This dissertation contains three essays on select economic components of the U.S. beef industry. The first and second essays concentrate on the different economic problems in beef cattle production. The third essay evaluates the price dynamics and the impact of COVID-19 along the beef supply chain.
The first essay explores the economics of culling decisions in cow-calf operations in the U.S. with a novel application of a dynamic mathematical programming model. Community Supported Agriculture (CSA) programs offer consumers the chance to share the risk with farming operations while gaining access to fresh, local foods. While research on CSA shareholder values such as share affordability or the local impact of participation has been conducted in the past decade and beyond, less attention has been paid to direct value-mapping of the shareholders themselves. This paper attempts to estimate productivity and efficiency for Kentucky grain farms by applying a two-stage Date Envelopment Analysis (DEA) and DEA-based Malmquist method. The study covers the years 1999-2015. Also, productivity and efficiency testing hypotheses among different farm sizes and years are estimated. In the first step, productivity and efficiency indices are estimated through deterministic DEA. In the second stage, a panel regression is run with exogenous variables to explain the productivity and efficiency variation. In general small farms were found to be the least scale efficient compared to mid-sized and large farms, even though the results show overall …

This thesis is comprised of two essays regarding the costs and impact of land values due to cover crops. This first essay uses a linear-programming resource allocation model combined with sequencing and machinery selection to optimize the practices and machinery utilization of a hypothetical western Kentucky grain farm. This was accomplished through maximizing returns over selected costs at various acreage adoption levels. Additionally, a decision tool was developed to assess the costs related to cover crop adoption. The results show a $30 per acre cost to adopt 1000 acres of cover crops when no benefits were considered. The second essay …

This dissertation combines large scale datasets to evaluate crop prediction, land values, and consumption of a crop being considered to advance a sustainable bioeconomy. In chapter 2, we propose a novel application of the multinomial logit (MNL) model to estimate the conditional transition probabilities of crop choice for the state of Kentucky. Utilizing the recovered transition probabilities the forecast distributions of total acreages for alfalfa, corn, soybeans, tobacco, and wheat produced in the state from 2010 to 2015 can be recovered. The thesis presented consists of two essays that analyze input substitution and decision making in crop and livestock production systems. The first essay consists of a whole-farm analysis that sought to optimize feed mixes and enterprise combinations for an organic dairy operation in the Southeastern United States. This was accomplished through mathematical programming where whole-farm net returns were maximized, and total feed costs were minimized simultaneously for four milk production level cases. Additionally, the sensitivity of the system and break-even milk price were explored. Farmers need liquidity to face agricultural expenses throughout the production cycle but mainly at the beginning. The first essay compares six common models, linear, quadratic, Cobb-Douglas, translog, logarithmic, and transcendental, to estimate wheat yield and area functions for Saudi Arabia. Data cover 1990-2016 for all the variables that affect wheat supply. After testing the models using Box-Cox, multicollinearity, and autocorrelation tests, we decide that the Cobb-Douglas models provide the best fit for both yield and area. We find the price elasticity of wheat is inelastic. Yield price elasticities are more inelastic than area elasticities. The impact of government policy number 335 has a larger effect on area than yield. The cultivated area of wheat, the one-year …

This thesis is composed of two essays that investigate whole farm planning and crop marketing in western Kentucky. In the first essay, contracting decisions between food corn producers and a mill are analyzed to observe factors affecting the bushel amount farmers contract. Unbalanced panel data containing seven years’ worth of pricing and contract information are used with a fixed-effects model to generate parameter estimates and quantify their effect on bushels contracted. It was found that contract attributes, market condition, and relationship-specific assets had a significant effect on producers’ food corn contracting decisions. The Federal Reserve has increased nominal interest rates since early 2016. It is expected that commodity prices will drop in response to this monetary intervention. The overshooting hypothesis explains that commodity prices are more flexible than manufacturing prices and therefore are more volatile. In this situation, it is expected that agricultural commodities decline significantly (i.e., overshoot) and gradually return to their long-run equilibrium. This adjustment behavior has implications for income stability and financial viability of farmers.

Essay I elaborates on how the interactions of consumers’ beliefs and actions influence Food-Away-From-Home (FAFH) consumption and tests whether consumers compensate for the high caloric intake typically associated with FAFH by changing their behaviors during other meals. This dissertation investigates food safety regulations and international trade of agricultural products dividing into three aspects: the signalling effect from U.S. strict food safety regulations on U.S. vegetable exports, political determinants of sanitary and photosanitary non-tariff barriers, and the impact of trade barriers on employment in developing countries. The equine influenza virus is a significant cause of respiratory disease in horses. Even though horses generally recover from this virus, sometimes horses with equine influenza develop secondary bacterial infections which can cause severe pneumonia, thereby increasing recovery times. Owners and managers are faced with the decision of whether to delay preventative treatment in hopes of the horse avoids contracting a secondary bacterial infection (“wait and see”) or aggressively treat the horse with an antibiotic in hopes of avoiding a serious infection (“treat now”). In this thesis, I conducted an analysis of the consumption patterns associated with demographic and socio-economic characteristics, using Tobit and double-hurdle models. Data were collected for 11,574 households from the US Bureau of Labor Statistics for the year of 2014. Specific determinants included household size, age, income, gender, education, race, region, marital status, and whether the household lived in a coastal state. The results reveal that seafood expenditures are sequential decisions. Asian racial groups, households headed by married couples, a large number of members in households, higher income households, and households residing in the Atlantic and Gulf Coasts were variables …

As the per capita disposable income increases, the demand for meat is boosting in China. Pork, accounting for the largest part of Chinese meat consumption, plays an important role in meat demand in China. This study use data collected from a 2014 survey on Chinese meat consumption; four widely different Chinese cities, Beijing, Changsha, Tianjin and Wuhan are selected to provide a more complete view of Chinese pork and meat demand. There is a growing global market for wine. In our research, we mainly examine wine companies from four countries: France, Italy, the U.S. and China. Data used in this analysis comes from the 2010 to 2013 Plimsoll Top 500 report, focusing on wine companies’ financial performance. The primary goal is to identify which factors may have significant influence on the firms’ profitability. Two-way fixed effects panel data analysis indicates that the firm’s shareholders’ funds in total asset have significant and positive effect on companies’ yearly profit. This study uses conjoint analysis to examine the preferences of buyers for Bureau of Land Management (BLM) wild horses based on physical attributes of wild horses and individual characteristics of the buyers. Generalized ordered logit models and multinomial logit models are used to study the impact of the buyers’ demographic characteristics such as age, gender, knowledge about wild horse care, and number of wild horses previously adopted on physical attributes of the horses such as color, age, height, training status, temperament, conformation, and unique markings. This dissertation explores the use of an index based contingent claims mechanism against earthquake risk in Indonesia. It focuses on time critical financing needs of international humanitarian relief organizations, and on efforts to improve the resiliency of geographically constrained financial institutions whose clientele are exposed to disaster risk. The approach uses measures of ground motion intensity as the basis for the index. This research explores the link between a gravity model and welfare frameworks and then applies the quantitative model system to analyze how trade and welfare is affected by the Minimum Required Performance Limits (MRPL) in the shrimp importing market of European Union.
The quantitative model system consists of two parts: first, this study uses the “phi-ness” gravity model to investigate the trade effects of MRPL on EU shrimp market. This thesis examines the economic and environmental impacts that precision agriculture technologies (PATs) can have on the carbon footprint of a grain farm. An analysis is offered using two manuscripts. The first examines the impacts of three PATs and compares the findings to a conventional farming method. Food safety scares affect consumption behavior, and food safety and animal health issues are increasingly impacting international agricultural trade. Foot-and-mouth disease (FMD) is a highly contagious viral-type disease, and has raised not only the concerns of animal health issue but also food safety issue. Over 58 countries in the world have experienced FMD outbreaks, and pork exports and imports among these countries are largely impacted. There is a broad literature on the finance-growth nexus in the macroeconomics literature. Is there evidence for the finance-growth nexus at the sub-national region? If so, can macroeconomic finance and growth methods be extended to sub-national regions? Joseph Schumpeter argued that banks promote economic growth by choosing which projects to fund, by mobilizing underutilized capital, by managing risk and by monitoring managers.
