ยังพบว่าความสว่าง (L*) และความโปร่งใสของฟิล์มมีค่าลดลงด้วย มุมสีของของฟิล์มทุกตัวอย่างอยู่ในช่วงมุมสีเหลืองและความเข้มสีมีแนวโน้มเพิ่มขึ้นเล็กน้อยเมื่อปริมาณเซลลูโลสนาโนคริสตัลดัดแปรเพิ่มสูงขึ้น สภาพให้ซึมผ่านได้ของไอน้ำและความสามารถในการละลายน้ำมีค่าลดลง และมุมสัมผัสระหว่างหยดน้ำกับผิวฟิล์มมีค่าสูงขึ้น เมื่อปริมาณเซลลูโลสนาโนคริสตัลดัดแปรเพิ่มสูงขึ้น จากการศึกษาโครงสร้างภาคตัดขวางด้วยกล้องจุลทรรศน์อิเล็กตรอนแบบส่องกราด พบว่าการเสริมเซลลูโลสนาโนคริสตัลดัดแปรทำให้เมทริกซ์ของฟิล์มมีความเป็นเนื้อเดียวกันลดลงและมีช่องทางคดเคี้ยวมากขึ้น สำหรับการทดลองในส่วนที่สองเป็นการศึกษาผลของการบ่มแผ่นฟิล์มด้วยรังสียูวีซี โดยคัดเลือกฟิล์มที่มีความต้านทานแรงดึงขาดสูงสุด ได้แก่ ฟิล์มที่เสริมเซลลูโลสนาโนคริสตัลดัดแปรด้วย SSL ในปริมาณ 15% มาบ่มด้วยยูวี แปรปริมาณรังสีดูดกลืนเป็น 6 ระดับ ได้แก่ 0.06, 0.19, 0.32, 0.45, 0.65 และ 1.56 จูล/ตารางเซนติเมตร พบว่าการบ่มด้วยรังสียูวีส่งผลให้ความต้านทานแรงดึงขาดเพิ่มขึ้นและการยืดตัวถึงจุดขาดลดลง โดยฟิล์มที่บ่มด้วยรังสียูวีปริมาณ 1.56 จูล/ตารางเซนติเมตร …

งานวิจัยนี้มีวัตถุประสงค์เพื่อพัฒนาสูตรของผลิตภัณฑ์เจลโปรตีนถั่วเหลืองให้สามารถรับประทานได้ง่าย และศึกษาสมบัติทางเคมีกายภาพ เนื้อสัมผัส และรูปแบบการปลดปล่อยสารระเหยให้กลิ่นของผลิตภัณฑ์เจลโปรตีนถั่วเหลือง ในขั้นต้น ศึกษาสมบัติทางเคมีกายภาพ และทดสอบทางประสาทสัมผัสเพื่อคัดเลือกสูตรอาหารเจลโปรตีนถั่วเหลืองที่เหมาะสม โดยใช้กลูโคโนเดลตาแลคโตน (glucono-delta-lactone) ร้อยละ 0.3 โดยน้ำหนักเป็นสารที่ทำให้เกิดเจล แปรชนิดแป้งมันสำปะหลังดัดแปรเป็นชนิดออกซิไดซ์และชนิดดัดแปรด้วยกรด และแปรปริมาณแป้งดัดแปรเป็น 3 ระดับ คือ ร้อยละ 3 4 และ 5 โดยน้ำหนัก พบว่าแป้งมันสำปะหลังดัดแปรชนิดออกซิไดส์ ให้เนื้อสัมผัสที่สาก ซึ่งไม่เกิดขึ้นในผลิตภัณฑ์ที่ใช้แป้งดัดแปรด้วยกรด และยังพบว่าปริมาณร้อยละ 4 โดยน้ำหนัก เป็นปริมาณที่เหมาะสมที่ทำให้เนื้อสัมผัสของผลิตภัณฑ์เจลโปรตีนถั่วเหลืองใกล้เคียงกับตัวอย่างอ้างอิง Nutri-Jelly® ซึ่งเป็นอาหารสำหรับผู้ป่วยที่มีภาวะเคี้ยวและกลืนลำบากมากที่สุด ขั้นต่อมาศึกษาคุณค่าทางโภชนาการ การเปลี่ยนแปลงระหว่างการเก็บรักษาผลิตภัณฑ์ และรูปแบบการปลดปล่อยสารระเหยให้กลิ่น พบว่าผลิตภัณฑ์เจลโปรตีนถั่วเหลืองประกอบไปด้วย โปรตีน คาร์โบไฮเดรต ไขมัน เถ้า และเส้นใย ร้อยละ 29.98 66.91 2.36 0.56 0.19 โดยน้ำหนักแห้ง (dry basis) ตามลำดับ และให้ค่าพลังงานความร้อน 67.41 กิโลแคลอรี่ต่อตัวอย่าง 100 กรัม เมื่อศึกษาการเปลี่ยนแปลงระหว่างการเก็บรักษาผลิตภัณฑ์ ที่อุณหภูมิ 4 ºC พบว่าเมื่อระยะเวลาเก็บรักษานานขึ้น มีการแยกตัวของน้ำเพิ่มขึ้น ความแน่นเนื้อลดลง และมีกลิ่นรสที่ไม่พึงประสงค์เพิ่มขึ้นอย่างมีนัยสำคัญ เมื่อศึกษารูปแบบการปลดปล่อยสารระเหยให้กลิ่นโดยใช้สารประกอบวานิลลินเป็นโมเดล เปรียบเทียบกับตัวอย่างเจลโปรตีนถั่วเหลืองในสภาวะปกติและตัวอย่างเจลโปรตีนถั่วเหลืองในสภาวะที่มีน้ำลายเทียมเป็นองค์ประกอบ พบว่าตัวอย่างเจลโปรตีนถั่วเหลือง สามารถปลดปล่อยกลิ่นรสได้เพิ่มขึ้นเมื่อเพิ่มความเข้มข้นของวานิลลิน และเมื่อเติมน้ำลายเทียมลงไปในตัวอย่างเจลโปรตีนถั่วเหลือง วานิลลินถูกปลดปล่อยออกมาจากตัวอย่างที่ได้มากกว่าตัวอย่างเจลในสภาวะปกติอย่างเห็นได้ชัด เมื่อเปรียบเทียบกับผลการทดสอบทางประสาทสัมผัสพบว่า ระดับความเข้มของกลิ่นวานิลลาที่ผู้ทดสอบได้รับเพิ่มขึ้นเมื่อเพิ่มความเข้มข้นของวานิลลินในตัวอย่าง และตัวอย่างที่มีน้ำลายเทียมมีระดับความเข้มของกลิ่นวานิลลามากกว่าตัวอย่างเจลในสภาวะปกติ

This study aimed to investigate the effect of selected fibres on pasting as well as short-term and long-term retrogradation of starch in wheat flour and to investigate the quality of fibre-added white pan breads. Two soluble fibres, tara gum (TG) and k-carrageenan (CAR), and one insoluble fibre, cellulose (CEL), were added to wheat flour at different levels (1.0, 1.5 and 2.0%). Regarding pasting behaviour, addition of soluble fibres was found to cause an increase in peak, trough, breakdown, and final viscosity.
