Giving tips (or gratuities) in restaurants in the United States has been and is currently a hotly debated and discussed topic. Concerns regarding proper compensation have been raised, but there is a need for empirical evidence to investigate and solve potential issues of compensation. This honors thesis aimed to answer two questions: Whether restaurant patrons tip more when prompted with tipping percentages, and whether those who have worked in the tipping industry tip more than those who have not. Affective atmosphere is a fundamental component to the allure of coffee shops that is cultivated through sensory experience. In this thesis I examine how the sensory experience of sight, sound, smell, taste, and touch, create atmospheres in coffee shops. I ask, “how do coffee shops cultivate an affective atmosphere?” Through an exploration of material culture, design, affect, and the intentional production of third places, I illustrate the ways in which independent coffee shops have their own unique identities and atmospheres. Specialty coffee, comprising a tenth of the global coffee trade, is distinguished by its strict quality requirements and traceable origins. The diverse flavor profiles of specialty coffee raise demands on providers to serve individual taste preferences. Prior research has not sufficiently explored how to predict customer preferences for specific flavor profiles or how these preferences influence behavioral intentions such as revisiting or recommending a café. This study hypothesized that customer involvement, the extrinsic factors of coffee experience, and culinary risk-taking would predict flavor preference, which would in turn affect behavioral intentions. The Commonwealth of Kentucky currently has 5 thoroughbred racing tracks and 3 harness racing tracks (Kentucky Horse Racing Commission 2023 and Mint Julep Louisville 2021). As Table 1 below shows, the industry employees roughly 7,000 people (direct jobs), and these jobs annually support another 2,000 jobs or so throughout the state. These 2,000 jobs are jobs that are provided by the suppliers to the horse race tracks (indirect jobs) and jobs that are created by the spending of the race track employees and the employees of suppliers on food, housing, transportation, and clothing by vendors and retailers throughout the state …

Some chefs may try to ban it, but 'foodstagramming'—diners taking photographs of food to post on social media—is a valuable tool that can boost both restaurants' and diners' public image. That's the conclusion of new research led by UCF Rosen College of Hospitality Management's Associate Professor Xiaoxiao Fu. The study takes a psychological perspective and finds that foodstagramming helps both individuals' self-efficacy—the belief that if individuals act in specific ways they can achieve certain goals—and provides opportunities for restaurants to promote their businesses in new and exciting ways.

Engaging life experiences can become deeply entrenched in the human memory, facilitating mind associations, stimulating the imagination, and inspiring rich storytelling. UCF Rosen College of Hospitality Management's Associate Professor Xiaoxiao Fu and Assistant Professor Carissa Baker, along with their co-authors, recently collected the subjective accounts of 30 people who had visited renowned theme parks in China. By analyzing these first-person tales, the researchers were then able to pin-point patterns and processes that characterized the respondents' immersion in experiences at the Chinese theme parks.

The study of residents’ perceptions and attitudes towards tourism has received considerable interest over the years. While much agreement has been found, there are also several areas of disagreement and noteworthy gaps that affect our understanding of residents’ attitudes toward tourism. This discussion reviews some of the existing findings of past studies, before considering some of the significant gaps. These include the dominance of social exchange theory (SET) as the principal model, the lack of distinction between tourists and tourism, and the impact of tourist typologies on perceptions of tourism.

Yet, research on what professionalism “means” to chefs, and how they “make sense” of it, is currently underexplored. Proposed regulations for alcohol advertising prevent beverage companies from targeting people under the legal drinking age. However, similar regulations for alcohol alternative beverages are less explored, which could allow alcohol alternative products to create awareness for alcoholic beverages among youth. Migration presents challenges to receiving communities, as it tests their ability to respond to unexpected expenditures and social stresses. Evaluating the local impact of rapid and substantial migration flows is difficult due to the absence of a validated instrument for assessing community support for migration. Our study adapted and validated a Support for Migration Assessment survey (SMA) based on Social Exchange Theory (SET). The validation of the SMA contributes in two significant ways. Underinvestment in pathology and laboratory capacity caused by low visibility in research and in prioritization by public health leaders results in limited effective healthcare coverage and an estimated 1.1 million premature deaths annually in Low-and-Middle-Income Countries. Kenya’s public health laboratories provide a median 41% of the Essential Diagnostic List to their patients and in Kisumu County, as much as 44.2% of the population has little to no access to essential diagnostics. College and university housing professionals served a role they were generally underprepared for as long-term crisis managers during the global COVID-19 pandemic. The COVID-19 pandemic interrupted and shifted higher education operating structures on a grand scale, and housing staff were asked to continue operating on-campus housing facilities throughout the ever-changing response to COVID-19. The purpose of this hermeneutic phenomenological study was to understand the lived experiences of housing professionals during the COVID-19 pandemic. This research delves into the complex relationship between service quality, tipping behavior, and various influencing factors within the context of the hospitality industry. By collecting data from 19 casual and fine dining restaurants in Goa, India, the study focused on frontline employees, including waiters and barmen, who regularly interacted with diners. A total of 216 questionnaires were distributed during lunch and dinner periods, capturing diners' perspectives on service quality using a 7-point Likert scale.
The results revealed significant insights into the dynamics of tipping behavior. There was a statistically significant, medium-sized positive correlation between customer service assessments and the percentage …

This paper utilizes data on Missouri’s casino industry to examine how clustered casinos, such as those in Kansas City and St. Louis, perform compared to dispersed or isolated casinos, such as those in Boonville, Caruthersville, La Grange, and St. Joseph. Missouri limits the number of casino licenses allowed; however, it does not explicitly mandate casino locations. Missouri provides a unique natural experiment for comparing location model performance. This research paper aims to understand the presence of sustainable food waste management in food retail businesses, as well as the importance of food donation to the success of food insecurity remediation organizations in the city of Melbourne, Victoria. Intensive in-person, online, and over-the-phone interviews were conducted in two categories: food retail businesses (subcategories being supermarkets and restaurants) and food insecurity remediation organizations. This study aims to determine the effect of local food consumption motivations on consumers' behavioral intentions after the COVID-19 epidemic. For this purpose, data were obtained by using the survey technique in order to determine the relationship between the local food consumption behaviors and behavioral intentions of 371 visitors visiting the Edremit Körfez region. The findings of the research were created with frequency distributions by applying difference and relationship tests on the data obtained.
