Changes In Quality Of Unsalted Sauerkraut During Fermentation And Storage, Chen Le-Le, Xu Di-Jing, Wu Jun-Kai, Wang Yi-Yi

Objective: This study aimed to investigate the quality changes during the fermentation of sauerkraut without salt and inoculated with lactic acid bacteria and during low-temperature storage. Methods: The basic physicochemical indexes and quality changes of sauerkraut during fermentation were analyzed. Results: The unsalted sauerkraut reached maturity at 5 d of fermentation and the pH, nitrite content, reducing sugar content and vitamin C content decreased significantly (P<0.05) during the fermentation process. This included a decrease in vitamin C of up to 88.62% and a significant increase in total and overall organic acid levels (P<0.05). At fermentation maturity, the nitrite content was extremely low at (0.23±0.10) mg/kg; The organic acids were mainly lactic, oxalic and acetic acids and succinic acid. Except for succinic acid, other organic acids and other organic acids, such as oxalic and citric acids, increased after fermentation, and the lactic acid content increased by 26.5 times. Conclusion: The fermentation process effectively improved the sour and umami taste of the sauerkraut without salt, and ensured the excellent sensory quality. The storage performance was good at 4 ℃, and the storage period was 60 days.

In order to explore the suitable irradiation range of 60Co-γ ray irradiation on Youtazi, which was adopted 60Co-γ ray irradiation with different irradiation dose to investigate the effects of irradiation dose on microorganism, acid value (AC), peroxide value (POV) and chromatic aberration of Youtazi under different conditions. The results showed that the number of microorganisms in Youtazi decreased with the increase of irradiation dose, and the range of irradiation dose was 3~7 kGy. In this study, the effect of spermidine (SP) treatments at different doses after harvest on the changes in the pomological and biochemical contents of nectarine fruits was determined. The fruits were placed in cold storage (4 ± 0.5 °C and 90 ± 5% RH) for 30 days. Specific organic acids and phenolic compounds from biochemical compounds were analyzed by HPLC device. Weight loss and decay values, which are quality criteria of nectarine fruits, increased during storage compared to the harvest period. Methods:‘A15’A. bisporus was treated with ozone gas with concentrations of 14.89, 29.77 and 44.65 mg/m3 respectively, and the changes in related indicators of each group during (1±1) ℃ storage were analyzed, such as sensory, texture and nutrition. In this study, the effects of 1-methylcyclopropene (1-MCP) treatment on the antioxidant enzymes and fruit quality parameters of baby squash (Cucurbita pepo L., cv. Soleil F1 and İskender F1) during cold storage was investigated. After being freshly harvested, the İskender F1 (green-skinned) and Soleil F1 (yellow-skinned) baby squash were treated with 250 and 500 ppb concentrations of 1-MCP and stored at 10 °C for 14 days. The 250 ppb 1-MCP treatment suppressed the loss of total soluble solid, ascorbic acid, total phenolic, and total flavonoid contents during storage in the Soleil F1 squash. Temperature and grain moisture content are the main factors affecting grain spoilage in storage. These factors have a significant impact on the maintenance of quality, insect, fungus, and pest development. The main objective of this study was to determine the CO2 concentration and respiration rate of hulled einkorn wheat in different temperatures (5, 10, 15, 20, 25, 30, and 35 °C) and grain moisture contents (9.1%, 11.5%, 13.8%, and 15.9%, wet basis) by means of CO2 sensors. This study compared the postharvest quality of Hicaznar pomegranate fruit unpackaged and packaged with 5-kg or 12-kg bags of two different modified atmosphere packaging (MAP) materials (X5, X12, L5, and L12) during 6 months of storage at 6 °C. The fruits were also evaluated during a simulated shelf life period at 20 °C for 7 days after each cold storage period. The effects of various concentrations of 1-methylcyclopropene (1-MCP) on `Ankara? pears (Pyrus communis L.) were investigated. The pears were harvested at commercial maturity level and 1-MCP (250 and 500 ppb) was applied to the fruit for 24 h at 5 °C. This research explores the relationship between quarterly grain stocks and monthly grain marketings. Reviewing when, how, and why stocks move from on-farm and off-farm inventories, an interpretation of quarterly commodity disappearance and crop marketings is formed. An explanatory model is first developed for farmer marketings, where price expectations are used to assess market signals to change ownership of crops. The model is applied to South Dakota corn, soybeans, and wheat from 1985 through 2015. The subsequent analysis contributes to a model that explains quarterly changes in stocks in terms of supply levels and the expected effect from marketings on disappearance. …

In the present study, response surface methodology was conducted for the determination of effects of some phenolics (gallic acid, ellagic acid, and quercetin) on some stability parameters of mixed oil prepared with sunflower and hazelnut oils (50:50, v/v). In this respect, peroxide value (PV), free fatty acids (FFAs), p-anisidine value, induction period, and refractive index of mixed oil were investigated. Predictive regression equations were constructed for the estimation of each studied parameter (R^2 > 0.861). The photoperiodic sensitivity and storage of Orius majusculus (Reuter) from Antalya was investigated to obtain data for the optimization of its release. In the current study, it was not possible to induce a high (up to 100%) incidence of diapause unless all the nymphal instars and adults were successively exposed (i.e. full exposure) to a short day length (11.5 h) at constant temperatures of 18 and 26 °C, and fluctuating temperatures of 10/26 °C. Salvia tomentosa is a common medicinal plant, and it is consumed as an herbal tea in some Mediterranean countries. It has been extensively collected from its natural habitat, and careless collection has caused the recent extinction of some plants. The present study was undertaken to cultivate S. tomentosa and compare the phenolic composition and antioxidant properties of wild and cultivated plants. Table grapes (Vitis vinifera) of the cultivar Shahroudi were coated with 0.5% or 1% chitosan and then stored at 0 °C for 60 days. Shelf-life qualitative traits including rachis and berry appearance and berry cracking, shattering, decay, browning, acceptability, and flavor were evaluated. Treated berries showed less weight loss, decay, browning, shattering, and cracking. Flavor-related factors such as total soluble solids (TSS), titratable acidity (TA), and TSS/TA ratio levels were higher in treated fruits; however, there was no significant difference between the fruits treated with 0.5% and 1% chitosan.
