The reputation of low-moisture foods as safe foods has been crumbling over the past decade due to repeated involvement in foodborne illness outbreaks. Although various pasteurization technologies exist, a majority are thermal processes and have not been well-characterized for pasteurizing low-moisture foods. In addition, the nature of a low-moisture food matrix introduces various experimental complications that are not encountered in high-moisture foods. In this dissertation, the development, building instructions, and characterization of various open source tools for studying the inactivation kinetics of microorganisms in low-moisture foods are described. This study developed multimode hyperspectral imaging techniques to detect substitution and mislabeling of fish fillets. Line-scan hyperspectral images were collected from fish fillets in four modes, including reflectance in visible and nearinfrared (VNIR) region, fluorescence by 365 nm UV excitation, reflectance in short-wave infrared (SWIR) region, and Raman by 785 nm laser excitation. Fish fillets of six species (i.e., red snapper, vermilion snapper, Malabar snapper, summer flounder, white bass, and tilapia) were used for species differentiation and frozen-thawed red snapper fillets were used for freshness evaluation. Cashew nut is the second leading tree nut allergy in the US. Cross-contact of cashew nut poses potential food safety risks for individuals with cashew allergies. Highly-processed foods, such as HTST/UHT cashew milks may lead to problems in cashew protein detection by current allergen detection methods. Therefore, the aim of this study was to develop a robust sandwich ELISA for detection of highly processed cashew proteins. Depression is a major clinical concern, having a complex onset and the presence of multiple, often unidentifiable causes. Depression affects millions of individuals worldwide, with a high prevalence in regions of the world with a Western-style diet as compared to regions with a Mediterranean diet. A Western-style diet consists of foods high in sugar, fat, and processed meats and grains, whereas the Mediterranean diet contains significantly more vegetables, fruits, lean meats, and whole grains. A composite edible film made of corn zein protein (Z) and cellulose derivatives (C) was successfully fabricated. Edible films are coatings used to wrap food products to protect them against microbial deterioration, loss of moisture, and to extend the shelf life of the product. These edible films are consumed together with the product . The mechanical properties, water vapor permeability, application on fruits, and shelf life of the composite film were studied. Zein demonstrated excellent packing characteristics; due to its high no polar contents and hydrophobic nature, zein film served as a moisture barrier. Effect of WPC and NaCl in internal aqueous phase (W1) of W1/O/W2 type double emulsions was studied. Pre-emulsion and final emulsion were prepared using microfluidizer and Ultra-Turrax high shear mixer, respectively. The emulsions prepared using salt exhibited uniform droplet size distribution and structural integrity. WPC at 6% and NaCl at 2 or 4% levels demonstrated better sedimentation stability (> 99%) and encapsulation stability (> 95%) during preparation and storage of double emulsions. Samples without added NaCl showed poor emulsion stability and structural integrity. Higher level of WPC i.e. 8% resulted in poor stability and encapsulation efficiency of double emulsions at …

In vitro expected glycemic index (eGI) is a reliable tool to predict postprandial blood glucose concentrations. Making these predictions is important particularly for diabetespatients who must manage their health condition by consuming products with more slowly digestible carbohydrates. Current methods require lengthy preparation time and expensive equipment. In this study, a cheaper and faster in vitro method was developed. Legume samples were digested with continuous agitation for 3 hours with the help of alpha-amylase enzyme. The dark color of black beans is associated with the presence of anthocyanins. These are phytochemicals known to contribute to improved health due to their antioxidant, anti-inflammatory, anti-viral and anti-cancer benefits. Therefore, the color of canned black beans could potentially predict the total concentration of anthocyanins present. NUTR/GLST 498b: Global Research Experiences in Nutrition and Health
PURPOSE: To evaluate whether children who are malnourished/stunted are more likely to have experienced infectious disease.
METHODS: 6th and 7th students (n=546) were interviewed about health history and assessed using anthropometry.
RESULTS: Children who are short for their age also have higher rates of stunting. Malaria is the most experienced infectious disease.
CONCLUSIONS: Given that malaria was the most common infectious disease experience listed among middle school children, and that those who have experienced disease are more likely to be stunted, increased malaria prevention methods may improve the long-term health of Ethiopian and Zambian schoolchildren.

Ethylene, a gaseous plant hormone associated with fruit ripening processes, is produced by bananas as they ripen. Hence the presence of ripe bananas could trigger the ripening of green bananas if they are stored together. To test this hypothesis, green bananas, all at the same stage of maturation was collected and separated into two groups. One group was stored alone while the other group was stored with ripe bananas. The rate of ripening between the two groups was observed over 2 weeks and measured using a standard banana color chart. The study confirmed our hypothesis that green bananas ripen faster …

Celiac disease (CD) and non-celiac gluten sensitivity (NCGS) are often confused or grouped together due to their commonalities. However, this is careless behavior because there are clinically significant differences between the two diseases. Background and aims: Sulfur-metabolizing microbes, which convert dietary sources of sulfur into genotoxic hydrogen sulfide (H2S), have been associated with development of colorectal cancer (CRC). We identified a dietary pattern associated with sulfur-metabolizing bacteria in stool and then investigated its association with risk of incident CRC using data from a large prospective study of men.
Methods: We collected data from 51,529 men enrolled in the Health Professionals Follow-up Study since 1986 to determine the association between sulfur-metabolizing bacteria in stool and risk of CRC over 26 years of follow-up. First, in a subcohort of 307 healthy men, we …

Mounting evidence supports a connection between the composition of the infant gut microbiome and long-term health. In fact, aberrant microbiome compositions during key developmental windows in early life are associated with increased disease risk; therefore, making pertinent modifications to the microbiome during infancy offers significant promise to improve human health. An in vitro study was planned to assess the effects of a homofermentative microbial inoculant on the fermentation parameters and nutritive value of corn silage. The inoculant was applied at concentrations of 5x104cfu/g of forage (T1), 1x105cfu/g of forage (T2) 1.5x105cfu/g of forage (T3) and a negative control group (T0) without bacterial inoculant in three replicates each. At day 3, 7, 45 and 90 of the experiment individual buckets were opened to characterize the material, quick acidification, dry matter recovery, and aerobic stability of silage respectively. Effects of monosaccharide (glucose and fructose) on the retrogradation of lotus seed starch were studied from the aspects of crystal structure, molecular structure and molecular weight. The results of X-ray diffraction, nuclear magnetic resonance and infrared spectrum showed that glucose and fructose could inhibit the recrystallization of lotus seed starch. The crystallinity, double helix structure and short-range ordered structure decreased, and the proportion of amorphous area increased in the composite system, indicating that glucose and fructose might inhibit the retrogradation of starch. The inhibition of glucose on starch retrogradation was more significant than fructose, which might be related to the …

47 isolates with obvious calcium dissolving circle were screened from fermented grains for light-Baijiu brewing by MRS calcium carbonate medium. Through physiological and biochemical characteristics and 16S rDNA sequences, it was found that the closed lactic acid bacteria strains were 20 strains Lactobacillus brevis, 16 strains L. plantarum, 7 strains L. buchneri, and 4 strains L. pentosus, respectively. By turbidimetric method, the autolysis of 47 strains of lactic acid bacteria was determined, and their autolysis ranged from 5.01%~29.27%. This test evaluated the auxiliary hypoglycemic effect of cakes processed from bitter almond flour, Luo Han Guo powder, resistant starch, polydextrose and other materials on patients with type 2 diabetes. The test used a self-matching design, during the 12-week test period, and subjects were interspersed with a control breakfast and a test breakfast. The subjects were tested for fasting blood glucose, 2 hours postprandial blood glucose, glycated hemoglobin, and safety indicators. The electrophilic components in Xiaoheiyao were knocked out by GSH functionalized magnetic nanoparticles (GSH-MNPs) and characterized by LC-MS analysis, and the effect and mechanism of the electrophilic components in Xiaoheiyao for reducing lipid accumulation and oxidative stress in hepatocytes were evaluated, based on free fatty acid (FFA)-induced HepG2 cells. The ethyl acetate fraction was determined as the most electrophilic components-enriched part of Xiaoheiyao. At the concentration of 0.5~2.0 μg/mL, the petroleum ether, ethyl acetate and water fractions of Xiaoheiyao exhibited the activities of decreasing hepatic lipid accumulation and ROS production, in which the ethyl acetate fraction showed the best activities. …
