[Objective ] This study aims to comprehensively develop perilla and improve its utilization value.[Method ] Using perilla leaves as raw material,the effects of solid-liquid ratio,ethanol volume fraction,ultrasonic time,and enzymatic hydrolysis time on the mass fraction of anthocyanins in perilla leaves were studied.The ultrasound-assisted dual-enzyme extraction conditions for anthocyanins from perilla leaves were optimized by the response surface method.The antioxidant activity and phenol mass fraction of anthocyanins from perilla leaves were determined,and the main phenols were analyzed by chromatography.[Result ] The optimal extraction conditions of anthocyanins from perilla leaves were solid-liquid ratio of 1 g∶16 mL,ethanol volume fraction of 74%,ultrasonic time …

[Objective ] This study aims to construct chitosan and chitin-based carriers with hierarchical porous lamellar structures,systematically evaluate the immobilization effects of these carriers for Pseudomonas fluorescens lipase (PFL) and the performance of the immobilized enzyme in catalyzing the hydrolysis of fish oil.[Method ] Chitin/chitosan were modified via the sol-gel method to prepare the carriers for the binding with free PFL.The enzymatic properties of the immobilized PFL were then evaluated,and then analysed the hydrolysate composition of anchovy oil catalyzed by the immobilized PFL.[Result ] The modified carriers exhibited lamellar structures with abundant free amino groups on the surface,which facilitated covalent immobilization …

[Objective ] This study aims to explore the effects of three modification methods on the processing properties of Cyperus esculentus powder.[Method ] Three modification methods (superfine grinding,microwave treatment,and enzymatic treatment ) were employed to process Cyperus esculentus powder.The effects of these treatments on the processing properties including oil holding capacity,hydration properties,textural properties,and rheological properties of Cyperus esculentus powder were analyzed.[Result ] In comparison to the native Cyperus esculentus powder,ultrafine grinding treatment increased the specific surface area of the powder,enhanced the oil holding capacity by 74.57%,and significantly increased the loss angle (tan δ).Additionally,this treatment significantly increased the hardness,cohesiveness,and chewiness of the …

Cardiovascular-kidney-metabolic (CKM) syndrome integrates excess adiposity, metabolic dysfunction, kidney impairment, subclinical cardiovascular diseases, and clinical events along a staged continuum that invites unified prevention and treatment. Ultra-processed foods (UPFs) are a complex, high-prevalence exposure that may influence risk across CKM stages through nutrient profiles, additives, processing-induced compounds, and packaging-related contaminants. This review synthesizes epidemiologic, mechanistic, and translational evidence with attention to exposure definition and analytic rigor. We summarize NOVA-based UPF operationalization across dietary assessment tools, highlighting misclassification of mixed dishes, brand heterogeneity, and energy under-reporting, and we propose further examination of energy-adjusted models, calibration, and harmonized metrics. Fresh produce is highly perishable, necessitating various postharvest treatments to minimize quality loss, extend shelf-life, and facilitate international trade. This study investigated the potential of a single low-dose gamma irradiation treatment as an alternative to commercially used chemical treatments for protecting ‘Granny Smith’ apples against insect pests and postharvest disorders. ‘Granny Smith’ apples harvested in 2019 and 2020 were treated with gamma irradiation at doses of 240 or 860 Gray (Gy) or with commercial chemical applications of 1-methylcyclopropene (1-MCP), diphenylamine (DPA), or methyl bromide (MeBr). [Objective ] This study aims to investigate the effects of different treatments on the postharvest preservation of grapes.[Method ] The impacts of 0.4 mg/L 24-epibrassinolide (EBR ),1×109 CFU/mL Metschnikowia pulcherrima,and their combination (YBR ) on postharvest storage of ‘Shine Muscat ’ grapes were evaluated.[Result ] Compared with the control (CK) group,EBR,Metschnikowia pulcherrima,and YBR treatments effectively reduced the water loss rate,maintained the firmness,and delayed the declines in protopectin and stem chlorophyll content of grape.In the later storage stage,YBR treatment delayed the decrease in flavonoid mass fraction,which was 12.95% higher than that of CK group.At the same time,YBR treatment reduced the mass …

Although advances in therapy have improved patient outcomes, the biological mechanisms that drive HF onset and progression remain incompletely understood. Increasing evidence suggests that the gut microbiota, the trillions of microorganisms residing in the gastrointestinal tract, plays a key role in some forms of heart disease, especially cardiovascular disease. Accurate fish species identification is critical to prevent mislabeling and fraud in the seafood industry. We present a handheld multi-mode point spectroscopy system that combines fluorescence (365 and 395 nm excitation) and reflectance measurements in the visible to near-infrared (∼350–900 nm) and short-wave infrared (∼900–1700 nm) regions for rapid, non-destructive classification of fish fillets. Tissue spectra were acquired at 25 positions on 68 fillets from 11 species, in both frozen and thawed states. [Objective] To investigate the quality changes of dried pork slices under different temperature storage conditions and to predict their shelf life. [Methods] Hardness, color parameters (L* value, a* value, b* value ), and sensory quality of dried pork slices were investigated under storage at 25, 35, 45, and 55℃. Pearson correlation analysis was performed for each index, and the key index was fitted using a dynamic model.
