Penelitian ini dilaksanakan di laboratorium Mikrobiologi dan Pengolahan Limbah Fakultas Peternakan universitas padjadjaran. Tujuan penelitian ini adalah untuk mengetahui jumlah total bakteri dan koliform pada lumpur hasil ikutan pembentukan gasbio dari feses sapi perah. Penelitian dilakukan dengan metode eksplorasi pada peternak sapi perah yang membuat instalasi gasbio di desa Haurngombong, Kecamatan Pamulihan-Sumedang. Hasil penelitian menunjukkan jumlah bakteri total adalah 41,82 x 1012 cfu/ml lumpur, sedangkan jumlah 8,23 MPN/ml lumpur. Kata kunci : bakteri total, koliform, lumpur, gasbio, feses sapi perah.

Usaha perbibitan pada peternakan sapi perah memegang peranan penting dalam penyediaan stock bibit sapi perah. Dalam kerangka budidaya sapi perah, perbibitan atau breeding merupakan bagian yang tidak terpisahkan dari siklus feeding, breeding, dan management. Ke tiga faktor tersebut sangat penting dalam usahaternak sapi perah. Tujuan dari kajian ini adalah untuk mengetahui sejauhmana peran perbibitan dan program-program perbibitan dalam penyediaan ternak pengganti, dan untuk mengetahui berapa besar investasi yang diperlukan dalam usaha perbibitan sapi perah. Penelitian ini bertujuan untuk mengetahui pengaruh penggunaan berbagai tingkat asam sulfat (H2So4) dan asam formiat (HCOOH) pada proses pikel terhadap kualitas kulit jadi (leather) Domba Garut. Kualitas Kulit jadi didasarkan pada kadar keasaman (pH), kadar krom (Cr2O3), dan kadar air (H2O). Penelitian ini dilakukan secara eksperimen menggunakan pola faktorial dengan rancangan dasar rancangan acak lengkap, menggunakan 48 lembar kulit Domba Garut jantan ukuran 90. Kulit-kulit tersebut dibagi kedalam 16 kelompok. Tiap-tiap kelompok diberikan perlakuan penggunaan asam sulfat dan asam formiat. Masing-masing kelompok diulang sebanyak 3 kali ulangan. Penelitian ini bertujuan mempelajari pengaruh suplemen Zn-Proteinat, Cu-Proteinat dan Ca-Minyak dalam ransum berbasis pucuk tebu diamoniasi terhadap pertumbuhan dan efisiensi ransum pada domba jantan persilangan Priangan x Barbados. Percobaan dilakukan terhadap 5 ekor domba jantan yang sedang tumbuh dengan menggunakan rancangan Bujur Sangkar Latin (BSL) 5x5, lima macam ransum yaitu R1 = campuran 50% pucuk tebu amoniasi + 50% konsentrat, R2 = R1 + 2% Zn-proteinat, R3 = R1 + 2% Cu-proteinat, R4 = R2 + 2% Cu-proteinat, dan R5 = R4 + Ca-minyak ikan. Penelitian ini bertujuan untuk mempelajari potensi pakan asal limbah tanaman pangan dan daya dukungnya terhadap populasi ternak ruminansia di wilayah kabupaten Garut. Penelitian dilakukan dengan cara survey dan pengumpulan data sekunder. Hasil penelitian menunjukkan bahwa Potensi pakan asal rumput alam dan jerami asal limbah tanaman pangan di seluruh wilayah kabupaten Garut adalah 414.211,1 ton bahan kering (BK) yang terdiri atas 151.395,6 ton BK asal rumput dan 262.815,5 ton BK asal limbah tanaman pangan. Daya dukung pakan terhadap populasi ternak adalah 124.706 satuan ternak (ST), yang terdiri atas 45.580,5 ST ternak ruminansia kecil dan 79.125,5 ST ternak ruminansia besar.

Penelitian ini bertujuan untuk mempelajari potensi pakan asal limbah tanaman pangan dan daya dukungnya terhadap populasi ternak ruminansia di wilayah kabupaten Sumedang. Penelitian dilakukan dengan cara survey dan pengumpulan data sekunder. Hasil penelitian menunjukkan bahwa Potensi pakan asal rumput alam dan jerami asal limbah tanaman pangan di seluruh wilayah kabupaten Sumedang adalah 284.784,72 ton bahan kering (BK) yang terdiri atas 86.937,65 ton BK asal rumput dan 197.847,07 ton BK asal limbah tanaman pangan. Cangkang rajungan mengandung kitin yang persentasenya paling besar berupa polisakarida. Kitin dan derivat-derivatnya telah banyak digunakan dalam berbagai keperluan terutama untuk kesehatan. Penelitian ini dilakukan dengan tujuan untuk mengetahui pengaruh pemberian tepung rajungan sebagai sumber kitin terhadap efisiensi pakan dan kandungan lemak feces tikus putih Rattus norvegicus) strain Wistar. Penelitian menggunakan rancangan acak lengkap pola faktorial 2x5 dengan tiga kali ulangan. Faktor pertama adalah jenis kelamin dan kedua level tepung rajungan yaitu 0%, 5%, 10%, 15%, and 20%. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan 3 perlakuan dan setiap perlakuan diulang 6 kali. Listeria monocytogenes is a persistent foodborne pathogen capable of surviving in food processing environments, often in association with diverse environmental microflora. This study examines genomic determinants of persistence, specifically stress adaptation and biofilm-associated traits, in environmental Listeria species and other environmental microflora from a dairy processing facility by analyzing whole-genome sequences of 6 environmental Listeria isolates, 4 ATCC reference strains, and 22 air and floor swab cultures, annotated using the RAST platform. Subsystem analysis revealed that Listeria isolates carried a defined set of genes linked to biofilm formation, antimicrobial resistance, and stress response, though in lower abundance than environmental cultures. …

Forty-eight million consumers in the U.S. get a foodborne illness each year; 128,000 are hospitalized and 3,000 die. Approximately one-third of those illnesses are related to animal-based foods, including meat. With meat-like alternatives being more readily available, it is critical to ensure these foods are handled appropriately to reduce foodborne illnesses. This project evaluated the food safety knowledge of extension professionals related to plant-based products and meat alternatives. A survey was distributed via the North Central Region Extension Center to Extension professionals (N=52). Most respondents, 58%, neither agreed or disagreed that plant-based meats/meat alternatives are microbiologically riskier …

This study aimed to elucidate the mechanism by which colonic fecal microbiota transplantation (FMT) improves lipid metabolism in low-birth-weight neonatal calves via modulation of the gut microbial ecosystem. In a completely randomized design, seventy newborn Holstein calves (1 day old, 32.63 ± 3.13 kg BW) were assigned to two groups (35 calves/treatment; 30 females and 5 males per group). A healthy calf was used as a fecal donor. A 10% fecal bacterial suspension was prepared and administered colonically (50 mL, twice daily for 5 days). This study evaluated the impact of high-pressure processing (HPP) on color, oxidative stability, and tenderness of tenderloins (psoas major) from cull cows to determine if HPP could enhance their marketability. Forty cull cow tenderloins were treated at two different HPP pressures and two different holding times, then assessed for instrumental and visual color, lipid oxidation, and Warner-Bratzler shear force during a 7-day stimulated shelf period. HPP increased initial lightness, especially at the highest pressure and longest holding time and improved redness initially. Dark-cutting beef is a quality defect that negatively impacts consumer appeal and affects the carcass value for both producers and meat processors. These economic losses stem from poor visual appearance and reduced consumer appeal in the retail setting. Notably, different muscles within a carcass exhibit varying degrees of color stability which can influence how dark-cutting manifests across cuts. Therefore, this study aimed to examine the effect of high-pressure processing (HPP) on dark-cutting color-labile muscle. Dark-cutting beef is a result of preharvest stress and devalues the resulting carcass. High-pressure processing (HPP) has been recently identified as a potential strategy to improve the undesirable appearance of dark-cutting beef. Dark-cutting beef strip loins were collected from a local processing facility, sectioned, and assigned an HPP pressure (300 or 450 MPa) and holding time (0, 1, 30, 60, or 90 s). Overall, HPP increased the lightness and redness of dark-cutting beef, particularly the longer the pressure was held at both pressure levels. Ergot alkaloids can bind serotonin (5-HT) receptors interfering with many physiological functions. However, the mechanism has not been completely established. The objective was to evaluate whether the association of 5-HT and the ergot alkaloid, ergovaline, in a 24-h pre-incubation can affect vascular tissue partitioning and contractile responses. Cross-sections of saphenous veins from five steers were used. Our objective was to evaluate the influence of substrate dispersion method and particle size on in vitro digestibility, gas production kinetics and composition, and fermentation characteristics of different feed types. Alfalfa hay, tall fescue hay, ground corn, soybean meal, and a total mixed ration (TMR) were used as substrates. Treatments were designed according to a 2 × 2 × 5 factorial arrangement: two substrate dispersion methods (loose substrate and in filter bags), two particle sizes (1 mm and 2 mm), and five feeds. Consumer uptake of a sustainable diet is critical for addressing environmental challenges and promoting public health. Understanding why consumers resist adopting sustainable eating habits can inform targeted interventions and policies. This pilot study examines whether a newly developed scale can effectively detect consumer resistance to a sustainable diet. Often, animals destined for consumption are fed supplements to help speed up or slow down their growth rate, enhance aesthetics, or standardize the product. Herein, we examined the supplement Depth Charge and its effects on the fat and protein content in lambs of the same age and lineage. Depth Charge increases fiber consumption to add spring of rib or an outward rib cage curvature to an animal's appearance while restricting feed consumption. Accurate fish species identification is critical to prevent mislabeling and fraud in the seafood industry. We present a handheld multi-mode point spectroscopy system that combines fluorescence (365 and 395 nm excitation) and reflectance measurements in the visible to near-infrared (∼350–900 nm) and short-wave infrared (∼900–1700 nm) regions for rapid, non-destructive classification of fish fillets. Tissue spectra were acquired at 25 positions on 68 fillets from 11 species, in both frozen and thawed states. Feature-level fusion across all four modes enabled higher classification accuracy than any single mode alone. A global machine-learning model classified all species with 85 ± 2.8 %, …
