Maintaining proper hydration is crucial for human health, physiological functions, and cognitive performance. This study sought to determine the hydration status and the microbial safety of tap water in an urban setting (Kwame Nkrumah University of Science and Technology Campus) and a rural community (Adjamesu) in the Ashanti Region of Ghana. The water safety perception and hydration status of 171 study participants aged 10-61 years were assessed. Six taps were randomly selected at each site in triplicates, resulting in 36 water samples. The microbial quality of the water was assessed by testing for heterotrophic bacteria, coliforms, Staphylococcus aureus, and Salmonella. …

Milling is one of the most important postharvest processes in rice production. Traditionally, the McGill #2 mill has been used for lab milling to assess rice milling performance as per the recommendation of the Federal Grain Inspection Service (FGIS). Food safety and sustainability are critical concerns in the food industry. However, these areas are often evaluated separately, leading to an incomplete understanding of the overall impact of food production on human health. This dissertation aims to integrate food safety with sustainability to provide a comprehensive assessment of the impact of low-moisture foods on human health, using the almond processing supply chain as a case study.

This study comprehensively evaluates the effects of environmental conditions, transportation, and storage practices on the quality of milled rice using three cultivars: CLL16 (long grain pureline), XP753 (long grain hybrid), and Titan (medium grain pureline). Three distinct objectives guided the research: (1) assessing the impact of relative humidity (RH), temperature, and exposure duration on rice quality post-milling and post-storage; (2) analyzing seasonal and locational influences on rice quality during transportation and storage; and (3) investigating the effects of subfreezing storage on key quality attributes.

Rice blending or mixing of different rice cultivars, a common practice in the industry, significantly impacts processing efficiency and end-product quality, yet its effects on end products remain understudied. This research investigated the implications of blending contemporary Arkansas rice cultivars through two comprehensive studies focusing on milling yields and physicochemical properties, instantization, and parboiling processes. Five long-grain cultivars, including hybrids (RT 7521 FP, RT 7321 FP, XP 753) and purelines (Ozark, CLL 16), were blended in various combinations and different drying.

The pet food industry is a growing business launching a variety of new products in the market. The acceptability or preference of pet food samples has traditionally been measured using either one-bowl or two-bowl tests. Academic researchers and professionals in the pet food industry have explored other methods, including the cognitive palatability assessment protocols and the ranking test, to evaluate more than two samples. Post-processing contamination of Listeria monocytogenes has remained a major concern for the safety of ready-to-eat (RTE) meat products that are not reheated before consumption. Mathematical models are rapid and cost-effective tools to predict pathogen behavior, product shelf life, and safety. The objective of this study was to develop and validate a comprehensive model to predict the Listeria growth rate in RTE meat products as a function of temperature, pH, water activity, nitrite, acetic, lactic, and propionic acids. This research investigates the potential of supercritical carbon dioxide (SC-CO2) technology as a green and sustainable approach to improve anthocyanin extraction from purple sweet potatoes (PSP). Efficient anthocyanin extraction from emerging food matrices is essential in food technology and requires a precise, consistent, and clear extraction method. This study aimed to develop a decision-tree tool for selecting the optimal anthocyanin extraction technique. A comprehensive data synthesis covering the years 2018 to 2023 was conducted using leading academic databases, including Web of Science, Scopus, Medline, and SciELO. A combination of systematic and non-systematic approaches was employed to guide the decision-making process. Soybeans are rich in protein but have limited food applications due to their undesirable volatile compounds, negatively affecting their flavor and consumer acceptance. This study aimed to extract lipids and volatile compounds from soybean flour using supercritical carbon dioxide (SC-CO2) and investigate the impact of extraction conditions on the properties of soybean flour, including particle size distribution, composition, color, and rheological and textural qualities. Similar lipid extraction yields (∼20 %) were obtained with SC-CO2 and conventional hexane extractions. Black sorghum contains a high amount of anthocyanins and proanthocyanidins, whereas white sorghum predominantly comprises phenolic acids. Polyphenols covalently and non-covalently interact with protein, whereas the structure of both compounds affects these interactions. This study investigated the interactions between phenolic acids, anthocyanins, proanthocyanidins and prolamin, which is the major protein fraction in sorghum, and their effect on the pasting properties of white and black, whole and milled sorghum using different chemical agents. Urea increased the pasting viscosity of black sorghum, but not that of white sorghum, indicating that hydrogen bonds and hydrophobic interactions between prolamin and anthocyanins and proanthocyanidins play …

3D food printers facilitate novel customization of the physicochemical properties of food. This study aimed to investigate the impact of storage conditions on the inactivation of the human norovirus surrogate, Tulane virus (TuV), within 3D printed foods. TuV-inoculated protein cookie food ink (∽ 4 log PFU/g) was distributed into 18 3D food printer capsules (50 g each); half immediately underwent extrusion. Arkansas is the leading rice producer in the United States. The state represents 49.0% of total U.S. rice production and 49.6% of the total acres planted to rice in 2023. Rice cultural practices vary across the state and across the U.S. However, these practices are also dynamic and continue to evolve in response to changing political, environmental, and economic times. Processing of berries usually degrades anthocyanin and non-anthocyanin phenolics and diminishes antioxidant activity. In Colombia, jelly produced from the fruit of Vaccinium meridionale Swartz is a popular product among consumers. The aim of this study was to determine the effect of jelly processing steps on bioactive components. Analysis of anthocyanins (ACNs) and non-anthocyanin phenolics was performed via HPLC-PDA. Antioxidant activity was assessed by the ORACFL method. This study focuses on improving the functionalities of milk protein concentrate (MPC) using a nonthermal plasma jet and plasma-activated water (PAW) with atmospheric air and nitrogen as source gases. The 5% and 10% MPC dispersions were directly treated with a plasma jet, and PAW was used to make the MPC dispersions. The dispersions were analyzed for changes in protein structure and functional properties. The treatment altered the secondary structure of MPC protein structure by increasing β-components and changing the order of random coils. Using bird-friendly coffee as an example, we investigated how sustainability information affects willingness to pay directly, to what extent this effect is mediated by taste perception and whether the effect of the sustainability information on taste perception is due to positive affect and/or due to a feeling of moral satisfaction. Due to the increasing number of reported outbreaks of pathogens in low-moisture foods (LMFs), there is a need to investigate novel non-thermal gaseous technologies to increase the microbiological safety of spices, nuts, and seeds without compromising the product quality. The objective of this study was to inactivate Salmonella spp. in different spices, seeds, and nuts using gaseous ozone treatment and evaluate the suitability of Enterococcus faecium as a potential surrogate for Salmonella. Market demand for instant rice--a processed form of rice that is cooked and dehydrated before it is sold--has risen tremendously and become a significant component of the rice industry. Compared to freshly cooked rice, the quality of instant rice (in terms of texture, color, aroma, etc.) is much lower. There exists little information regarding how instant rice’s storage conditions affect its quality. A surrogate is commonly used for process validations. The industry often uses the target log cycle reduction for the test (LCRTest) microorganism (surrogate) to be equal to the desired log cycle reduction for the target (LCRTarget) microorganism (pathogen). When the surrogate is too conservative with far greater resistance than the pathogen, the food may be overprocessed with quality and cost consequences. In aseptic processing, the Institute for Thermal Processing Specialists recommends using relative resistance (DTarget)/(DTest) to calculate LCRTest (product of LCRTarget and relative resistance).
