At least 100 million people have leaky gut syndrome. This syndrome is associated with multiple health problems such as diabetes, celiac disease, asthma, multiple sclerosis, and inflammatory bowel disease, costing more than $3 billion per year to treat. L-Glutamine, quercetin, slippery elm bark, marshmallow root, N-acetyl-d-glucosamine (NAG), licorice root, maitake mushrooms, and zinc orotate have been reported to help treat leaky gut.

Controlled agriculture environments like hydroponic systems are a growing industry. However, studies have shown potential of microbial growth in hydroponic systems, highlighting the need for decontamination techniques to prevent the risk of foodborne diseases. This study evaluated the effect of UV-C light against Listeria monocytogenes on hydroponically grown lettuce and seeds. Lettuce leaves were spot inoculated (100μL) with Listeria monocytogenes cocktail and exposed to UV-C light (0.28mW/cm2) for 10 to 50 seconds in 10-second increments and 1 to 5 minutes in 1- minute increments. A comprehensive understanding of the effect biological soil amendments of animal origin and physical soil amendments have on produce contamination is important for developing strategies to mitigate this risk. Our studies investigated the persistence of generic E. coli, E. coli O157:H7 and Salmonella spp. in soil and produce surfaces with different BSAAO and mulch applications, as well as the effectiveness of chlorine treatments in reducing enteric bacteria in the field. Visual and cognitive cues can affect overall liking (OL) and consumer perceptions, emotions, and behavior. The first study explored the effect of product color difference on the liking, perception, and purchase intent (PI) of cheese-flavored-tortilla chips (CFTC) formulations (A and B) on serving plates (plastic, foam, and paper). Color differences between formulations influenced crunchiness and saltiness liking and perception, which together with overall flavor liking and formulation, mainly determined CFTC OL. Bacterial cellulose (BC), composed of cellulosic nanofibrils, is synthesized by a symbiotic culture of bacteria and yeast during the fermentation of coffee kombucha (CK). BC may be used as a purification agent and adsorbent. Orange peel (OP) is a major byproduct from orange juice production, and is a good source of fiber and flavonoids, particularly nobiletin. Nobiletin has been reported to exhibit pharmacological activities including anti-inflammation and antioxidation. Incorporating orange peel into food products would harness economic benefit of this industrial byproduct and support a sustainable food chain. This study was performed to evaluate consumer perception of gluten-free oat-based snack bars (GFOSBs) containing orange peel.

The gluten-free-natural-ingredient (GF/NCL) product demand is globally increasing and driven by the growing prevalence of celiac-diseases. Nevertheless, the quality of GF product is often inferior compared to wheat-flour counterparts due to the removing of gluten, which, compromises the appearance, structure, and nutritional value. The addition of fiber into GF/NCL products has been considered to improve nutritional values while maintaining quality attributes. According to the US-FDA, a product containing ≥2.5 grams of fiber/serving can be claimed as a “good-source-of-fiber.” However, adding dietary fiber to baked products affects their qualities, and hence possibly lowering product acceptability.

The purpose of this study is to evaluate the effectiveness of aeration to reduce microbial risk during washing and sanitizing of fresh produce. The clean label starch was prepared with rice starch, 1% stearic acid, and 6% lysine, which was gelatinized, freeze-dried, and grinded. This study examined the wet and dry contact time (WCT or DCT) of produce during washing with sanitizer and evaluated the effect of attachment level of Listeria monocytogenes during storage on the efficacy of chlorine treatment. NAFLD affects individuals that consume the typical Western diet consisting of high levels of fats and carbohydrates. This study examined the survival or growth of Listeria monocytogenes on whole, and fresh-cut produce at different storage temperatures. Fresh fruits (cantaloupes, pears, pineapples, papayas, and watermelon) and vegetables (broccoli, cauliflower, lettuce, kale, and green bell peppers) were cut into 25 g pieces and were spot inoculated with 0.5 mL (8 Log CFU/mL) of Listeria monocytogenes. Chitosan is a polymer derived of the deacetylation of chitin that is one of the most abundant material in nature. Chitosan solutions applied as edible coatings, and dipping solutions have shown positive results in the extension of shelf life on seafood and meat products. Escherichia coli O157:H7, Salmonella sp., and Listeria monocytogenes have been linked to foodborne outbreaks in produce. The most recent outbreaks in produce have been associated with irrigation water due to infiltration of well water or water run-off from contaminated sources. The Food Safety Modernization Act (FSMA) requires all irrigation water to be safe for use on produce, as a strategy to reduce foodborne illnesses. Probiotic products can improve gastrointestinal health and probiotics in ale beer may be attractive to health-conscious consumers. However, the alcohol in beer may decrease probiotic viability. A powder produced from durian fruit (Durio zibethinus) rind, a by-product that is currently unutilized, contains large amounts of fiber which can be used to immobilize probiotics. Chlorine dioxide, a stronger oxidizing agent, is effective against a broad spectrum of microorganisms. This study evaluated the efficacy of chlorine dioxide on reducing Salmonella, E. coli O157:H7, and Listeria monocytogenes on sweet potato (aqueous ClO₂), strawberries and blueberries (gaseous ClO₂). Sweet potatoes inoculated with multi-strain cocktails of each bacterial pathogen (107 CFU/cm²) were treated with 5 ppm aqueous ClO₂ or water for 10, 20, and 30 minutes.
