After teaching home economics for two years, and then taking several years off to raise her five children, Dorothy Caldwell spent twenty years as food service director for Marianna, Arkansas schools. She then worked as the state director of child nutrition for the Arkansas Department of Education for another decade, serving as the president of the School Nutrition Association toward the end of this period. After a brief retirement Dorothy was recruited to come to USDA in Washington, DC, to work in Food, Nutrition, and Consumer Services for another four years.

Congruent And Incongruent Effects Of Ethnic Music On Ethnic Menu Item Selection, Ryan David Muniz

This study investigated what impact ethnic music had on ethnic menu item selection. College students were randomly divided into three groups and listened to one randomly assigned sound treatment in sensory booths. Three hundred and five participants completed the questionnaire with measures of expected price value and willingness to pay value. One of the groups listened to an Italian folk music, the second group listened to a Thai folk music, and the third group listened to a restaurant background noise in order to examine if the music will impact each participant menu items selection and perceived price values. Wanda Grant is a retired School Nutrition Director with over 35 years of experience. She holds a Bachelor’s degree in Food, Nutrition and Institutional Management from Washington State University and is a registered dietitian. Her career took her from Washington to Alaska and finally to California. She is a credentialed School Nutrition Specialist with the School Nutrition Association (SNA), has served on the Executive Board of SNA, and was honored nationally in 2009 as Outstanding Director of the Year. Wanda is a certified ServSafe® instructor and a consultant trainer for the National Food Service Management Institute.

After a number of years in retail food service, Jennifer Jennings saw an ad for a food service director position in her native Wisconsin and applied. Surprised that she got the job, she knew she had a lot to learn about school food service and took advantage of all the classes available through her Department of Public Instruction, as well as becoming involved with the School Nutrition Association of Wisconsin. She has now been a director for six years.

A Maine native, Darlene French hails from South Bristol. After spending part of her childhood in Florida, the family moved back to Maine and settled in Boothbay Harbor. After several years in restaurants and catering, French applied for a position in school food service. She was hired as a cook, she took every training available to her, and advanced to baker, and then manager, and finally is the current food service director in Boothbay Harbor.

Wanda Shockey, a native of Monroe, Louisiana, began her child nutrition career in Bastrop, Louisiana, first as the home economics teacher and then becoming the child nutrition director. After moving to Arkansas, Shockey was child nutrition director for Little Rock School District for nine years and had fifty schools. Later she moved to the Arkansas Department of Education where she has been director of child nutrition for the past fifteen years.

Melba Hollingsworth earned a BS degree in Dietetics from Louisiana State University and a Master’s degree in Institution Management from Texas Women’s University. She has worked over 25 years in Child Nutrition Programs. She served as a school food service manager and a district director in the state of Louisiana before becoming an Education and Training Specialist for the National Food Service Management Institute (NFSMI) at The University of Mississippi. Anne Gennings of New York State, started her career as a hospital dietitian and served as president of New York State Dietetics. Gennings then became the food service director at New Harvard Central School and stayed in that position for thirty-three years. She was president of the New York School Nutrition Association in the late 1980s and president of the American School Food Service Association in the early 1990s.

Dean Hamburg has spent most of his life split between Washington and Alaska. Before getting involved in child nutrition, Hamburg enlisted in the United States Navy, signed aboard as a cook and baker, and spent four years as a cook and baker aboard a Fast Attack submarine in the Atlantic. After Navy service Hamburg earned a bachelor’s degree in Hotel and Restaurant Administration and went to work for hotels throughout the US. Frank A. Harris fled Germany as an adolescent shortly before World War II, arriving in England. The family later made their way to the United States. Coming of age during the war, Harris joined the US Army and became a cook, serving in North Africa and Europe. After the war Harris built a career working in many different aspects of food service. He eventually became a school food service director and president of the Connecticut School Food Service Association.

Linda Erwin, an Arkansas native, began her career as an elementary and then a home economics teacher. She later moved to Tennessee and taught adult vocational home economics classes. She eventually went to work for Shirley Watkins, the school nutrition director for Memphis City Schools, who introduced her to child nutrition. Erwin eventually moved to Georgia where she continued her career, becoming a food service director, and became very active in the Georgia School Food Service Association. She retired after twenty-eight years in the Georgia child nutrition programs.

Hendrix then worked as a school nutrition director for one year before becoming an area consultant for school nutrition with the Georgia Department of Education. After working as an area consultant in various Georgia locations for a number of years, Hendrix returned as a food service director for a large school district, where she worked for a further four years before retirement.
