The rate at which the muscle acidifies after an animal is harvested has a profound effect on the quality of the resulting pork. When acidification increases gradually, desirable pork quality characteristics are developed. In contrast, rapid acidification deteriorates pork quality, exemplified by the pale, soft, and exudative (PSE) pork defect. The rate of acidification is determined by the rate of anaerobic metabolism in postmortem muscle. Yet the processes controlling postmortem anaerobic metabolism are not well understood. Recent research suggests that mitochondria, the powerhouse of the cell, may influence this process by competing for substrate (pyruvate) with anaerobic metabolism, thereby reducing …

At least 100 million people have leaky gut syndrome. This syndrome is associated with multiple health problems such as diabetes, celiac disease, asthma, multiple sclerosis, and inflammatory bowel disease, costing more than $3 billion per year to treat. L-Glutamine, quercetin, slippery elm bark, marshmallow root, N-acetyl-d-glucosamine (NAG), licorice root, maitake mushrooms, and zinc orotate have been reported to help treat leaky gut.

The FSMA Produce Safety Rule (PSR) requires citrus packers to more closely assess, manage, and monitor food safety risks. Although there have been no foodborne illness outbreaks and only one recall in fresh citrus, the risk of pathogens coming in on the fruit and cross contamination during washing still exists. Packhouses have dynamic washing systems and in-plant validations may be the only way to demonstrate compliance with the PSR. Marginal Agricultural Land Identification In The Lower Mississippi Alluvial Valley, Prakash Tiwari

This study identified marginal agricultural lands in the Lower Mississippi Alluvial Valley using crop yield predicting models. The Random Forest Regression (RFR) and Multiple Linear Regression (MLR) models were trained and validated using county-level crop yield data, climate data, soil properties, and Normalized Difference Vegetation Index (NDVI). The RFR model outperformed MLR model in estimating soybean and corn yields, with an index of agreement (d) of 0.98 and 0.96, Nash-Sutcliffe model efficiency (NSE) of 0.88 and 0.93, and root mean square error (RMSE) of 9.34% and 5.84%, respectively. Doryteuthis pealeii (longfin inshore squid) and Illex illecebrosus (Northern shortfin squid) are the two most commercially important species of squid harvested in the United States. They are also the only two species of squid in the world certified sustainable by the Marine Stewardship Council. Despite their pivotal role in the U.S. seafood industry, very little research has been performed on their quality in decades. Approximately 15% of American adults aged 18 and over report some trouble hearing. Porous starch has been successfully prepared from A-type starch, but not from B-type and C-type starches, which is partly attributed to the surface and crystalline structure. A rising problem in agriculture is the increase of antibiotic-resistant Salmonella cases associated with chicken eggs, which transmit infection to humans. To counter this, new approaches to combat Salmonella in chickens and desiccated on eggshells are vital in the prevention of human foodborne illness. Disrupting signaling pathways with naturally occurring compounds provides a potential novel avenue for prevention of Salmonella infections, as this would disrupt sensing of these environments and inhibit subsequent optimal gene expression. Black garlic is created by processing regular garlic at temperatures ranging between 60-90°C, with high humidity for upwards of one month. Effective decolorization methods mitigating green compound formation from alkaline chlorogenic acid-amino acid reactions can facilitate greater consumption of chlorogenic acid-rich products. While thiols show promise as decolorization agents to replace sulfites, their application has not been optimized. In this work, cysteine and glutathione were probed for their varying kinetic effects on the onset of chlorogenic acid-lysine induced greening. A six-parameter model developed from a reparametrized Weibull cumulative distribution function accurately captured the time- and thiol concentration-dependence of greening in chlorogenic acid-lysine-thiol solutions at pH 8.0 and 9.0, illustrating the pH-dependence of each thiol’s effectiveness at lowering terminal greening magnitude as …

Mesquite trees continue to invade forests and range lands in many countries across the world. The cost to remove these trees is staggering. In Texas, landowners spent $25 million over a 10- year period to clear 300,000 ha of mesquite trees, a fraction of the 22 million ha of Texas land affected by this invasion. Conradina verticillata Jennison, commonly known as Cumberland Rosemary, is a threatened plant from the mint family Lamiaceae. This species is a flowering, perennial shrub found in only a few counties of Kentucky and Tennessee. Cumberland Rosemary possesses a unique aroma profile; however, the odorants responsible for its aroma have not been previously identified. In this study, a total of 32 odorants were identified in Cumberland Rosemary using gas chromatography-olfactometry (GC-O) and gas chromatography-mass spectrometry (GC-MS). Two separate sets of experiments were conducted to determine the transfer of bacteria by flies. An Escherichia coli ampicillin-resistant strain with a fluorescent gene was used during the experiments. The first set of experiments were divided into two trials to measure the transfer of E. coli by fruit flies to apple slices and bologna during short term exposure. Short time exposure (1, 5 and 15 min) of flies to inoculated apple slices were tested in the first trial to determine the transfer of E. coli to flies. Converting lignin, the second most natural abundant polymer on earth, into lignin nanoparticles (LNPs) form has potential applications. LNPs’ emulsifying, antibacterial and antioxidant properties of three different lignins, softwood kraft lignoboost (LB), hardwood birch (BB) and alkali protobind 1000 (PB) were evaluated in a comparative study at different pH and concentrations. Lower ionic strength of 5 millimole (mM) citric acid (CA) and pH of 7 were found to be the most optimum conditions for emulsion formation. The purpose of this experiment is to determine the thermal kinetic parameters of Salmonella in moisture-enhanced, reconstructed ground chicken patties as affected by temperatures and salt concentrations. Salmonella is responsible for 35% of the foodborne illnesses associated with poultry products (Batz et al., 2011). Nonintact reconstructed chicken meat is mixed with brine solutions containing various salt and polyphosphate concentrations to increase water-holding capacity, decrease cooking losses, improve sensory tasting scores, and maintain the good quality of completed chicken products (Gill et al., 2004). Antarctic krill (Euphausiacea superba) is an abundant and sustainable but underutilized natural resource with well-studied protein isolation methodology using Isoelectric solubilization-precipitation (ISP). Grass cell walls are rich in cellulose, hemicellulosic arabinoxylan (AX) polysaccharides, and lignin. AX structural differences such as degree and pattern of branching and the ester-linked phenolic acid content could affect plants’ digestibility when used as forage for livestock. However, there is little information about how these structural elements change over the growing season in the vegetative tissue of cool-season perennial grasses.
