In two experiments, dark-cutting (DC) beef strip loins were used to test the effects of citric acid-enhancement pH on visual and instrumental color of fresh and cooked steaks. Dark cutting and normal pH strip loin were injected to 111% of raw product weight with pH 3.5, 4.0, 4.5, or 5.0 solutions by mixing citric acid in either 0.05% phosphate solution or tap water (Exp 1), or with pH 2.0, 2.5, 3.0, and 3.5 solutions made by mixing citric acid in either a 0.5% orthophosphate solution (PO4) or a 0.5% tripolyphosphate solution (STP) (Exp2). The objective of this study was to evaluate relationships among genetic and physiological biomarkers and phenotypic characteristics in horses. Three breeds (Quarter Horse, Thoroughbreds, Miniatures), and five genes of interest (leptin, ghrelin, cytochrome P450, glucocorticoid receptor, and lactate dehydrogenase) were the basis of the investigation. Genomic DNA was extracted from buffy coat samples of Quarter Horses (n = 21), Thoroughbreds (n = 26), and Miniatures (n = 34). Data were analyzed using MIXED MODEL procedures of SAS, with the main effects of breed and SNP genotype. Oxidative stress may play a role in the phenotypic expression of feed efficiency (FE). The transcription factor NFE2L2 (nuclear factor erythroid-derived 2-like 2) coordinates antioxidant response to oxidative stress and its activity is tightly regulated in part by KEAP1 (Kelch like-ECH protein 1) and the E3 ligase CUL3 (Cullin3). This study was conducted to investigate the effects of two different wrapping sources and time intervals between baling and wrapping on intake and digestibility of alfalfa silage. Phytohemagglutinin (PHA) is commonly used to gain insight into an individual’s cellular immuno-competence. PHA is typically injected intradermally (i.d.) into the skin (e.g. wing web) and the tissue swelling response is then monitored, whereby the extent of the swelling positively relates to the individual’s cellular immune system capabilities. However, prolonged postmortem aging may adversely impact color and/or lipid oxidation stabilities of meat, leading to decreased display shelf-life and increased rancid off-flavor. The objective of this study was to determine if using an intranasal zinc (Zn) solution would impact health and growth performance of high-risk stocker cattle. Male beef calves (n = 239; 3 arrival dates [block]; initial BW = 276 ± 2.4 kg) were stratified by arrival gender and BW and assigned to 1 of 2 treatments: 1) treated with 3 ml of a Zn solution containing 36.24 mg of Zn administered intranasally, or 2) control, in which calves were not treated. Experiment 1, 83, newly weaned, fall-born crossbred heifer calves were allocated randomly to 1 of 3 anthelmintic treatments: 1) control (CON); 2) combination pour-on moxidectin and oxfendazole (MO); and 3) long-acting eprinomectin (LAE). Two preplanned orthogonal contrast statements were used: 1) to compare CON to treated cattle; and 2) to compare OXF to LAE. Heifer BW and BCS were greater (P≤0.02) from MO and LAE on d 112, 140, 154, 168, 182 compared to CON. Pattern recognition receptors (PRRs) on host cells recognize motifs known as pathogen associated molecular patterns (PAMPs) that are common to groups of microbes. Examples include LPS on Gram-negative bacteria, the structural motif PGN common to all bacteria, MDP the smallest immunostimulatory unit of PGN, and poly I:C the dsRNA analog. Calving rate is a qualitative trait regulated by several genes and is strongly affected by the environment. With the development of biotechnology and gene identification, scientists are able to determine which genes affect these productivity traits to improve accurate selection decisions. Prolactin (PRL) has been associated with reproductive traits, melatonin receptor 1a (MTNR1A) has been associated with meat quality traits, and the dopamine receptor D2 (DRD2) gene has been associated with hair coat score (HCS) in cattle. Invasive grasses in south Texas have the potential to negatively impact the threatened Texas tortoise (Gopherus berlandieri) by reducing the availability of preferred foods (forbs) and may cause tortoises to travel farther, lead to reduced carapace length, and reduce the availability of refugia from heat stress. Two experiments were performed to assess sensory characteristics and acceptability of WB meat and to determine the effect of broiler age on meat quality factors in varying severities of WB. A series of in vitro tests were conducted to evaluate biofilm growth on polyvinylchloride (PVC) surfaces when exposed to treated/untreated water sources (test water) that are typically supplied in commercial barns. Most cows experience a state of negative energy and mineral balance during the periparturient period. This imbalance is a major problem in the dairy industry and it is more frequently seen in multiparous cattle due to their high milk production. A large amount of fat and protein is mobilized in order to address the energy deficit during the periparturient period. The ability to accurately monitor energetics and electrolytes status using accurate, rapid, and low cost point-of-care instruments will assist in optimizing animal health and productivity.

The responses of two different commercial strains of broilers to diets varying in overall amino acid levels and metabolizable energy levels were observed. Amino acid levels used were 80%, 90%, 100%, 110%, 120%, and 130% of Ross recommended minimum digestable levels of essential amino acids. Energy levels used were either below or above Ross recommended metabolizable energy levels. Diets were fed for 56 days. The two strains were a fast growing broiler strain and a slower growing broiler strain. A selection of birds from each pen was processed at 35, 43, and 56 days of age. Comparing Reproductive Capacity Of Nearshore And Offshore Red Snapper, Lutjanus Campechanus, On Artificial Reefs In The Western Gulf Of Mexico, Ricky J. Alexander

Red snapper collected quarterly from four artificial reefs in south Texas were examined to compare total length, total weight, age, and the proportion of male to female red snapper, calculate gonadosomatic index values, batch fecundity, annual spawning frequency, and annual fecundity, and estimate size and age at maturity. Spawning occurred from April to September, with most active spawning observed in June (58%). Despite larger red snapper producing more eggs, and fish being larger offshore, most active spawning (68%) and egg production (74%) was observed nearshore. Female red snapper reached 50% maturity (L50) between 350-550 mm, and L75 by 600 mm. …
