The Mathematics of Nutrition Science is a workbook designed to integrate and contextualize developmental mathematics into an introductory college level Nutrition class. Definitions and skills from Community College Level Elementary Algebra and Quantitative Literacy courses are explained through examples analyzing the nutritional content of different foods. The book contains exercises for students to practice these skills, and also to reflect on the concepts through short writing assignments aligned with developmental English. These materials could be used by Nutrition course instructor in many different ways, and are designed to be self-contained and require minimal mathematical instruction.

Instructors use assessment ubiquitously throughout undergraduate STEM courses to gauge student understanding of important concepts. The utility of an assessment can be partly judged by the degree to which it can detect the presence of correct and incorrect understandings. We will discuss a series of within-subjects controlled experiments to determine how student responses differ for questions posed in multiple-choice, multiple-true-false, or free-response formats as well as implications of this research for instructional practice.

3D printing is particularly well-suited for teaching concepts of mathematics. We (Drs. Piret and Ellis) have started using 3D printers in a calculus 3 classroom. Our goals are to analyze the impact of the printers on students' understanding and motivation towards calculus, and to further incorporate this new technology in our teaching of mathematics. In this talk, we will show a few examples of projects that were presented to the students in our classes, and we will try to motivate you to also use the printers in your classrooms.

In this project, we explore the genesis of the trigonometric functions: sine, cosine, tangent, cotangent, secant, and cosecant. The goal is to provide the typical student in a pre-calculus course some context for understanding these concepts that is generally missing from standard textbook developments. Trigonometry emerged in the ancient Greek world (and, it is suspected, independently in China and India as well) from the geometrical analyses needed to solve basic astronomical problems regarding the relative positions and motions of celestial objects. Large-scale studies of 15-year-old school students show associations between students’ attitudes toward science learning and their levels of achievement (Ainley, Kos, & Nicholas, 2008). One model for improving students’ attitudes towards science and mathematics learning has been the provision of peer mentoring. The In2science program uses a peer mentoring approach to engage secondary school students in science and mathematics study. Working with the classroom teacher, university students serve as mentors and help students with their learning and build relationships in a small group or a whole class. This case study investigates three college instructors’ instructional approaches and their mathematical discourses in the context of calculus (e.g., concepts of limit and derivatives). The analyses focus on ways in which instructors communicate limit and derivative concepts that are observed in the classrooms, using Sfard’s discursive framework (a communicational approach). In particular, instructors’ use of mathematical words while introducing derivative and limit concepts are analyzed, as well as instructors’ ways of using visual mediators such as symbols, numbers, expressions, and graphs are investigated. Despite the fact that Latinos pursue science, technology, engineering, and mathematics (STEM) degrees as often as their peers, Latino degree completion rates lag behind those of other demographic groups. In an effort to better understand Latino persistence in STEM, this qualitative study explored the non-cognitive persistence strategies of Latino men pursuing engineering degrees at two highly selective, four-year institutions. Specifically, this study explored Latino engineering students’ understanding and responses to race and racism, with attention to ways in which understanding and responses differed by immigrant generation. Background: Many university students are becoming involved in mentoring programs, yet few studies describe the impact of mentoring on the mentor. Additionally, many studies report that students graduating from college are not prepared to enter the workforce in terms of key career skills and/or content knowledge. Herein, we examine the impact of our program, NE STEM 4U (Nebraska Science, Technology, Engineering and Math for You), in which undergraduate (UG) mentors engage K-8 youth in after-school STEM experiments. Throughout the history of teacher education, the final fieldwork experience has often been called the single most influential experience in teacher preparation programs (Burns, Jacobs, & Yendol-Hoppey, 2016; Feiman-Nemser & Buchmann, 1986; Parker-Katz & Bay, 2008). Problem-based learning (PBL) has been gaining in popularity, especially within the context of STEM-based (science, technology, engineering, and mathematics) schools. Program assessments for these schools typically focus on student standardized test scores rather than the needs of the teachers. This study utilized anecdote circles, storytelling via moderated group discussions, to investigate teachers’ needs related to developing and implementing authentic, interdisciplinary PBL activities in an urban, public STEM high school. Teacher experiences and viewpoints were explored within three broad themes: assessment; coaching and training; and authentic learning. In the United States, girls and boys have similar science achievement, yet fewer girls aspire to science careers than boys. This paradox emerges in middle school, when peers begin to play a stronger role in shaping adolescent identities. We use complete network data on a single middle school and theories of gender, identity, and social distance to explore how friendship patterns might influence this gender and science paradox.
