The licensed industry is an increasingly competitive market place, many bars have responded by empowering staff and undertaking structural and management reforms in recent years. Undoubtedly, these changes have significantly raised the levels of customer service and enhanced customer satisfaction. Paradoxically these changes, combined with the responsibilities allocated to bar staff and management to supervise and manage bars with autonomous control have created more fertile conditions, scope and opportunity for dishonest actions by staff members.

When a prospective student begins visiting college campuses to start narrowing down their future plans, it can be quite a challenge for schools to make the biggest impact. People are constantly researching what stands out and has the biggest influence on enrollment. The purpose of this study was to determine which of the campus visit options had the biggest influence on the students’ decision to attend SFASU. The 3 options were Showcase Saturday, Regular Campus tours or both. Majority attended Showcase Saturday followed by regular campus tours and the rest attended both.

Developing Service Learning Protocol for students in the Hospitality Administration program at Stephen F. Austin State University provides an opportunity for students to experience these values such as networking, commitment, and building self-confidence. In 2015 SFA Hospitality Administration faculty made a decision to institutionalize service learning throughout their program. This presentation discusses its implementation.

The Mediterranean Diet (MD) is a long-standing form of nutrition that may be partially responsible for the long life-expectancy of European Mediterranean countries. If this diet is capable of increasing longevity, it may be worthy of integration into U.S. culture. This study uses literature to explore the effects of the MD on disease prevention, as avoidance of potentially lethal, non-communicable disease could increase longevity. Nationally prevalent diseases were studied, including obesity, type II diabetes, and COPD, among others. Results indicate that the diet has been linked to lower risk for development of a wide variety of diseases, thus indicating it …

In the past five years, hospitality educational programs have seen a distinct decline in enrollment from year to year (Oakley, 2016). Upon reflection of this decline, there could be many reasons, which caused a consecutive downward trajectory regarding enrollment. First, individuals are finding that a formal degree is not required for entry-level positions in the hospitality industry. Second, people are utilizing technology and videos to substitute for formal education and are finding success in the entry-level hiring process. The central focus of this dissertation study is to understand the impact of the Sarbanes-Oxley Act and the factors that contribute to increased risk of fraud in order to determine why fraud may occur despite the imposed regulation of the Sarbanes-Oxley Act. The main premise of the study tests the application of the fraud triangle framework constructs to publicly traded restaurant companies during the time period of 2002-2014, using proxy variables defined through literature. This study was conducted in the Western and Midwestern United States at mid-scale hotels with no food and beverage services regarding hotel employee satisfaction of work and home-life balance. The purpose of this study was to investigate the factors influencing employee perceptions of work and home-life balance, and to determine whether the regional locations of the work influence those perceptions.
The data was collected using an online survey from several hotels in the Western U.S. and Midwestern U.S. A total of 120 surveys were completed, 78 were usable. There were 45 respondents from the Midwest and 33 respondents from the …

The purpose of this dissertation study is to investigate the relationship among tourism competitiveness, quality of life, and freedom. The main premise is that the degree of freedom shapes the relationship between tourism development and quality of life. The study hypothesized that the greater the degree of freedom is, the greater impact tourism development will have on quality of life of residents of a destination. The theoretical framework of this study is based on combining Sen's capability approach with the tourism competitiveness theory. The dissertation explored the relationships among Website interactivity, brand knowledge, consumer-based brand equity and behavioral intentions in the context of hotel Websites. Based on an in-depth literature review, a theory-driven model was proposed and ten hypotheses were developed. The dissertation employed an empirical study based on a survey design, and collected data via a marketing company. Respondents who booked a hotel room online using hotel branded Websites in the last 12 months were approached to complete the online questionnaire. Four hundred ninety six (496) respondents completed the online questionnaire by answering to questions related to their last hotel booking experience. …

Managers have begun to respond to customers' online reviews of services on online review websites. However, it is not known how viewers evaluate company-initiated service recovery in the form of manager responses to online reviews. This research has three objectives: (1) to explore how managers are currently responding to electronic word of mouth; (2) to investigate whether a manager's response to electronic negative word of mouth (eNWOM) positively influences viewers' behavioral intentions; (3) to examine which elements in a manager's responses increases viewers' evaluations of trust and behavioral intentions towards the company. The changing need of higher education to interface more effectively with industry has been widely documented, as has the rising awareness of those attributes which most benefit graduates seeking employment. A key way in which third-level institutions can build stronger partnerships with employers, and assist their students in postgraduate success, is through the provision of work placements. It is estimated that there are approximately 42,000 beverage establishments in the U.S. whose annual revenue surpasses $20 billion (First Research, 2014). To facilitate discussion of beverage establishments, it is essential to recognize beverage establishments as businesses whose majority of sales come from alcoholic drinks (Moss, 2010a). In this research, beverage establishments are divided into beverage-only bars, bar/entertainment combinations, and food and beverage combinations. The hospitality industry, encompassing both tourism and leisure segments, has become the world's largest employer. As such, there is a workforce need to develop leadership bench strength through degree programming at the university level. Preparing future leaders for careers in the hospitality industry as part of university curriculum is particularly challenging as operational practices, leadership competencies, and interpersonal skills are often not instructed in the classroom environment, yet are a critical element of supervisory performance. Workforce development perspectives suggest that mentoring is a development tool to narrow programming gaps in university curriculum.

The theory of planned behaviour (TPB) and the concept of anticipatory negative emotions have attracted considerable research attention in the formulation of effective preventive interventions. This approach has identified several key constructs (i.e., attitudes, subjective norms, perceptions of control, anticipation of negative emotions) as valid predictors of gambling intentions and behaviour. However, no empirical investigation has utilized these constructs in the design or evaluation of a youth problem gambling prevention initiative.
