Variation in internal cooked color of ground beef is an economic concern for the ground beef market. Persistent pink color in hamburger patties can lead consumers to the perception of an undercooked product. Therefore, the objective of this study was to characterize the effects of bull:cow blend proportions, with or without finely textured beef (FTB), and cookery method on internal color of precooked ground beef patties. Nutrient inputs from cattle dung are crucial drivers of nutrient cycling processes in grazed ecosystems. These inputs are important both spatially and temporally and are affected by variables such as grazing strategy, water location, and the nutritional profile of forage being grazed. In experiment 1, 80 steers (197.0 kg initial body weight; BW for fall, 116.9 kg for spring), were stocked at 2.45 and 4.1 calves/ha in fall and spring, respectively in 16 tall fescue pastures [fall ergovaline (EV) = 1,475 ppb and spring EV = 1,173 ppb] under 2 treatments, mineral (MIN) (n = 8) and cumulative management (CM) (n = 8). Forage allowance did not differ (P = 0.76) between CM and MIN during fall but differed during spring (P ≤ 0.05, 2.55 vs. 3.22 kg DM/kg BW, for MIN and CM, respectively). In June 2010 the Cattle Industry Funding Scheme (IFS) was introduced to address biosecurity threats relevant to the Western Australian (WA) cattle industry. The Scheme was established under the Biosecurity and Agriculture Management Act 2007 to enable cattle producers to identify the pest and disease priorities at a whole-of-industry level and to raise funds for activities to address these priorities.
There are currently three Industry Funding Schemes in operation. In addition to the Cattle IFS, there is a Sheep and Goat IFS and a Grains, Seeds and Hay IFS. The three IFSs operate in a similar manner.

Foot soundness and udder conformation are essential for longevity in beef cattle. The objective of this study was to investigate the effects of foot angle (FA), claw set (CS), teat size (TS) and udder suspension (US) scores on cowherd performance. Data were analyzed for 1,685 observations on Angus-based cows over a four-year period. At weaning FA, CS, TS, and US were evaluated. Scores are based on nine-point scales. A score of one indicates straight pasterns, divergent toes, enlarged bottle shaped teats, and absence of a median suspensory ligament; nine indicates weak pasterns, curled toes, small symmetrical teats, and a tight …

The economic impact of infectious bovine keratoconjunctivitis (IBK) has been documented in many parts of the world. Many researchers have observed that prevention of this disease is very difficult given current methodologies. This is primarily due to the multifactorial nature of this disease. The objective of this dissertation was to determine the impact of IBK on calf performance and estimate genetic parameters, heritability and estimated breeding values for IBK susceptibility. Some definitions of feed efficiency such as residual energy intake (REI) and residual gain (RG) may not truly reflect production efficiency. The energy sinks used in the derivation of the traits include metabolic live-weight; producers finishing cattle for slaughter are, however, paid on the basis of carcass weight, as opposed to live-weight. The objective of the present study was to explore alternative definitions of REI and RG which are more reflective of production efficiency, and quantify their relationship with performance, ultrasound, and carcass traits across multiple breeds and sexes of cattle. The presence of <1% of an undeclared species in ground meat is generally thought to be indicative of cross-contamination as opposed to intentional mislabeling; however, this has not been experimentally tested. The objective of this study was to quantify the effects of poor sanitation on the cross-contamination of animal species in ground meat products, with the example of undeclared pork in ground beef. Cross-contamination was quantified using real-time polymerase chain reaction (PCR). Three different sanitation treatments were tested with a commercial grinder (“no cleaning”, “partial cleaning”, or “complete cleaning”) in between grinding of pork and beef samples (13.6 kg each). A 100-g sample was collected for each 0.91 kg (2 lb) of beef processed with the grinder and each sanitation treatment was tested twice. For the “no cleaning” treatment, the first 100-g sample of ground beef run through the grinder contained 24.42 ± 10.41% pork, while subsequent samples (n = 14) contained <0.2% pork. With “partial cleaning,” the first sample of ground beef contained 4.60 ± 0.3% pork and subsequent samples contained <0.2% pork. Pork was not detected in ground beef following “complete cleaning.” These results indicate that incomplete cleaning of grinding equipment leads to species cross-contamination at levels of <1% in most cases. Proper sanitation procedures must be followed when grinding multiple species in order to prevent cross-contamination and product mislabeling.

Bos indicus females have more surface antral follicles than Bos taurus females; however, histological studies demonstrated no difference in total number of primordial follicles between these two biological types of cattle. Primordial follicle density in the ovary was less in Nelore ovaries compared to Angus ovaries, but no studies have examined the primordial follicle density in Bos indicus cross-bred females. It, therefore, was hypothesized that primordial follicle density in the ovary would decrease as percentage Bos indicus increased. The beef industry is harmful to the environment and human health and alternative solutions must be implemented in order to mitigate the effects of climate change. Water and grain are used in agriculture in abundance despite the negative environmental effects it causes. Control of Bovine Viral Diarrhea Virus (BVDV) relies on resource-intensive individual animal sampling to detect and remove persistently infected (PI) cattle. Herd-level surveillance tools would be useful for herds with unknown BVDV status and for monitoring herds with BVDV-free status. The overall objective of this thesis is to explore the viability of BVDV surveillance at a herd-level using samples collected without handling individual animals. The objectives of this research were to 1) evaluate the effects of late gestation supplementation, synchronization and creep feeding on cow and calf production traits 2) evaluate the pooled effects of 5 studies involving late gestation supplementation on cow and calf traits. Experiment 1 was a three year study conducted on 8 pastures at the Gudmundsen Sandhills Laboratory. Cows were assigned to 1 of 4 late-gestation supplementation treatments, postpartum progestin or control, and 1 of 2 creep feed treatments to make up a 4 x 2 x 2 factorial arrangement. Three monensin levels during a stocker phase (0, 800, 1600 g/ton in a free choice mineral) and two levels during finishing (0 [U] or 37.5 mg/kg diet DM [M]) were used to determine the effects of monensin supplementation during a stocker and subsequent finishing phase on beef calves. However, scarce data and inadequate sustainability assessment frameworks for the U.S. beef processing industry limit the ability to develop new technologies and policies comprehensively without shifting sustainability burdens. A form of congestive heart failure is increasingly reported as a cause of death in feedlot cattle located at moderate altitude (≤ 1,524 m.). Significant knowledge gaps exist in the epidemiology and management of this form of bovine congestive heart failure (BCHF) regarding frequency and timing of BCHF cases and ways in which beef cattle producers and veterinarians can mitigate this condition. Four studies were conducted to determine the effectiveness of improving production systems of beef cattle in the Sandhills region of Nebraska. These studies were to determine impacts of modified estrus synchronization protocols, genomic testing heifer calves for longevity, and evaluation of 2 differing calving systems (March or May) for improving biological outcome and improved production. Experiment 1 utilized 180 yearling heifers to determine the effectiveness of a second dose of prostaglandin F2α(PGF) with those females not expressing estrus after an initial 14 d MGA-PG estrus synchronization protocol. Three studies were conducted to evaluate baled corn residue using selective harvest method and anhydrous ammonia treatments to assess utility in growing calf and dry cow diets. Baled corn residue was harvested using conventional rake-and-bale (CONV) method, or harvested using the New Holland Cornrower in which either eight rows (8ROW), or two rows (2ROW) of corn stalks were chopped into the windrow with tailings. Bales were either not treated or ammoniated at 5.5% DM. This thesis has two chapters focusing on the grazing capacity of Nebraska rangelands, and drought management strategies. The first chapter conducts a gap analysis comparing forage supplied by perennial grasslands to the animal unit months (AUMs) required by the cattle. The purpose of this research was to quantify potential AUM supply (i.e., carrying capacity) of grazing lands dominated by perennial grasses on a regional basis in Nebraska to the AUM demand based on cattle inventories and standard production practices in each region of Nebraska. Preovulatory estradiol has been reported to play a crucial role in pregnancy establishment and maintenance, but the mechanism by which estradiol exerts its effects has not been well characterized. Consumption of endophyte-infected tall fescue results in a syndrome of negatively altered physiological systems, collectively known as fescue toxicosis. Another challenge to endophyte-infected tall fescue -based beef cattle operations is that the soils often are selenium (Se) poor, necessitating the need to provide supplemental Se. To test the general hypothesis that different forms of supplemental Se would ameliorate the negative effects of fescue toxicosis, predominately-Angus steers (BW = 183 ± 34 kg) were randomly selected from herds of fall-calving cows grazing an endophyte-infected tall fescue pasture and consuming vitamin-mineral mixes that contained 35 ppm Se as sodium selenite (ISe), SELPLEX …

Measures of temperament have been shown to influence physiological responses. Exit velocity (EV) has been identified as an objective, robust measure of temperament that can be used to predict subsequent performance of cattle. Additionally, previous studies from our lab indicate this measure of temperament may be related to production of interferon-γ (IFN-γ), a cytokine associated with cell-mediated immunity (CMI). The growth promoting activity of implants have been documented. However, stage of growth in which the implant is administered may alter growth performance and carcass traits. An experiment was conducted to examine the effects of administering a conventional implant (Synovex C; SYN-C), or an extended-release combination implant (Synovex One Grass; ONE-G) to suckling steer calves on weaning weight, post-weaning growth performance, and carcass characteristics. Suckling steer calves were either not implanted (NONE) or were implanted with SYN-C or ONE-G. Steer calves were predominantly 30 to 60 d of age when implants were administered. The objective of this study was to quantify the differences in activity of jejunal maltase and isomaltase between 2 groups of steers with average dry matter intake (DMI) and differing average daily gain (ADG). Dry matter intake and ADG were measured in crossbred steers (n = 69). Jejunal mucosal samples were collected from 8 steers with the greatest (high) or least (low) ADG and average DMI (± 0.55 standard deviation). Management of cattle during the receiving and backgrounding phases can influence the performance of feedlot cattle. The receiving phase is a stressful time for cattle entering the feedlot and quickly adapting cattle to milled feed can impact their productivity. Silages are often viewed as less desirable feedstuffs in receiving diets for newly-weaned calves.
