Pitting corrosion of stainless steel (SS) is observed in many different industries including the dairy industry. It is of concern, because it weakens the steel, and can cause cracking. Any replacement or repair of SS equipment is very costly and also causes delays in product manufacture. Microbial Induced Corrosion (MIC) is a possible accelerator of natural corrosion seen in galvanized steel pipes. Studies have shown a correlation between surface roughness and the ability of bacteria to colonize and form biofilms. Dairy industry utilizes higher food grade SS 304 and 316. The Effect Of Freezing As A Storage Method On Anthocyanin Concentration In Blueberries, Marin E. Plumb

Blueberries are rich in a water-soluble class of pigments known as anthocyanins which are known antioxidants. Antioxidants help prevent many diseases by stabilizing free radicals, but are prone to losses in food during storage. The goal of this study was to test the effect of freezing as a storage method on anthocyanin concentration and antioxidant activity over time. Blueberries from Canada and Argentina were frozen for up to 5 months and periodically tested for anthocyanin concentration and antioxidant activity. Anthocyanins were extracted using a mixture of methanol, acetic acid, and water, and evaporation under vacuum. They were separated using column …

Using a properly calibrated thermometer is essential to ensure that foods are cooked to the correct temperature, chilled rapidly, or held at proper temperatures after cooking. A thermometer should be calibrated before the first use, after an extreme temperature change (such as going from hot food to frozen food), if the thermometer is dropped, or if it is used many times. Clean thermometers after each use by washing in hot soapy water, rinsing, sanitizing, and air drying.

Alice white wheat is a new cultivar of white wheat that has many desirable attributes for the baking industry. Its main appeal is the reduction in bittering compounds and pigments. White wheat is in demand in the booming Asian noodle market. The purpose of this study was to analyze rheological properties of white wheat flours using the Mixolab, a state of the art dough rheology instrument. Additional objectives included sensory testing of various reduced-sugar bread formulations and the determination of physico-chemical properties of flours and of bread made with them. Cottage cheese has the largest sales volume potential of all cultured dairy products in the United States today. Moreover, it can be a highly profitable product if proper control is exercised during its manufacturing (46). Commercial production of cottage cheese utilizes a significant portion of the total fluid milk produced in the U. S.A. After the 1955's, yearly per capita consumption of cottage cheese increased from 1. 7 7 kg (3.9 lb) to a high of 2. 45 kg (5.4 lb) in 1972 (67) . Canning is, of course, always a good method, but since the homemaker may not be able to obtain tin and rubber for containers, she must seek other ways to save her surplus garden products. The sharp freezing and storage of foods is one of the new and popular methods of preserving fruits and vegetables. In 1942 the Sebago, Pontiac and Sequoia potatoes grown. at Brookings were late blight-resistant and somewhat scab-resistant. The prevalence of scab in Deuel County and a part of Codington County may make it highly desirable to resort to a resistant variety for table stock production in that area. One of the prime requisites of a potato variety is its cooking quality, and varieties differ in their relative response to different methods; for instance baking and boiling.
