In this lesson, students will build on the previous lesson (reading and analyzing the Three Sisters chapter from Braiding Sweetgrass) by experimenting on soil in their schoolyard. Students will collect soil samples from multiple locations around their school grounds and evaluate soil texture, structure, infiltration, color, organic matter, and pH. Students Through field observations and laboratory analysis, students examine how soil characteristics influence plant growth and ecosystem health. The global human population is rapidly increasing, escalating interactions of people, animals and the environment. This has led to more convoluted health challenges, for which African smallholder farmers bear the brunt. The One Health (OH) approach recognises the interconnectedness of these health challenges and thus follows a transdisciplinary approach involving diverse stakeholders to address them. Although there have recently been global concerted efforts and studies on OH, an information gap exists in Africa, particularly regarding smallholder farmers and their needs. Since the early 2010s, the seaweed aquaculture industry has steadily expanded in the United States, with states like Alaska, Maine, Hawaii, and Connecticut leading the way in the development of this emerging sector. However, information gaps remain concerning certain aspects of the domestic seaweed aquaculture industry. The purpose of this study was to examine the status of the seaweed aquaculture industry along the West Coast of the United States; specifically in the states of California, Oregon, and Washington. We interviewed 22 organizations in the Chicago Regional Food System to gain insights on their current initiatives, assets, challenges, future visions, and perceived roles of universities in advancing their work. We analyzed themes to report on strong consensus or varied perspectives related to this work. This report aims to advise Loyola’s School of Environmental Sustainability's future work and collaboration activities with Chicago Food System organizations.

In Kenya, aflatoxin contamination in maize remains a persistent issue, with potential negative impacts on both public health and economic growth. Aflatoxins are toxic secondary metabolites produced by certain mold species, primarily Aspergillus flavus. The extent of Aspergillus fungal invasion in maize grains and the resulting increase in aflatoxin levels is heavily influenced by pre-and post-harvest practices. Before harvest, factors such as insect damage and exposure to warm, humid conditions increase the crop's susceptibility to Aspergillus infection and subsequent aflatoxin formation. This essay explores the potential impact of urban agriculture and community gardens as sources of education and sustainable and environmentally-sound food production. Using an analysis of case studies and academic research, I argue for the viability of community gardens and urban agriculture as educational hubs and future food production sources. I examine previous research which shows that small scale effort can make lasting impacts in communities. I argue that the research is promising as it highlights that the efforts of people in their everyday lives, can and do contribute to positive change. On-Farm Hog Processing Demonstration For Teenage Exhibitors: Blending Academic, Laboratory, And Farm-Based Learning, Katherine A. Wells, Chris L. Bruynis, Lyda G. Garcia

COVID-19 challenges induced a U.S. meatpacking industry bottleneck. [University] Extension identified the need and responded by creating a three-step hands-on training for teenage junior fair exhibitors. [University] Extension Meat Scientist and graduate students assisted in demonstrating an on-farm hog harvest and processing event in collaboration with a local Extension office for 4-H and FFA teenagers. To add a practical perspective, a local hog-producing and harvesting family was asked to assist with the event. An online post-survey reflected 90-100% gains in five educational areas and 100% said they would a similar event in the future and recommend it to a friend.

Nebraska Cooperative Extension: Faculty and Staff Publications

On-farm research has emerged in recent years as a unique approach to involve farmers and other agricultural stakeholders as active participants in knowledge development and as an effective method of technology and innovation transfer across farms. This study assessed the perspective and knowledge of US farmers regarding on-farm research via the implementation of a 24-question survey distributed across most of the US Midwest and South-Central regions.We found that farmers generally are willing to engage with universities to conduct on-farm research and were 40% more likely to adopt practices supported by on-farm research findings than research not conducted on-farm. Lotic waterways are vital for habitat, food, water, and flood protection, but urbanization poses a major threat to their integrity. Runoff from urban surfaces leads to pollution, flashiness, loss of biodiversity, and other symptoms, also known as Urban Stream Syndrome (USS). Streams can be restored in order to combat USS, but most restorations are not monitored, so their long-term effectiveness is unknown. This study quantitatively evaluated a decade-old stream restoration in Fayetteville, Arkansas, to assess its effectiveness in combating USS and achieving set restoration goals, and to gain insights for future restoration projects. A major objective of the University of Arkansas System Division of Agriculture (UADA) Fruit Breeding program is to improve the texture of blackberry (Rubus subgenus Rubus Watson). Blackberry varieties with improved fruit firmness transport and store well and may maintain superior quality under challenging postharvest conditions than softer varieties. Increased firmness may also make cultivars less susceptible to red drupelet reversion (RDR), a postharvest disorder of blackberries in which fully black drupelets revert to red after harvest. Urban farming can enhance the lives of communities and help reduce food scarcity. This paper presents a conceptual prototype of an efficient urban farming community that can be scaled for a single apartment building or an entire community across all global geoeconomics regions, including densely populated cities and rural, developing towns and communities. When deployed in coordination with smart crop choices, local farm support, and efficient transportation then the result isn’t just sustainability, but also increasing fresh produce accessibility, optimizing nutritional value, eliminating the use of ‘forever chemicals’, reducing transportation costs, and fostering global environmental benefits.

The potential of cereal commodities, specifically rice and corn, was identified based on the production level and competitiveness by district in Buleleng Regency, Indonesia. The Philippine Agricultural Scientist

Pangi (Pangium edule Reinw) seed is known to be a poisonous material. However, it becomes safe for consumption after processing. This study determined the effect of village-level processing by the Obu Manuvu community of Marilog District, Davao City, Philippines on the antinutrient and nutritional composition of Pangi seeds. Processing methods involved washing with running water for about 15 s, boiling in water for 30 min, and soaking in flowing water in a nearby river overnight. Results showed that after processing, the levels of antinutrients such as cyanogenic glycosides and oxalates were reduced significantly (p < 0.05) by 99.15% and 78.23%, respectively. Further, the tannin content was also significantly reduced by 96.15%. The crude fat content significantly increased (p < 0.05) by about 54%. Crude ash and fiber decreased, while protein did not change significantly (p < 0.05). Minerals such as calcium and zinc increased (p < 0.05) by 221.43% and 64.39%, respectively while the iron and manganese levels remained unaffected. Findings of the study suggested that the processing method by the Obu Manuvu effectively reduces the level of antinutrients, thereby improving the edibility and safety of Pangi seeds. Further, the processing method improves the level of some nutrients, specifically crude fat, calcium, and zinc.

This study focuses on enhancing the efficiency of solar cooking through the use of solar cookers and heat retention boxes. The research involved testing various cooking vessels and lids in a solar cooking experiment, with a specific focus on the performance of different materials and their heat retention capabilities. The experiment aimed to increase the efficiency of solar cookers, which are popular in developing nations due to their relatively low cost. Wheat variety performance tests are conducted each year in Arkansas by the University of Arkansas System Division of Agriculture’s Arkansas Crop Variety Improvement Program.

The tests provide information to companies developing cultivars and marketing seed within the state and aid the Arkansas Cooperative Extension Service in formulating variety recommendations for small-grain producers. The in silico enzyme digestion and peptide function annotation of pili nut (Canarium ovatum Engl.) 11S globulin protein sequence revealed the presence of bioactive peptides with antihypertensive and antioxidative activities. Molecular docking simulations showed that the proline-histidine (PH) ligand can better inhibit angiotensin I-converting enzyme (ACE) activity than captopril. This result was verified through biochemical assays. Pili kernel protein was extracted with 0.5 M NaCl buffer using the modified Osborne fractionation method, which yielded 100 mg of protein per gram of defatted pili kernel determined via Bradford assay.
