Milk fat globule membrane surrounds the fat droplets of milk. It is a biopolymer containing primarily membrane glycoproteins and polar lipids which contribute to its properties as a possible neutraceutical. The aims of the studies were to determine if dietary milk fat globule membrane: (1) confers protection against colon carcinogenesis; and (2) promotes gut mucosal integrity while decreasing inflammation compared to diets containing corn oil or anhydrous milk fat.

Shelf-stable canned butter is currently available in retail stores, and many home-preservationists promote home-canning of butter. Non-cultured butter is a low-acid canned food, which would presumably require thermal processing. The lack of a thermal process step in canned butter products raises questions of potential safety, because they are hermetically sealed and generally exhibit anaerobic growth conditions, which are optimal for Clostridium botulinum growth. Without thermal processing, low-acid canned foods (LACF) must have inhibitory factors present to prevent C. botulinum growth. Background: Systemic inflammation is linked to cardiovascular risk, but the influence of persistent pathogens, which are conventionally dichotomously categorized, on circulating levels of inflammatory markers is not clear. Antibody levels of pathogens have not been examined in relation to inflammation.
Methods: Using data from a subsample of the Multi-Ethnic Study of Atherosclerosis, we examined circulating levels of interleukin-6 (IL-6), C-reactive protein (CRP) and fibrinogen in relation to five common persistent pathogens: cytomegalovirus, herpes simplex virus-1, Hepatitis A virus, Helicobacter pylori and Chlamydia pneumoniae. Vegetable oil is an important commodity; however, the majority of commercially available vegetable oils have a fairly short shelf life, which limits their usefulness for long term food storage, disaster relief, space travel, food aid programs, and military rations. Vegetable oils with high oleic acid and reduced linolenic acid contents, especially with added antioxidant combinations, were previously found to have significantly longer oil stability index (OSI) values than traditional vegetable oils. After majoring in finance in college she worked as a bookkeeper, first at a bank, and then as the bookkeeper for her local school district, eventually becoming the bookkeeper for the child nutrition programs, where she rose through the ranks, becoming a coordinator, an assistant to the director, and finally the school nutrition director, where she currently supervises eighteen schools.

After earning bachelors and master’s degrees at the University of Southern Mississippi, Judy Mumphrey taught home economics for eleven and a half years, before moving into school food service. She started out as the School Foodservice Administrator at Pass Christian before moving to Bay-Waveland Schools, where she finished her career. Her biggest challenge over that career was dealing with the aftermath of Hurricane Katrina.

We investigated cross-sectional associations of neighborhood deprivation, problems, safety, and cohesion with circulating levels of fibrinogen, interleukin-6, and C-reactive protein (n=5370) and longitudinal associations with changes in IL-6 over a 3–4 year period (n=946). In cross-sectional analyses, higher levels of neighborhood deprivation and problems were associated with higher levels of all three inflammatory markers, whereas higher levels of safety were associated with lower levels. Fibrinogen remained associated with all neighborhood characteristics except cohesion and IL-6 remained associated with safety after adjustment for race and SES. In the Central Plateau of Burkina Faso, grain sorghum [Sorghum bicolor (L.) Moench] is the major cereal crop used to produce the traditional beer called dolo. Grain sorghum grain samples collected in 2004 and 2005 from experiments combining five water management techniques and four fertilizer treatments in a randomized complete block design with a split plot arrangement of treatments were analyzed for the physicochemical properties of raw grain, and quality of malted grain. The use of fish processing waste from an oily fish model (mackerel, Scomber
scombrus) and a white fish model (blue whiting, Micromesistius poutassou) as a source of functional and bioactive compounds was investigated.
Gelatines were extracted from fish heads and skins using pre-treatment with
different organic acids (acetic, citric, lactic, tartaric and malic acids). Gelatines from fish bones were extracted after pre-treating the bones either chemically or enzymatically. The type of pre-treatment affected the yield, colour, turbidity, amino acid profiles as well as functional properties of fish gelatines. Pistachios (Pistacia vera) are popular snacks and consumption of pistachios is notably increasing due to their usage as ingredients for confections, ice cream, and baked goods. The increased consumption of pistachios may lead to a higher frequency of allergic sensitization and an increased prevalence of allergic reactions to pistachios. Trace amounts of undeclared pistachio allergens can pose serious health risks for food-allergic consumers, including severe anaphylactic reactions. Salmonella is one of the leading causes of foodborne illness worldwide, and it is estimated that 1.4 million infections occur annually in the U.S. alone. The Premi®Test Salmonella (PTS), is a potential tool for rapid detection and identification of Salmonella serovars. The objective of this project was to evaluate the use of the PTS system as a serotyping tool to identify pork and poultry isolates obtained from vertically integrated operations and to characterize their antibiotic resistance. Effective methods of grain disinfestation include freezing, the use of carbon dioxide gas, and the use of pesticides. Oxygen deprivation has also been shown to be an effective method of disinfestation when the oxygen content is held below 1% for at least 12 days (d). High Density Polyethylene (HDPE) 5 gallon (gal) buckets have become a popular and convenient storage container for dry foods such as wheat, rice and beans. Many consumers are beginning to store grain on their own creating a need for easy disinfestation methods that can be accomplished in the home. Oxygen deprivation has proven to be an effective method for grain disinfestation when kept below 1% for 12 days. Re-using PETE soda bottles is an easy way many consumers can store their grains. The purpose of this research was to explore the current efforts using spirulina as a malnutrition treatment in Kenya. There are currently five spirulina cultivation sites that growing spirulina, four of which are located in the Nyanza Province. Their production and scope of advocacy efforts are limited. Some of the cultivation sites have a better quality control measures and strategic plan in place for expanding cultivation. Significant efforts need to be made to improve the scope of production and create links with nutrition experts in other non-governmental organizations and at the national level.

One of the largest challenges that food manufactures are facing today is the management of food allergens. Allergenic protein in trace amounts, part per million concentrations, will trigger a reaction in some individuals. Food manufacturers need to prevent allergen cross-contamination by performing adequate sanitation after production of an allergenic containing food. Allergen detection kits are used to determine if sufficient protein was removed from the equipment surfaces during sanitation. One kit on the market is the 3M™ Clean- Trace™ Surface Protein (Allergen) swab tests. The test qualitatively detects the presence of protein based on the biuret reaction and will yield …
