Hélène Darroze was recently named as Veuve Cliquot's World's Best Female Chef for 2015. She comes from four generations of chefs and despite a brief attempt to work outside the kitchen she is now a global culinary star. From her Michelin-starred restaurant in London she told Daniel Jeffreys how she manages two world-class kitchens, a family of two young girls and still finds time to mentor young culinary professionals.

Globalization is most frequently associated with technology or banking, but it has been an equally influential force in the culinary industry. Although some chefs resist cross-cultural integration, Mariana Sebess, Academic Director of the Prestigious Mausi Sebess Culinary Arts Institute, believes that chefs should embrace the concept of world food and draw upon regional cuisines in the dishes they make.

Hong Kong derives its name from a Cantonese expression 香港, which means "fragrant harbour". Scholars attribute the name to incense factories that stored merchandise in Aberdeen warehouses in the 19th century, but these days it's the scent of cooking that fills the air with sweet aromas as a wave of new restaurants open their doors. As Daniel Jeffreys reports, the city's vibrant culinary scene has made its appetite for skilled labour almost insatiable.

Customer Retention: Reducing Online Casino Player Churn Through The Application Of Predictive Modeling, Eunju Suh, Matt Alhaery

With the potential expansion of legalized online gaming in the United States as well as in the global market, customer retention is critical to the continued growth and success of an online casino. While customer churn prediction can be an essential part of customer retention efforts, it has received very little attention in the gaming literature. Using historical online gaming data, this study examines whether player churn (attrition) can be predicted through an application of a decision tree data mining algorithm called Exhaustive CHAID (E-CHAID). The tourism and hospitality industry has not always followed sound environmental stewardship. Increased awareness among tourists worldwide has prompted sustainability discourse encouraging long-term systemic approaches to planning and development. The research article proposes a holistic conceptual conservation framework that shows how a united tourism and hospitality industry can curtail the processes of environmental destruction and collectively offer authentic touristic experiences. Visitors can fully experience tourist destinations through integrated ecotourism, ethnotourism, and other related tangential offerings alongside those of larger tourism and hospitality providers. You Look Like You’Ve Seen A Ghost: A Preliminary Exploration In Price And Customer Satisfaction Differences At Haunted Hotel Properties, Kimberly Mathe-Soulek, Grant C. Aguirre, Ioana Dallinger

With the increasing popularity of paranormal ghost hunting shows in mainstream television and popular culture, research in haunted lodging establishments is warranted. The purpose of this study is to explore differences in price and customer satisfaction between haunted vs. non-haunted properties; while also considering inn vs. hotels and chain vs. independent properties. Using TripAdvisor customer satisfaction scores and average daily rates, results of this study are opposite of what is hypothesized such that overall, haunted properties have lower customer satisfaction; while haunted, chain properties have higher prices. While the business case for employee engagement and satisfaction is well documented in the service profit chain and the cost savings of employee retention are easily quantified, the means to achieving these related goals in the casino industry is not well known. The pathway to employee engagement and satisfaction is even less well known in the tribal government gaming industry. How The Great Recession Affected Casino Staffing In Nevada Casinos, Toni Repetti

In service based industries, as revenue increases so does the need for employees to provide that service, but no known academic research has been conducted on what the most efficient level of that service should be for casinos. In Nevada casinos, significant results show that for each 1% increase in gaming revenue, casino employees increase 0.80%, salaries and wages increase 0.91%, and total payroll increases 0.95%. During fiscal years 2008 – 2010, what many consider the most significant recession to date for Nevada casinos, gaming divisions significantly decreased employees 11.6%, salaries and wages 8.7%, and total payroll 8.8% beyond that …

Scholars and practitioners recognize that spreading word-of-mouth can play an important role in the formation of a hotel’s image. However, the relationships among various measures of online customer engagement are relatively unknown. The present study analyzes the relationships and quantifies the impacts of various measures of online engagement including the number of online reviews, overall rating, and relative ranking. The researchers used path analysis on a sample of 178 hotels to study the relationships among relevant variables and build a model to explain the impact of such measures (Figure 2). In seeking to illuminate the ways in which inchoate models of addiction emerged alongside the unprecedented popularity of gambling in Stuart London, this paper will explore the intersections between a rudimentary pathology of addiction and transformations in the epistemology of reason, the passions, and humoral psychology in the seventeenth century. By exploring the connections between endogenous and exogenous categories of mental illness, this study will examine the ways in which medicine, social expectations, and religion intersected in the seventeenth century alongside the historical relationship between evolving concepts of mental illness, stigma and the politics of blame and responsibility in the …
