The purpose of this study is to provide an appropriate approach for Japanese restaurant operators to identify the wants and needs of their American customers, and thereby assist restaurateurs in developing strategies that would best attract this market. There are many important attributes of Japanese food and services that affect the satisfaction and behavioral intentions of American customers. Japanese restaurant operators should recognize the perceptions of their American customers and monitor the factors affecting customer satisfaction and revisit intention. This effort will lead Japanese restaurants in the U.S. to improve their operational and marketing efficiency, and thereby increase profitability.

The research addresses a gap in the literature regarding the barbecue restaurant industry. Specifically, it examines whether barbecue restaurant operators have a thorough understanding of customer preferences. The research was a mixed methods study: four separate case studies were conducted of barbecue restaurants in specific areas of the United States, each of which represented one of the four major barbecue traditions. The case studies were used to create a model of success factor peculiar to barbecue restaurants.

A well conceived pay-for-peformance program that aligns measurable financial and non-financial results with the companies publicly stated goals can create synergy in regards to productivity, efficiency and competition. The problem with some pay-for-peformance programs is that they can be poorly conceived, measure outcomes improperly, administered inconsistently or reward an unethical result. A balanced scorecard approach to pay-for-peformance programs can measure both hard and soft metrics that lead to both company and manager/employee success.

Food Safety At Fairs And Festivals: Vendor Knowledge And Violations At A Regional Festival, Ji-Eun Lee, Barbara A. Almanza, Douglas C. Nelson

This 2-year study examined the food safety knowledge of food vendors at one of Indiana's largest festivals, and compared it with health inspection violations at this event. Ninety-four percent of nonprofit food vendors in 2006 and 100% of nonprofit food vendors in 2008 participated. Descriptive statistics, correlation matrices, and general linear models (GLM) were employed. Results for average knowledge scores were that respondents were able to correctly answer 6.16 out of 10 questions (62%) in 2006 and 10.2 out of 14 (73%) in 2008. Results from the correlations and the GLM showed that vendors serving temperature control for safety (TCS) …

The objective of this study was to identify meeting patterns and trends related to chapter, regional, and/or annual conference attendance. Factors likely to increase attendance, attendance trends over a 5-year period, recommendations by association members, and the preferred mode of delivery were identified. Results will assist meeting planners in providing maximum benefits to association members and to potentially increase attendance at each conference level.
