Internships play a vital role in bridging the gap between academic knowledge and practical industry experience for hospitality business students. This study investigates the impact of internship experiences on workforce readiness, focusing on gender-based differences in perceived achievements and areas for improvement. Grounded in Experiential Learning Theory (ELT) and Work-Integrated Learning (WIL), the research examines how internships contribute to students’ career preparation. A survey of 373 students revealed that female students emphasized interpersonal and creative problem-solving skills, whereas male students highlighted technical expertise and leadership. Utilizing qualitative methods, this study gathers insights from general managers and owners in the licensed accommodation sector to understand similarities and differences in how Airbnb influences socioeconomic factors, housing markets, and community dynamics in both urban and rural settings. Purpose: This study examines the impact of halal labeling on the purchase intent of Korean food (K-food) imports among Indonesian Muslim millennials. It also explores how halal certification origins—Indonesian Ulama Council (MUI) vs. Korean Muslim Federation (KMF)—affect consumer perceptions and purchase decisions.

Design/methodology/approach: Using a sample of 370 respondents aged 18–42 who purchased K-food in the past year, this study employed Multi-Group Structural Equation Modeling (MG-SEM). Respondents were randomly assigned to groups exposed to different halal labeling stimuli to assess their impact on trust, brand attitude, and purchase intent.

This study examines the role of chefs in procuring locally sourced food and the challenges they face in managing this process within the foodservice industry. Through qualitative interviews with seven executive-level chefs from diverse foodservice operations in West Texas, the research explores their decision-making processes, attitudes toward local sourcing, and the logistical hurdles involved. Findings highlight that while chefs are highly motivated to use local products due to quality and sustainability benefits, they face significant challenges such as limited availability, inconsistent supplier networks, and distribution inefficiencies. The use of gamification in orientation training has gained attention in organizational settings, yet questions remain regarding how different gamified training designs influence new employees’ emotional commitment, willingness to participate in future training, and long-term aspirations. Drawing on Stimulus–Organism–Response (SO-R) theory, Achievement Goal Theory, and Ecological Systems Theory, this dissertation investigates how game type (individual vs. team) and trainer involvement (active vs. passive) shape these outcomes.

The rapid adoption of Generative Artificial Intelligence (GAI) is transforming hospitality and tourism marketing, offering both opportunities and challenges for industry professionals. This study explores the integration of GAI in the U.S. hospitality sector, focusing on its ethical, operational, and strategic implications. A mixed-methods approach was used, combining qualitative insights from 20 industry professionals with quantitative data from 163 participants. Each type of beverage apparently has their own profile of dedicated drinkers. Those drinkers are also apparently loyal to the location of purchase. However, one may also consider whether consumption in one location is a predictor of consumption in the other location. Cannabis tourism offers new opportunities for U.S. hospitality, although regional adoption is limited and complex due to diverse legal frameworks. Through qualitative document analysis (QDA) of regulatory frameworks in 14 Southern U.S. states, this study compares policies on consumption, sales, and employment in states with limited or emerging cannabis programs. Findings reveal that hospitality operators can enhance guest experiences by creating private, wellness-focused cannabis environments and advocating for gradual policy adjustments. However, compliance with strict consumption, licensing, and workplace rules is essential to mitigate legal risks. This study examines the Marriott data breach crisis of 2018, analyzing Marriott's crisis communication through the lens of Situational Crisis Communication Theory (SCCT). Tourism seasonality has significantly impacted hospitality enterprises' financial stability and operational efficiency. However, its interaction with enterprise size and patronage rate remains underexplored, particularly in urban destinations such as Kisumu Region, Kenya. This study examines how tourism seasonality, hospitality enterprise size, and patronage rate influence visitor flow dynamics. A mixed-methods research design was adopted; the study integrated quantitative analysis of visitor numbers with qualitative insights from key industry stakeholders. The growing popularity of social media platforms has transformed how gambling content reaches audiences, with gambling vlogs now attracting millions of viewers outside traditional marketing channels. Despite their reach and potential influence, these user-generated videos remain understudied in gambling research. This study sought to analyze slot machine vlogs by examining their portrayal of gambling experiences, assessing viewer engagement patterns, and identifying the video features associated with higher engagement metrics. Using a comprehensive mixed-methods approach, I analyzed 170 popular YouTube slot machine vlogs and 43,837 viewer comments through advanced analytical techniques. This project explores the current landscape and future potential for recreation and tourism development in Orick, California. It highlights how natural, built, cultural and economic systems shape a community’s identity, functionality and appeal for residents and visitors. Findings reveal that effective integration of natural and built systems, combined with strong governance, cultural stewardship and tourism planning is essential for sustainable growth, enhancing resident well-being and leveraging tourism as a key economic driver while preserving environmental and cultural assets.

Human Nutrition and Hospitality Management Undergraduate Honors Theses

Meetings are crucial for small businesses, yet many struggle to plan them effectively due to limited resources. This study examines the gap between the perceived importance and actual performance of 14 meeting planning attributes in small businesses. Through an online survey and Importance-Performance Analysis (IPA), the study finds that attributes such as setting SMART goals and having employees arrive on time and engage before meetings are highly valued but underperformed. The study also emphasizes the importance of leadership, communication, and technology skills for successful meeting planning. This study examined the impact of smartphone usage on the job outcomes (job satisfaction and performance) of employees, specifically focused on the hospitality industry, where employees’ income and performance heavily rely on emotional labor. The research was aimed to distinguish between negative smartphone activities (e.g., doomscrolling, social comparison) and positive activities (e.g., listening to calming music, engaging in stimulating games) to determine how these behaviors affect employees. Using the Stimulus, Organism, Response Cognitive Theory (SOR), the study examined if positive smartphone usage enhances well-being and job outcomes, while negative usage diminishes them.
