The purpose of this experiment is to determine the thermal kinetic parameters of Salmonella in moisture-enhanced, reconstructed ground chicken patties as affected by temperatures and salt concentrations. Salmonella is responsible for 35% of the foodborne illnesses associated with poultry products (Batz et al., 2011). Nonintact reconstructed chicken meat is mixed with brine solutions containing various salt and polyphosphate concentrations to increase water-holding capacity, decrease cooking losses, improve sensory tasting scores, and maintain the good quality of completed chicken products (Gill et al., 2004). This dissertation explores the identity and role of immunoglobulin-like (Ig-like) receptors in chickens, with focus on their implications in disease and disease progression. These receptors, wisely expressed across immune cells, interact with the major histocompatibility complex (MHC) class I molecules to modulate immune responses in mammals. Due to the insufficient representation of chicken Ig-like receptors in online databases, this study systematically annotates the chicken Cluster Homolog of Immunoglobulin-like Receptors (CHIR) genes using advanced bioinformatic techniques, aligning with the release of the 7th edition of the chicken genome assembly that comprises builds for a broiler and layer chicken. In Chapter 2, an experiment was conducted to evaluate the effect of different mixer types (MTY) and mix times (MTI) on mix uniformity (MU). A 2 (mix time) x 3 (mixer type) factorial was utilized in this experiment to create six treatments, each mixed in three randomized complete blocks. Mix times were designated adequate or inadequate, were based on the manufacturers’ recommendation, and varied based on the mixer utilized. Two experiments were conducted to evaluate a novel throughput agent and its mechanisms on production rate and pellet quality. An additional experiment using lab-based methods and models was conducted to predict Salmonella reduction in mash broiler feed. Feed mill pellet production rate is of great importance to integrated meat bird production. Feed hygienics are also of increasing concern for poultry producers.

There are many things that can be done to improve broiler performance including, but not limited to, pelleting, proper Lys inclusion, and exogenous enzyme supplementation. Pelleting has the ability to improve feed form, reduce wastage, improve bird performance metrics, and decrease pathogens within the feed. Pathogen reduction can be further reduced by hygienic pelleting practices which include an increase in temperature or retention time within a conditioner or hygieniser. However, hygienic pelleting can degrade valuable AA and enzymes (more specifically for the current thesis research Lys and phytase) and make them unavailable to the animal. Experiments were conducted to investigate the effects of varying feed ingredients and heating systems on boiler performance metrics. Chapter Two investigated the effects of two corn-expressed phytases, differing in enzyme concentration within the grain (3,000 or 9,677 FTU/g), on broiler performance and tibia mineralization, when used as a component in pelleted feed. Dietary treatments included a positive control (PC), with industry-recommended levels of calcium and phosphorous, and a negative control (NC), lower in calcium and non-phytate phosphorous. Optimizing feed formulation of poultry diets may be achieved by proper utilization of nutrients and feed additives. This will provide a less expensive and nutrient efficient diet to the bird. An experiment was conducted to evaluate early broiler performance, tibia mineralization, and mineral digestibility of broilers fed diets that differed in inorganic feed phosphates (IFP) but that were formulated to be either similar in dietary non-phytate phosphorus (nPP) and calcium to phosphorus ratio (Ca:P), total mineral content, or calculated prececal digestible phosphorus (CPDP). Diminished levels of urate have been linked to oxidative stress in birds and mammals. Urate, a major antioxidant that lowers reactive oxygen/nitrogen species (ROS/RNS), is thought to ameliorate the effects. The relationship between reduced urate, the immune system and the pathogenesis of the intestine, the liver or the brain has not been well characterized in avians. Moreover, recent studies have proposed that an increased permeability in the intestine due to some insult can induce inflammation in peripheral organs such as the brain. Experiments were conducted to investigate the effects of exogenous enzymes in poultry diets. In Chapter 4, a study was conducted to determine the effects of a corn-expressed recombinant carbohydrase (AC1) on broiler performance and digesta viscosity in high non-starch polysaccharide (NSP) diets through 21 days of age. One day-old Hubbard × Cobb 500 chicks were assigned to 6 dietary treatments. Each treatment consisted of 12 replicate pens of 10 birds.
