The poultry industry relies heavily on the efficient growth performance of broilers to provide quality breast meat at a low cost to meet consumer demand. However, high efficiency of broilers is also related to the occurrence and severity of skeletal muscle abnormalities like wooden breast. This study investigated the efficacy of incorporating long-chain omega-3 polyunsaturated fatty acids, eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), into the diets of hens and their offspring on altering the causative features of wooden breast. Indirect calorimetry to study heat production (HP) and dual energy X-ray absorptiometry (DEXA) for body composition (BC) are powerful techniques to study the dynamics of energy and protein utilization in poultry. The first two chapters present the BC (dry matter, lean, protein, and fat, bone mineral, calcium and phosphorus) of modern broilers from 1 – 60 d of age analyzed by chemical analysis and DEXA. DEXA has been validated for precision, standardized for position, and equations and validations developed for chickens under two different feeding levels. Conjugated linoleic acids (CLA) have been shown to have remarkable yet inconsistent metabolic effects in mice, rats, hamsters, chickens, cattle, and humans. In particular, effects on lipogenesis vary with tissue, physiological state and specie. In this study we tested the hypothesis that CLA would differentially affect ducks of the same genetic background but of differing age. Growing (7 wk) and maintenance (11 wk) Moulard ducks were grouped by age and fed a standard diet supplemented with either 5% soybean oil (control) or 5% CLA isomer mixture. Although fat deposition during stopover in migrating passerine birds has been extensively studied, changes in lean mass during refuelling are not well understood. I used quantitative magnetic resonance (QMR) analysis to measure the deposition of fat and lean mass for both recaptured and single capture migrant passerines in spring and fall at Long Point, Ontario. Both the recapture analysis and single capture regression analysis indicated a substantial contribution of lean mass to overall increases in total body mass. Some of the variation in the relative deposition of fat and lean mass was explained by sex, age and season. I then …
