European and Canadian regulators enforce strict limits on the ethyl carbamate content of alcoholic beverages. North American distillers’ malt have high glycosidic nitrile levels which amplify the ethyl carbamate level of whiskey. Guidelines are required to produce low ethyl carbamate whiskey from North American distillers’ malts. This work challenges several strategies for reducing ethyl carbamate levels in bourbon and American whiskey products. New make spirit was produced using a bourbon mash bill on a continuous beer still with doubler. Grapevine (Vitis vinifera) faces unprecedented challenges from climate change, with up to 90% of current growing regions potentially becoming unsuitable for production within decades. Traditional breeding approaches require 25-30 years for variety development, creating a time constraint incompatible with the pace of environmental change. This research establishes the approach for a novel mobile RNA-based gene editing platform that addresses longstanding bottlenecks in grapevine improvement while preserving cultivar identity and reducing breeding timelines.

Oak barrels serve two purposes in the production of distilled spirits: storage containers and reaction vessels. It is the latter function which bestows barrel aged spirits with their unique and highly sought after flavour profiles. However, achieving consistent flavour profiles between barrels is notoriously difficult as no two barrels are comprised of the same source of oak. Bourbon whiskey is a distilled spirit which is a uniquely American with several legal requirements including 1) the major grain in the mash is corn, 2) must be aged in a new charred white oak barrel, and 3) made in the United States of America. Kentucky is the whiskey historical home, producing most of the bourbon in the United States. Interest in whiskey has developed a need to understand more about the underlying chemistry of bourbon.
