Because this gene is encoded with information about the geography where their ancestors lived, their dietary habits, religious beliefs, migrations, and wars. For this reason, locally produced agricultural productions gain importance as raw materials for local food production. Different agricultural production methods have been used to produce enough food for the population. However, these productions increase environmental pollution. In this study, in which the relationship between the preference of local food, which is …

Isolation and anomie caused by the modern life has created multiple identity threats. Tourists’ destination experience has long been considered as a unique way of identity construction. However, little research has investigated whether and how environmental restoration qualities in the tourism context can possibly reinforce self-identity and counteract the effect of identity confusion. Guided by the Attention Restoration Theory, this study aims to develop and test a model to examine the relationships between the dimensions of perceived destination restorative qualities (PDRQs) and tourist self-identity with two tourist samples in China collected in two distinctive destinations (Sample 1, n = 361; …

By using the structural equation model (CB-SEM), this paper illustrates the process of forming destination brand loyalty for sustainable tourism on theme parks. The results suggested a second-order structure of tourism experience. The first-order four factors have different impacts on the second-order tourism experience. Activity experience is the most important factor influencing tourism experience, followed by environment experience, then facility experience, and finally interaction experience. In terms of tourism experience, individual brand identity-brand …

The Nexus Between Tourism Demand And Regional Characteristics: The Case Of Japanese Islands, Kantaro Takahashi
International Journal of Islands Research
This paper explores the relationships between tourism demand and regional characteristics of the Japanese islands. A regression model was carried out for 113 islands designated by the Remote Island Development Act, which is one of the laws designed to promote rural areas in Japan. Results show that the transportation situation was related to the demand of arrival tourists, whereas the results were insignificant for the model with the response variable as lodging tourists. Meanwhile, location factors were significant for lodging tourists—that is, open sea areas have more lodging tourism demand than islands in inland sea areas. Furthermore, this study found …

The labor-intensive structure, 24/7 service availability, diversity of departments including kitchens, housekeeping, and technical services, the high labor turnover ratios, along with the long working hours and shift systems inherent in accommodation establishments all play a role in the occurrence of occupational accidents (OA). Fundamental reasons underlying OA are unsafe behavior and unsafe working conditions. This study analyzes with a qualitative method the OA that occur in the food & beverage (F&B) service department of accommodation establishments from the viewpoint of employees. The study concludes that the majority of these accidents are not high risk, and generally result from unsafe …

Developing And Validating A Scale Of Tourism Gentrification In Rural Areas, Chaohui Wang, Yumei Xu, Tingting Zhang
Faculty Scholarship and Creative Works
In recent years, tourism gentrification has made great progress in rural areas and has had significant impacts on these areas' development, specifically in the domains of the economy, living standards, community, culture, and environment. Tourists play a key role in developing tourism gentrification in rural areas, but research investigating tourism gentrification in rural areas from the tourist perspective is scarce. To fill this gap, we focus on tourism gentrification and develop a measurement scale from the tourist perspective through multiple qualitative and quantitative steps. Our findings confirm that tourism gentrification in rural areas from the tourist perspective comprises eight dimensions: …

Therapeutic Servicescapes, Covid Stress, And Customer Revisit Intention In The Hospitality Industry Post-Lockdown, Oluwatobi A. Ogunmokun, Juliet E. Ikhide
Journal of Global Business Insights
As the post-pandemic era gradually dawns upon us, the hospitality industry seems to be slow in recovery, partly due to the continuous stress over being infected in public and hospitality places. Scholars have recommended that hospitality establishments seriously consider the potential benefits of artificial intelligence, social distancing, and cleanliness to fast-track the industry’s recovery post-lockdown. This study contributes to that stream of research by proposing and testing a model that demonstrates that through alleviating COVID stress, therapeutic servicescapes at hospitality establishments could promote customers’ revisit intention post-lockdown. We argue that therapeutic servicescapes have potential marketing and strategic benefits that could …

Evidence Of Local Gastronomy In Rural Destinations: A Cross-European Study, Michael Vieregge
Evidence Of Local Gastronomy In Rural Destinations: A Cross-European Study, Michael Vieregge
Journal of Global Hospitality and Tourism
In 2020, the Coronavirus pandemic led to domestic travel to rural destinations. Local gastronomy is key to tourists' expectations, perceptions, and images of rural destinations' authenticity. Empirical data supporting evidence of local gastronomy in rural communities are lacking. This archival research focused on n=549 Cittaslow and non-Cittaslow towns and cities in 19 European countries. Rural towns offer more local gastronomy than cities, and Cittaslow-certified towns more than non-Cittaslow. All rural towns should focus on expanding their local gastronomy, and Cittaslow cities even more so.

Journal of Global Hospitality and Tourism
The objective of this study was to examine nutrient claims signage on the purchasing of snacks in corporate foodservice operations. The effectiveness of claims among foodservice operations serving primarily administrative roles (white-collar) were compared with those serving primarily manufacturing roles (blue-collar). An experimental study was conducted through the implementation of six nutrient claims evaluated by a group of registered dietitians. The snack items were conveniently placed near the cash register to “nudge” purchases, and sales of snacks before and after the implementation of claims were examined. Paired-samples t-tests indicated that after nutrient claims were implemented, sales of snacks increased …

The Economics Of Technology In Travel, Tourism, And Hospitality, Stanislav Ivanov
Journal of Global Hospitality and Tourism
The first is an academic viewpoint, written by Prof. Stanislav Ivanov from Varna University of Management. He suggests academic research accepts and pays more attention to the economics of technologies in travel, tourism, and hospitality. According to Ivanov, travel, tourism, and hospitality (TTH) are intrinsically connected to technology. At the same time, tourists book their flights and accommodation through technology, reach their destination with the help of technology, explore the destination with technology, and share their experiences online with technology. Economic principles, like any other business, run them. Economic factors also drive their decisions to invest in technology. That is …
