Foodborne or waterborne pathogens which are responsible for numerous worldwide outbreaks of disease have caused serious health problems and enormous economic cost. Development of new bacterial detection technologies with high sensitivity and specificity is of great importance for food safety and public health. One of the major safety causes in drinking water is from the bacteria contamination, especially in developing countries and resource-limited settings. Although many of these Escherichia coli (E. coli) strains in drinking water are nonpathogenic, they sever as the indicator for bacterial contamination. And, the more widely used method to detect E. coli in drinking water is to determine the activity of β-galactosidase (β-gal), which is released by E. coli. Paper based devices are an emerging trend for micro total analysis systems due to their rapid, sensitive and specific attributes. Lateral flow assays (LFAs), the predecessor of paper-fluidic devices, are developed for many applications which range from nucleic acid and antibody detection to commercial home pregnancy tests. With growing interest in replacing conventional detection methods, multistep assays are needed. These assays require multiple test reagents, therefore, there is a need to control fluid flow for the development of complex paper-based devices. Bacteria are ubiquitous and vital constituents of our environment, our foods, and our bodies. A small percentage of this vast, microbial population is pathogenic to humans, but represents a significant burden on public health. There is a current public health focus on two subgroups: foodborne pathogenic bacteria and antibiotic resistance bacteria. A key challenge for public health is the rapid identification of these bacteria to prevent their consumption and to ensure proper treatment for infections. Produce is responsible for 46% of all foodborne illnesses in the USA. Salmonella enterica causes 19,000 hospitalizations each year, and has been associated with produce. Presently, chlorine based sanitizers are most often used, however organic matter reduces its antimicrobial activity. Bacteriophage treatments are an all-natural, alternative method for pathogen inactivation. The objective of this study was to determine the efficacy of a five-strain bacteriophage treatment against a S. enterica cocktail in simulated wash waters at different temperatures.
