The presence of microplastics (MPs) in food has emerged as an environmental and public health concern, yet evidence regarding their occurrence in refined dietary commodities remains limited. This study assesses microplastic contamination in commercially available sugar and estimates the daily intake of MPs. Seven branded and non-branded sugar products were analysed using stereomicroscopy for particle characterization and FTIR spectroscopy for polymer identification. Microplastics were detected in 95% of samples, with concentrations ranging from 210 to 508 particles/kg. Branded sugar contained 322 ± 109.53 particles/kg, while non-branded sugar exhibited 403 ± 148.5 particles/kg, indicating comparatively higher contamination in freely available market …

Research outputs 2022 to 2026
Membrane-associated fungal proteins mediate essential functions and contain bioactive proteins with therapeutic potential but are underrepresented in aqueous extracts due to hydrophobicity and lipid associations. Ultrasound-assisted aqueous extraction was applied to Lion’s mane (Hericium erinaceus), and the proteins were fractionated by molecular weight (≥30 kDa, 10–30 kDa, 3–10 kDa). Proteomic profiling using data-dependent (DDA) and data-independent (DIA) mass spectrometry identified 1500 and 1702 proteins, respectively (1% global FDR). Ultrasonication induced surface irregularity and a less compact, heterogeneous microstructure. Topology predictions showed higher proportions of transmembrane and secretory proteins in ultrasonicated fractions. Extraction preserved protein integrity (82% molecular-weight retention, 97% tryptic …

Quinolizidine alkaloids (QAs) are toxic secondary metabolites in narrow-leafed lupin that defend against herbivores but constrain food and feed use. We developed a single-sample multiomics workflow for simultaneous extraction and quantitative analysis of QAs and proteins from individual leaves using urea/thiourea/CHAPS extraction with acetone precipitation, validated for QA quantification by LC–MS/MS. Data-independent acquisition proteomics of eight lupin accessions (four bitter, four sweet) identified 4437 proteins, with 183 differing significantly between bitter and sweet groups. Bitter accessions were enriched in lysine biosynthesis and stress-response pathways, whereas sweet accessions showed enrichment in phenylpropanoid and other defense-related processes. Coexpression network analysis linked protein …

Wheat proteins can trigger immunogenic reactions due to their resistance to digestion and immunostimulatory epitopes. Here, we investigated the peptidomic map of partially digested bread samples and the fingerprint of epitope diversity from 16 wheat genotypes grown in two environmental conditions. Flour protein content and composition were characterized; gastric and jejunal peptides were quantified using LC-MS/MS, and genotypes were classified into high or low bread protein digestibility. Differences in flour protein content and peptide composition distinguish high from low digestibility genotypes in both growing environments. No common peptide signature was found between high- and low-digestible genotypes; however, the celiac or …

Plant-based protein is considered a sustainable protein source and has increased in demand recently. However, products containing plant-based proteins require further modification to achieve the desired functionalities akin to those present in animal protein products. This study aimed to investigate the effects of enzymes as cross-linking reagents on the physicochemical and functional properties of hybrid plant- and animal-based proteins in which lupin and whey proteins were chosen as representatives, respectively. They were hybridised through enzymatic cross-linking using two laccases (laccase R, derived from Rhus vernicifera and laccase T, derived from Trametes versicolor) and transglutaminase (TG). The cross-linking experiments were conducted …

A food composition database estimating S-methyl cysteine sulfoxide (SMCSO) was created following a systematic literature search. SMCSO data (705 entries) from 19 vegetables were summarised: brassicas (n = 10) and alliums (n = 9). The highest SMCSO in brassicas was reported in Brussels sprouts (median [range]: 318 [68−420] mg/100 g fresh weight (FW)) whilst the lowest was in radish (19 [4–45] mg/100 g FW). Brussels sprouts were almost twice as concentrated in SMCSO as cauliflower, followed by cabbage, kale, broccoli, kohlrabi, swede, Chinese cabbage, and turnips. The alliums highest in SMCSO were Chinese chives (271 [185−413] mg/100 g FW) followed …

The popularity of insect protein as a food and feed supplement is growing. Protein quality, end use and prices vary considerably between different insect species, which may incentivise insect protein adulteration. Here, near-infrared (NIR) spectroscopy and chemometrics were used to detect the presence of cricket, black soldier fly larvae (BSFL) and mealworm proteins in a simulated complex insect protein mixture. Additionally, BSFL protein powders collected from three commercial sources were investigated to determine whether the NIR-based technology can discriminate the proteins obtained from different companies based on their composition. The proximate analysis suggests compositional protein, fat and chitin differences between …
