He interviewed three men, one of whom was his father, about the process they used for processing pork on their farms and how they learned their techniques. Bill Owens is a pioneer in the United States craft brewing industry through his efforts as an advocate, writer, publisher, brewer, and entrepreneur who created a lasting legacy by influencing generations of brewers and beer fans. Owens wrote the first book on homebrewing equipment (How to Build a Small Brewery: Draft Beer in Ten Days in 1982). He opened the third brewpub in the country (Buffalo Bill's Brewery in Hayward, California in 1983) where, in 1985, he introduced the first commercial pumpkin beer among other beer style firsts. Owens published numerous brewery-focused magazines that featured many illustrious beer writers. …

This dissertation is composed of three papers: one published article, one article under review for publication, and one published commentary. Chapter 1 provides an introduction to the dissertation as a whole – a work that investigates food aging and fermentation techniques in an indigenous Yup’ik Alaskan community, proposes an adaptive explanation for these strategies in the circumpolar north, and explores the potential importance of them cross-culturally and evolutionarily. The Slow Food Movement (SFM) has been characterized as a reminder of the centrality of the kitchen in the “good old days”. It has also been referred to as a poor use of science posing as a rallying point for the beleaguered middle class trying to reclaim psychological territory lost to the fast-paced commercialization of what was once private or leisure time. This paper argues that both these criticisms contain more than a kernel of truth. However, each misses the mark when it comes to explaining the relative successes of SFM. Lay Health Epistemics And Motivated Information Behaviors Of New Food Technology, Soojin Kim, Jeong-Nam Kim, Soo-Yun Kim

Research Collection Lee Kong Chian School Of Business

This study examines relationships among health information orientation, situational perceptual frames, and active information behaviors pertinent to the safety controversy of genetically-modified (GM) food technology. A web survey was conducted in the US (N = 393). Based on our findings, an integrative model of Kim and Grunig’s (2011) Situational Theory of Problem Solving (STOPS) and Dutta-Bergman’s (2004) concept of health information orientation is suggested to explain lay health epistemics and various information behaviors about that new food technology. The study’s theoretical and practical implications are discussed.

In Nebraska alone, nearly 400 earthen manure storage structures are in operation; approximately four dozen requests to cease operation of permitted lagoons were received by the Nebraska Department of Environmental Quality in the prior decade with many more non-permitted storage structures being in need of proper closure. Abandoned livestock lagoons, earthen manure storage basins, and other manure storages (e.g. concrete pits) need to be decommissioned in a manner that controls potential environmental risk and makes economical use of accumulated nutrients. In December 2016, a panel of experts in microbiology, nutrition and clinical research was convened by the International Scientific Association for Probiotics and Prebiotics to review the definition and scope of prebiotics. Consistent with the original embodiment of prebiotics, but aware of the latest scientific and clinical developments, the panel updated the definition of a prebiotic: a substrate that is selectively utilized by host microorganisms conferring a health benefit. This definition expands the concept of prebiotics to possibly include non-carbohydrate substances, applications to body sites other than the gastrointestinal tract, and diverse categories other than food. Multiple sectors play vital roles in a community’s development and maintenance of a sustainable local food system. This study explored the perceptions of twenty-two representatives from the civil society, public, and private sectors in Dayton, Ohio, about the development of the region’s local food system. The researchers employed grounded theory methodology for data collection and analysis. Core themes from the participants of each sector group emerged from the data and areas of convergence and divergence among groups were reported.

Food security in the arctic and subarctic is an area of growing research and concern as climate change continues to alter the availability of traditional foods eaten in remote areas, especially as shipping food has questionable sustainability and contributes to rising CO2 levels. Previous research has noted changes in the Icelandic diet making it more reliant on foreign imports, although there is still strong localized agriculture. In this paper, I will explore the ways in which locals interact with new food options on the island of Bali. Specifically, I will explore dietary behaviors surrounding pre-­‐ packaged snacks and ‘fast-­‐food’ chains and determine whether the presence of these food options is affecting the Balinese’s relationship with more traditional cuisine. The Social and Solidarity Economy (SSE) is a viable strategy in dealing with some contemporary problems known both in industrial and developing countries. Addressed is how local populations could reach certain objectives and satisfy certain needs using techniques characteristic of SSE and, thus, carve out a social and economic space of their own vis-à-vis anonymous markets, global actors, local and national elites. This project aimed to implement the use of metal silos to improve quality and safety of maize consumed by inhabitants of the highlands of Guatemala. This manuscript includes a literature review of the maize production chain in Guatemala, a survey about agricultural practices used in the region of study, as well as a characterization of the analyzed maize regarding its mycoflora, nutritional composition, and insect infestation. Behavioral Determinants Of Biofortified Food Acceptance: The Case Of Orange-Fleshed Sweet Potato In Ghana, Chinonso E. Etumnu

Biofortified foods are being introduced in sub-Saharan Africa as an important strategy to help address micronutrient malnutrition. However, there has been little research on factors that could play decisive roles in their successful introduction. This paper investigates the determinants of consumer acceptance of biofortified orange-fleshed sweet potato (OFSP) using data from a choice experiment conducted in Ghana. I find that OFSP is preferred to traditional white-fleshed and yellow-fleshed sweet potatoes as indicated by consumers' marginal willingness to pay for the three varieties. I also find that respondents' socio-economic characteristics do not have a significant effect on consumer acceptance of OFSP. …
