Volumes #1 through 11 were published in a print format. Starting with Volume #12, the journal has been published online and Open Access. Having JSESD in the Open Access format maximizes access for readers and authors and allows the journal to remain economically sustainable.

This study examines the integration of human-centered design (HCD) in a Food Science capstone course and explores its impact on students’ learning outcomes and skill development. This case study investigated how 42 undergraduate students engaged with HCD processes—including understanding, synthesizing, ideating, prototyping, and implementing—to develop innovative food products. Through pre- and post-surveys, interaction analysis, and performance assessments, the findings revealed that HCD activities significantly enhanced students’ knowledge, collaboration, creativity, and metacognitive skills. Additionally, students demonstrated improved food science competencies, such as product formulation and sensory evaluation. This qualitative study investigates the perceptions of Vietnamese EFL teachers regarding the role of ChatGPT in Second Language Acquisition (SLA). Amidst the growing integration of Artificial Intelligence (AI) in education, this research focuses on understanding how educators at different career stages perceive the effectiveness of ChatGPT in enhancing language learning experiences. Employing semi-structured interviews, the study engaged nine teachers from two educational institutions in Vietnam. Thematic analysis, guided by the Technology Acceptance Model (TAM) and the Constructivist Theory of Learning, revealed multiple roles of ChatGPT in SLA. In Sarawak, Malaysia, many children come from multicultural backgrounds and are predominantly non-native English speakers making preschool education essential for developing early literacy skills in English. However, high teacher-child ratios can impede effective learning. The READi system—a module-based, multisensory, web-based early literacy intervention—was introduced as a supplementary classroom tool to address this challenge. Abstract: o analyze the relationship between the Scratch program and students’ computational thinking in an educational institution in Peru, relational research guidelines were followed with 384 regular elementary school students aged 6 to 12. The group had a higher percentage of males (52.6%) compared to females (47.4%). Two custom questionnaires were used to measure both variables. The study found that the aesthetic aspects of the Scratch program are the most significant component for developing computational thinking (=3.34; =2.34; =2.47), especially the dimension of computational practices. This study aims to assess the digital innovation skills of 400 middle school teachers in the Bisha Province and evaluate their significance in the educational process. The survey reveals that instructors exhibit a high level of technological expertise and proficiency, namely in utilising search engines and databases to locate information. Nevertheless, their proficiency in using artificial intelligence applications in school is deficient. In terms of digital security, instructors are competent at generating strong passwords, but they lack understanding of cybercrimes and prevention solutions. This study investigates the effectiveness of the TOEFL Learning English Application in enhancing the listening comprehension skills of English as a Foreign Language (EFL) learners and explores students’ perceptions of its use. A descriptive quantitative design was employed involving 45 English Education students at Universitas Muhammadiyah Purworejo. Pre- and post-tests measured listening comprehension gains, while a questionnaire based on the Technology Acceptance Model assessed student perceptions. Results showed a statistically significant improvement in listening scores, as well as generally positive perceptions regarding the application’s accessibility, usability, and ability to reduce learning anxiety. This study explores the application of image and video editing Artificial Intelligence (AI) in early childhood education, with a particular focus on “image-speaking AI”. We investigated whether using AI could effectively capture children’s attention. The results showed that, under certain settings, the longest attention span was achieved when a character spoke by means of AI(*p<0.05). Rather than adding sound to a still image, using AI to move the mouth of the still image captured the children’s attention. However, the parents from the survey indicated that the realism of the mouth movements seemed unnatural and could distract the viewers from understanding the contents.

Few academic studies have comprehensively examined the actual demands of students regarding the educational function of study tours. This paper develops a demand index system based on three dimensions: cognitive, affective, and behavioral demands. A questionnaire survey was administered to 397 students. Initially, student demands were categorized using the Kano model. Subsequently, the “dependence” and “expectancy” characteristics were analyzed through the dissatisfaction index (DI) and satisfaction index (SI). The impact of fulfilling each demand on dissatisfaction and satisfaction levels was then determined. This study aims to investigate the experiences of university students on the use of artificial intelligence (AI) for assessment in higher education in Ghana. A quantitative survey approach was employed, using an online questionnaire administered to target participants across five public universities. The findings from a final sample size of 509 indicate varying levels of exposure to AI-based tools for assessment, learning, and research. The research employed the Research and Development (R&D) method using the ADDIE development model (Analysis, Design, Development, Implementation, Evaluation). The developed e-module was tested on eighth-grade students. Within this integrative review, cognitive load theory (CLT) is asserted as a powerful framework for conceptualizing human cognitive processes within learning. The relationship between cognition and emotion is then examined and further integrated within the scope of CLT. Emotion regulation strategies are discussed and adaptive strategies are proposed as being of particular relevance to broadening the theoretical and practical impacts of CLT. Central to the argument of this review is the use of cognitive reappraisal as a potential mitigator of cognitive load. This paper presents the development of a novel orchestration tool that predicts collaborative problem-solving (CPS) behaviors of undergraduate engineering groups and investigates the use of that tool by instructors. We explore the impact of receiving real-time, machine-learning, model-based prompts on 1) instructors' orchestration strategies, which are strategies instructors use to manage and facilitate collaborative activities, and 2) groups' participation, including how groups are engaged in CPS activities. It is widely agreed that science instruction should help students build new knowledge on the foundation of their prior knowledge. Responsive teaching refers to a family of teaching strategies that pursue and build on student ideas. We introduce a particular approach to responsive teaching and examine how it can be supported by the use of computational models. This paper introduces a theoretical framework for characterizing design processes as design games. Based on Collins and Ferguson's epistemic forms and games, the framework characterizes design processes as games played by designers to fill out design forms, which are general templates underlying specific design artifacts. We introduce our framework through games involved in human-centered design, describing for each the entry conditions, target form, constraints, and moves. We present reflections on our experience using a generative AI model in qualitative research, to illuminate the AI's contributions to our analytic process. Our analytic focus was a segment of classroom transcript, which captured a teacher introducing scientific theory-building practices to middle school students. We used a grounded theory approach to produce a fine-grained characterization of the teacher's talk moves during the lesson implementation. Our eventual goal is to build a more nuanced conceptualization of responsive teaching in the context of theory-building activities. This paper explores the design of computational toys and kits for young children (ages 4-7) as tools for learning integrated mathematical, spatial, and computational thinking concepts. Specifically, we examine how the design features of the toys and kits represent the concepts of rotation on a point and spatial orientation of the agent. We examine toys and kits sold commercially, developed through research, and used in early childhood classrooms. Our findings indicate that the mathematical and spatial concepts are overlooked in some designs. The majority of research concerning science communication happens in spaces where people already have a vested interest in or knowledge of science, such as museums and science cafes. Thus, there is a gap in understanding what theory-based science communication looks like in non-science-centered spaces. This qualitative research study, which featured cosplaying science communicators at comic conventions, offers insights into what science communication practices occur within everyday spaces. We conducted observations of and semi-structured interviews with 15 cosplaying scientists, examining how they utilized effective framing and narrative structuring when communicating science at comic cons in cosplay. Decolonization as a term and concept gained prominence in the 20th century as new nations emerged from the cessation of the global colonial project which primarily saw European countries occupying different parts of the world. In modern times, interests in decolonization have taken different forms, particularly in learning design and digital learning spaces.
