Dfend: A Nutrition Education Intervention To Improve Food Budgeting, Shopping, And Meal Preparation Skills Among Adults In Arkansas, Samantha K. Edwards

Human Nutrition and Hospitality Management Undergraduate Honors Theses

Preventive strategies targeting modifiable lifestyle factors related to food, nutrition, and health are needed as chronic health conditions continue to rise. Nutrition literacy refers to having the knowledge and skills needed to obtain, understand, and apply nutrition information to make informed dietary decisions. Without adequate nutrition education and food security, vulnerable populations are at risk of malnutrition and poor dietary behaviors. Educational interventions that increase food literacy can help improve dietary choices and food selection skills.

The purpose of this creative project was to develop a nutrition education toolkit for Extension agents to implement among rural populations with low health …

Motivational Systems In Education That Encourage Academic Achievement & Student Leadership, Hannah A. Lockhart, Angela Elsass

2026 Honors Symposium

This research examines how school-based motivational systems influence academic achievement, student engagement, and leadership development in K–12 educational settings. Grounded in contemporary motivational theory, the project explores motivation as a multidimensional construct shaped by autonomy, competence, relatedness, and belonging. Using an expanded review of literature as the primary methodological framework, the research synthesized 97 scholarly sources retrieved through multiple academic databases, including the University of Arkansas Libraries system, and integrated qualitative insight from a semi-structured professional interview with educator Ron Clark. Findings suggest that intentionally designed motivational systems, including schoolwide frameworks that foster belonging, recognition, and student agency, have a …

The School Counselors Role In Supporting Teachers Working With Children Who Have Experienced Trauma: Lessons Learned, Kristi L. Perryman, T.J. Timothy, Hailey Thomas Frost

Counseling, Leadership, and Research Methods Faculty Publications and Presentations

Teachers are dealing with the challenges of educating students who have been exposed to Adverse Childhood Experiences (ACEs) at an increasing rate (Brunzell et al., 2021; Mayor, 2021). Often their education has not prepared them for recognizing and mitigating the behaviors associated with ACE exposures. This article offers a review of current research regarding the role of the school counselor in supporting teachers. A case study provides insight into this support through a university partnership with a trauma-focused charter school. Suggestions are offered for teacher training and policy changes based on the author's experiences in working with a trauma-focused school. …

Effective Best Practices In Social Studies Education: Empowering Students Despite Institutional Barriers, Shelbie A. Merriweather May 2025

Effective Best Practices In Social Studies Education: Empowering Students Despite Institutional Barriers, Shelbie A. Merriweather

Curriculum and Instruction Undergraduate Honors Theses

Social Studies has remained a prevalent feature of the curriculum taught in the United States education system since the start of the 20th century as society became concerned with teaching children to be active citizens in their communities, and has evolved to integrate the development of critical and historical thinking skills that will enable students to analyze historical events and figures to generate a historical narrative (Coleman, 2021; Smith et al., 1995). The lack of standardized tests centered around social studies has meant that legislation like No Child Left Behind limits the funding provided to social studies as opposed to …

The Year-By-Year Primary And Secondary Education Histories Of Homeschooled Individuals And The Implications For Empirical Homeschooling Research, Albert Cheng Jun 2024

The Year-By-Year Primary And Secondary Education Histories Of Homeschooled Individuals And The Implications For Empirical Homeschooling Research, Albert Cheng

Education Reform Faculty and Graduate Students Publications

Many scholars have correctly noted the difficulty of obtaining representative samples of the homeschooling population. Empirical research about homeschooling, therefore, has predominantly relied on convenience samples which lack the external validity that enables one to generalize the findings to other segments of the homeschooling population. Unbiased inferences about the whole of the homeschool population have consequently been difficult to acquire (Kunzman & Gaither, 2022). For instance, empirical findings of college-educated homeschoolers or those from higher socioeconomic backgrounds might not generalize to other populations of homeschoolers (Cheng, 2014; Ray, 2009). Nor might findings about homeschooling families who rely on a structured …

Analyzing Diverse Student Experiences: The Intersection Of Equity, Inclusivity, And Biomedical Engineering Education Through A Clinical Observations And Needs Finding Course, Jacquelynn Horsey

Biomedical Engineering Undergraduate Honors Theses

In the field of biomedical engineering, needs identification and solution development are an important element of the design process. In our undergraduate curriculum, a course was designed to allow clinical observation and provide an opportunity for students to learn about engineering design and engage with clinicians via completing rotations in medical facilities near our campus. While this type of course is not unique, evaluating its efficacy is not simple. Given the broad range of institutional resources available- such as proximity to a medical school, or residency programs- reporting the quality of such courses within the context of such available resources …

Key Practices In P-6 Integrated Stem Education: A Delphi Panel Investigation, Leah R. Cheek May 2024

Key Practices In P-6 Integrated Stem Education: A Delphi Panel Investigation, Leah R. Cheek

Graduate Theses and Dissertations

Throughout the past two decades policymakers, practitioners and researchers have been summoned to pursue best practices to address and implement improvements in STEM education for P-12 students (Archer, Moote, MacLeod, Francis, & DeWitt, 2020; Emrey-Arras, 2018; Hodson, 2003; National Research Council, 2012). Irrespective of the longstanding investment of time and resources towards STEM education, students’ patterns of STEM involvement in schools continue to be persistently unchanged (Archer, et al., 2020; Ro & Knight, 2016) and even fewer Americans are entering STEM disciplines in the workforce (National Science Foundation, 2018). The purpose of this three-article dissertation study is to support effective …

Course Correction: Navigating Equity In Ninth-Grade Advanced Placement, Sarah R. Morris, Sarah C. Mckenzie, Miranda Vernon

Arkansas Education Reports

This robust mixed-methods study examines ninth-grade advanced course placement in Arkansas, revealing disparities rooted in race and socioeconomic status. Utilizing a logit analysis for a five-year pooled sample (n=163,616), we find persistent enrollment gaps for Black ninth-grade students after controlling for prior academic achievement, highlighting systemic barriers to access to advanced courses. Socioeconomic divides are also evident in our analysis. Qualitative findings from counselor interviews highlight the importance of parental involvement in course placement decisions, particularly for students from lower socioeconomic backgrounds. Overall, we find through these interviews that districts consider a myriad of factors when considering course placement for …

A Simulated Qualitative Study Exploring Higher Education Faculty's Perceptions Of Factors That Influence Dynamic Decision-Making When Choosing Opportunities For Student Engagement In Asynchronous Online Courses, Leticia De La Garza

Graduate Theses and Dissertations

The purpose of this study was to explore higher education faculty’s perceptions of factors that influence dynamic decision-making when choosing opportunities for student engagement in asynchronous online courses. More specifically, this study sought to understand how faculty in higher education perceived these factors to prevent and facilitate dynamic decision-making when designing instructor presence, student-to-student collaboration, and student-to-academic content engagement opportunities in asynchronous online courses, as Garrison et al. (1999) suggest, for a community of inquiry. There has not been much focus on the dynamic decision-making of online instructors in higher education and a call to continue exploring factors that influence …

Exploring Academic Outcomes In Arkansas Schools: A Study Of Four-Day School Week And Year-Round Calendar Districts, Kate Barnes, Sarah Mckenzie

Arkansas Education Reports

In 2021, Arkansas's state legislature passed Act 688 allowing school districts to adopt non-traditional calendars. Districts could choose from four calendar options: traditional, four-day school weeks (4DSW), year-round calendar(YRC), and alternative. During the 2022-23 school year, 33 districts adopted new calendars; twenty-seven districts operated using a 4DSW, and six used a YRC. Several more districts adopted 4DSW in the 2023-24 school year. Atpresent, thirty-four Arkansas districts use a 4DSW. This report used publicly available data from the Arkansas Department of Education to explore the relationship between adoption of a 4DSW or YRC and the following student outcomes: academic growth, academic …

The Role Of Ap & Concurrent Courses On Student Postsecondary Outcomes, Out-Of-State Choice, And College Selectivity, Rian R. Djita, Andy Parra-Martinez, Jonathan Wai, Sarah C. Mckenzie Nov 2023

The Role Of Ap & Concurrent Courses On Student Postsecondary Outcomes, Out-Of-State Choice, And College Selectivity, Rian R. Djita, Andy Parra-Martinez, Jonathan Wai, Sarah C. Mckenzie

Arkansas Education Reports

Literature on Advanced Placement (AP) and dual or concurrent enrollment (CE) courses shows that entry to and completion of these rigorous courses can increase students’ cognitive and non-cognitive outcomes. Issues of equity remain as White students and students from more affluent backgrounds tend to enroll in these courses at much higher rates than minoritized students and low-income students. Arkansas implemented a universal policy mandating all school districts provide access to AP and CE courses. Within this context, we investigate the relationship between enrollment in these courses and student postsecondary outcomes. Despite universal access, we find that enrollment in AP or …

Second Annual University of Arkansas Teaching and Learning Symposium: Sharing Teaching Ideas

In the preeminent work on grit, Duckworth et al. (2007) first defined grit as “perseverance and passion for long term-goals.” Evidence is overwhelming that grit is a predictor of success in various arenas of life, often when no other valid predictors can be identified. Grit was the only statistically significant predictor of both academic and clinical success in an Australian study of over 2000 university students (Terry & Peck, 2020). Both job satisfaction and performance are improved with increased grit (Cho & Kim, 2022). Clear evidence that a …

Making Language Learning Meaningful And Fun With Collaborative Projects, A. Louise Cole

TFSC Publications and Presentations

Second Annual University of Arkansas Teaching and Learning Symposium: Sharing Teaching Ideas

Collaborative learning requires students to actively engage with others, typically fellow students, to achieve a common goal (Nokes-Malach et al, 2015). The form of this collaboration may vary from prescriptive, teacher-facilitated activities to more open-ended and reflective projects. Within the L2 classroom, students work toward language proficiency. The current World-Readiness Standards for Language Learners evaluate linguistic abilities in speaking, listening, reading, and writing but also require that students develop cultural competencies and understanding. In this vein, Oxford posits that within a collaborative learning framework, the notion of community …

You Can Learn A Lot From Fake Data: Reverse Engineering Data As A Means To Analysis, Action & Learning, Jeff Bean

TFSC Publications and Presentations

Second Annual University of Arkansas Teaching and Learning Symposium: Sharing Teaching Ideas While not a formal discipline, “reverse engineering” can yield opportunities for students to experience a compressed end-to-end (e2e) life cycle of projects that leverage human factors such as perception, cognition, and macro-factors such as organizational culture or situational context to improve operations performance, safety, or other organizational outcomes.

As the process of project proposal, approval, and execution can often take months (or longer!), we simply do not have the time or resources to conduct “real” experiments. To give the benefit of e2e projects, students are asked to create …
