A Pilot Study On Particulate Matter Concentrations From Cooking And Its Effects On Indoor Air Pollution In A Mexican American Household In Mission, South Texas, Usa, Sai Deepak Pinakana, Carlos Garcia Patlan, Esmeralda Mendez, Amit U. Raysoni

This pilot study focuses on particulate matter (PM) while cooking in a South Texan household. Dishes such as Beef, Burger, Fish, Chicken, Egg Sandwich, and Hotdog were prepared. Indoor PM levels were compared with outdoor PM levels. A DustTrak DRX was used to monitor the PM released during the cooking process. PM2.5 levels were highest while cooking beef, 162.79 + 209.62 μg m−3. Hot Dog preparation resulted in the lowest PM2.5 concentration of 27.72 + 5.58 μg m−3. Indoor PM2.5 levels were observed to be greater in contrast to outdoor levels when compared to the outdoor levels (96 words).

Agrarian movements around the world use agroecology to build sovereignty and steward dynamic ecosystems. Research has shown that agroecological farmers steward more resilient crops, more resilient soil biomes, and greater biodiversity than conventional agriculture. GIS and remote sensing offer many tools to detect the impacts of these farmers on the environment, but it is less clear how such technologies fit into agroecological goals. Quantifying the chemical process of milk spoilage is challenging due to the need for bulky, expensive equipment that is not user-friendly for milk producers or customers. This lack of a convenient and accurate milk spoilage detection system can cause two significant issues. First, people who consume spoiled milk may experience serious health problems. Secondly, milk manufacturers typically provide a “best before” date to indicate freshness, but this date only shows the highest quality of the milk, not the last day it can be safely consumed, leading to significant milk waste. The goals of this study were twofold: to further examine sustainability within the brewing industry through a literature analysis across four academic journals, and a benchmarking analysis of a Louisville, Kentucky brewery’s resource consumption and emissions production. Publications related to the brewing industry were examined for the presence of sustainability keywords: “efficiency, sustainability, carbon footprint, climate change and greenhouse gas”. Benchmarking examined the local brewery’s primary production facility to determine their performance compared to other surveyed breweries pursuing sustainability across the country. Sulfur containing compounds including glucosinolates (GLS), sulforaphane (SFN) and S-methyl-L-cysteine sulfoxide (SMCSO) have been proposed to be partly responsible for the beneficial health effects of cruciferous vegetables. As such, greater understanding of their measurements within foods is important to estimate intake in humans and to inform dietary intervention studies. Herein is described a simple and sensitive method for simultaneous analysis of 20 GLS, SFN and SMCSO by liquid chromatography mass spectrometry. In Taiwan, the number of applications for inspecting imported food has grown annually and noncompliant products must be accurately detected in these border sampling inspections. Previously, border management has used an automated border inspection system (import food inspection (IFI) system) to select batches via a random sampling method to manage the risk levels of various food products complying with regulatory inspection procedures. Several countries have implemented artificial intelligence (AI) technology to improve domestic governmental processes, social service, and public feedback. Food computing has long been studied and deployed to several applications. Understanding a food image at the instance level, including recognition, counting and segmentation, is essential to quantifying nutrition and calorie consumption. Nevertheless, existing techniques are limited to either category-specific instance detection, which does not reflect precisely the instance size at the pixel level, or category-agnostic instance segmentation, which is insufficient for dish recognition. This paper presents a compact and fast multi-task network, namely FoodMask, for clustering-based food instance counting, segmentation and recognition. Barley (Hordeum vulgare L.) is a major cereal crop produced globally. Hordeins, the major storage proteins in barley, can trigger immune responses leading to celiac disease or symptoms associated with food allergy. Here, proteomics approaches were employed to investigate the proteome level changes of grain and malt from the malting barley cultivar, Sloop, and single-, double- and triple hordein-reduced lines. The triple hordein-reduced line is an ultra-low gluten barley cultivar, Kebari®. Using discovery proteomics, 2,688 and 3,034 proteins in the barley and malt samples were detected respectively. Urban farming can enhance the lives of communities and help reduce food scarcity. This paper presents a conceptual prototype of an efficient urban farming community that can be scaled for a single apartment building or an entire community across all global geoeconomics regions, including densely populated cities and rural, developing towns and communities. When deployed in coordination with smart crop choices, local farm support, and efficient transportation then the result isn’t just sustainability, but also increasing fresh produce accessibility, optimizing nutritional value, eliminating the use of ‘forever chemicals’, reducing transportation costs, and fostering global environmental benefits.

Environmental sustainability can be positively impacted by the inclusion of feed additives to reduce enteric methane production from cattle. Methane production can be affected by feed additives that either alter the rumen environment or act as methanogenesis inhibitors. A reduction in methane from cattle can contribute to meeting carbon neutrality.
A metabolism study was conducted to evaluate Alga 1.0, a product containing bromoform, fed to cattle to evaluate the effects on gas emissions. The effect of the pre-growth temperature of bacterial cultures on their subsequent survival kinetics in fresh-cut produce during refrigerated storage was investigated in this study. Three-strain cocktails of Listeria monocytogenes and Salmonella enterica, cultured at different growth temperatures (4, 21, and 37 °C) were inoculated on fresh-cut mixed salad and on individual produce in the mixed salad. The inoculated samples were stored at 4 °C and 80 ± 2% relative humidity (RH) for up to 72 h and the growth, survival, or death kinetics were determined at regular intervals. Wild fisheries provide billions of people with a key source of multiple essential nutrients. As fisheries plateau or decline, nourishing more people will partially rely on shifting consumption to farmed animals. The environmental implications of transitions among animal-sourced foods have been scrutinized, but their nutritional substitutability remains unclear. We compared concentrations of six essential dietary nutrients across >5000 species of wild fishes, aquaculture, poultry and livestock species, representing >65% of animals consumed globally. Wild fishes are both more nutrient-dense and variable than farmed animals; achieving recommended intake of all nutrients with farmed species could require consuming almost four times more …

Human zoonotic infection with Campylobacter is a major cause of gastroenteritis in the United States and worldwide. Listeria monocytogenes causes a potentially fatal infection in humans and is often attributed to contaminated food. Genetic typing has demonstrated that Campylobacter infection is often associated with the consumption of contaminated poultry products, with Campylobacter often colonizing the poultry gastrointestinal tract, while listeriosis is commonly associated with the consumption of contaminated ready-to-eat (RTE) foods. In this study, a strain of endospore-forming bacterium (strain NH) that is bactericidal towards the human food pathogens Campylobacter jejuni and Listeria monocytogenes was identified and characterized. The direct-to-consumer (DTC) shipping mode presents new opportunity for fresh peach sales in North America where demand over the past four decades has steadily declined. The hazards in this distribution mode are severe, and fresh peaches are fragile emphasizing the need for proper protection. Thermal energy storage (TES) systems enhance the use of solar energy for cooking by matching the energy demand to its supply. Useful energy is extracted from TES systems that are thermally stratified and this is enhanced when charged at an averagely constant-temperature. This paper presents an experimental analysis of a mechanical-thermostat used to control the charging of an oil based TES system. The thermostat consisted of a slider-valve, an expansion-system acting both as a thermal-sensor and actuator, and an adjusting-knob for setting the charging temperature. Black garlic is a traditional spice having potential of herbal medicine; however, continuous heating darkens its color and changes its taste due to chemical processes and new equilibrium in the system. In this study, fresh garlic was processed into black garlic at 60 °C for 24 days. Changes in physical and chemical parameters, such as browning and protein content, reducing sugar content, and antioxidative components were recorded. Mesquite trees continue to invade forests and range lands in many countries across the world. The cost to remove these trees is staggering. In Texas, landowners spent $25 million over a 10- year period to clear 300,000 ha of mesquite trees, a fraction of the 22 million ha of Texas land affected by this invasion. Estimates are that the mesquite continues to negatively impact one to two percent of additional land in selected counties each year in Texas.
