The overall objective of this dissertation was to determine the impact of selected post weaning management strategies on beef carcass characteristics and meat quality. The specific objectives were 1) determine the effect of a rumen-protected long chain fatty acids fed during finishing on live performance, serum fatty acid profile, carcass traits, and predicted carcass composition, and 2) determine effects of feeding brassica-based cover crops to cattle during backgrounding on live animal performance, carcass characteristics, tenderness, juiciness, and flavor of strip steaks, and case life of ground beef and strip steaks. The inclusion of PepSoyGen (PSG), a commercially-available fermented soybean meal product, was evaluated with juvenile rainbow trout, Oncorhynchus mykiss in an initial 70-day feeding trial, with a supplemental trial involving a subset of the experimental diets continuing for an additional 40 d. Six diets containing 0%, 10%, 20%, 30%, 40%, or 50% PSG, with the PSG directly replacing fish meal, were used in the first trial. There were no significant differences in weight gain or feed conversion ratio between the fish meal-based control diet and diets containing up to 30% PSG. Distillers dried grain with solubles (DDGS) was evaluated in juvenile Shasta-strain rainbow trout Oncorhynchus mykiss diets during a 36-day feeding trial. Two experimental diets containing either 10% or 20% DDGS with supplemented amino acids (lysine, methionine, isoleucine, and histidine) and phytase were compared to a fish meal-only control diet. Tanks of trout receiving diets containing either concentration of DDGS weighed significantly less at the end of the trial and had significantly poorer feed conversion ratios than tanks of fish being fed the fish mealonly control. A semi-purified diet (SPD) was fed to 12 wether lambs and one fistulated wether and evaluated for acceptability and ability to support growth. Ruminal pH and NH3 were monitored throughout the diet adaptation period. Treatments included three levels of dry matter intake; low intake (LI) 750 g-hd-l. d-l, medium intake (MI) 1125 g-hd-l..d-l and high intake (HI) 1500 g-hd-l.d-l. Digestibility of dry matter (DM, 70.6%), acid detergent fiber (ADF, 62.8%), nitrogen (N, 72.8%) and percentage digestible nitrogen retained (33.2%) were not different across intake levels. Indigestible ADF of the semi-purified diet appears to be a suitable solid phase marker for …
