In Victorian England, cultural, industrial, technological, and financial flows led to two industries being subject to processes of professionalisation: catering and hospitality, and the independent press. As such, a new form of media emerged, the trade press, which catered for those working in the catering and hospitality industry. This press content documents not only the industry’s operations, but also the aspirations and attitudes of employees, their employers, and other key stakeholders. This allows for us to glimpse into past lifeworlds and extract forgotten memories. We are able to witness how ethnoscapes characterised the trade, but also led to integration conflicts. …

This paper explores the historical role women played in promoting, distributing, and establishing tea consumption in The Netherlands. Despite being the first nation to introduce tea to the Western world, and the abundance of literature and images documenting women as sapless tea drinkers, languishing their afternoons away, entertaining and sipping the amber brew in their tea houses, the latter is far from reality. Preliminary research indicates Dutch women were instrumental in establishing an elite tea industry in The Netherlands and beyond. Can a recipe divide historians, gastronomes, and chefs? The answer is yes if we are dealing with carbonara, an iconic Italian dish, famous throughout the world. However, so much animosity could have deeper roots than the recently renewed controversy over its authorship suggests. This article aims to study the case of carbonara as an example of the race to conquer consumers’ memories. Following a transdisciplinary methodology, the author identifies three main approaches to the making of carbonara: glocal, regional, and creative. The southern part of Jutland has its very own distinct food culture and traditions. Its history differs from other parts of Denmark because this region was under German rule from 1864 until the Reunification in 1920. Special laws were imposed to curtail the population’s political and cultural ties to Denmark. Any political gatherings or sentiments were strictly forbidden. However, cooking was free of restrictions and cooking thus became one of the primary ways to hold onto a Danish identity. This paper analyzes food as a memory device in the novel Doña Flor y sus dos maridos by the Brazilian author Jorge Amado. Set in San Salvador du Bahía in northern Brazil, the novel follows Doña Flor after her husband Vadinho dies. Food and drink – considered here as folkloric forms – play a central role not only in her exploration of memories of her husband but also in the broader bahiana society with its mix of different ethnicities (African, indigenous, European). The way food is preserved, prepared and consumed is embedded in cultural symbolism strongly connected to the geographical landscape. This article focuses on the memories of Sami actors within the wild Arctic char value chain to explore how changes in the foodscape influence the way this produce is prepared and consumed in contemporary Sápmi and the use and view of traditional preservation techniques. The empirical material was obtained through interviews and observations with Sami actors as they are the dominant agents related to this produce. Food preparation in a domestic context has evolved through the application of technology. When electricity became available and motors to power appliances were developed from the late nineteenth century onwards, this made a significant change to the use of appliances for food preparation from post-Second World War onwards. During an oral history research on the larger European open-air market in Turin, called “Porta Palazzo,” Tunisian people replied to my questions using the Tunisian-Arab word ghurba in order to define their condition of being in diaspora. Pigs arrived in Australia with British settlers onboard the First Fleet in 1788 and rapidly spread. As a product of British Imperialism, Australia has adopted many cultural consumption practices from its parent colony. Meat is on many tables, but not every table showcases the same animal, and these cultural differences illustrate that conditions of edibility are not equally defined. British values were attached to pigs, embedding them with transformative abilities to shape colonial ecosystems. Australian industries, jobs, and livelihoods are deeply connected to the past. Though today it is communis opinio that the Arabs introduced pasta, especially dried pasta, to Sicily and from there it spread to the continent, there is no evidence to support this theory (Buccini 2013, 2015b, 2024). There is, however, ample evidence both textual and linguistic that this food has been known in southern Italy at least since classical times. Here I argue that an examination of holiday foods, especially those of what I call “solemn holidays,” provides further evidence that pasta has been an integral part of southern Italian cuisine for a very long time.

This work concerns an urban vegetable garden beyond 200 plots in Famalicão (northern Portugal) and aims to check out mnemic narratives circulating there linked to gastronomy and technical agricultural resources that have been used in the past. This paper considers a large mural of “The Modern Woman” painted in France by the American artist Mary Cassatt for the Woman’s Building at the World’s Columbian Exposition in Chicago in 1893. It focuses in particular on the large central panel of the mural titled Young Women Plucking the Fruits of Knowledge or Science that depicts women and girls apple-picking. Cassatt’s mural drew on various traditions and myths. Apple harvesting was a common sight in America. In 2017, Marije Vogelzang's interactive performance at the Museum of Rotterdam, 'Black Confectti', was designed to enable the experience of a difficult wartime past. Using authentic recipes from the war press, she prepared dishes based on the creativity of the crisis. This paper analyses and categorises the ways in which authors and their publishers have chosen to include the author’s culinary, food and personal memories within the texts of twenty twentieth century Irish Cookbooks. Cookbooks are subjects of culinary nostalgia with the reading of a recipe capable of triggering in the reader a memory of a meal enjoyed, a dish cooked in times past by a loved one, or recollections of the disgust felt for a food hated in childhood. Peace and education are inseparable. Grounding on the aforementioned premise, peace education has become part of the curriculum in a number of countries including the Philippines. Along with the inclusion of peace education was the challenge of how to provide responsive and meaningful learning experiences in peace education. Phenomenologists identify the subjective body and its felt-senses as the basis for human development and consciousness, including mental health. Several mental health disorders, when viewed from a phenomenological perspective, share common symptomology related to varying extents of fractured selves, which in turn hinders dynamic interaction between individuals, their actions, and their relationships with their social and material worlds. Autism is one such condition. Hence, I created an intervention to investigate how listening, which foster subjective and intersubjective experiences, lies at the heart of somatic and arts-based interventions. My artwork is situated within and around vessels and the Queer Homoerotic World and explores sexuality as a Demisexual within them. This is accomplished through the two processes of my creation, Minivague and Queerform/ing: balancing sexual tension and explicit expression, while subverting traditional norms and stereotypes with queerness to distance oneself from stereotypical Gay Art. Altering/emphasizing makes the artwork more romantic, lighter, whimsical, softer, and tender than the figure/s and the situations actually are. This study investigates the influence of specific frameworks in performance and vocal pedagogy on artists' capacity to enact evidence-based learning outcomes, with emphasis on vocal physiology and educator-performer relationships. Employing an experimental design, five philosophies that support capacity-building were tested across two trial settings, varying in intensity. The participant utilized narrative reasoning, diversified methods, and mentorship from specialized educators to apply frameworks. Findings indicate that, in practicing evidence-based learning and maximizing anatomic foundations of the voice, substantial developments in artistic capacity ensued. Educator-performer relationships mediate this process through reciprocal collaborations that foster capacity-building. Performers display optimal artistic capacity by effectively …

Arkeologi Masuk Sekolah Desa Salenrang (Maros-Pangkep) merupakan program kepedulian masyarakat Universitas Indonesia (UI) yang bertujuan untuk mengedukasi dan mengetahui potensi bentang alam dan peninggalan arkeologi. Hal tersebut juga bertujuan menumbuhkan sense of belonging terhadap siswa-siswi SD tersebut akan peninggalan nenek moyang mereka. Program dijalankan pada siswa kelas 6 yang berasal dari tiga sekolah, yaitu siswa SDN 221 Inpres Rammang-Rammang, SDN 28 Salenrang, dan SDN 219 Inpres Pannambungan. Metode pengabdian masyarakat yang digunakan adalah perpaduan antara deskripsi kualitatif sebagai pemetaan awal dan participatory action research (PAR) pada implementasi lapangan yang disertai pre-test dan post-test. Menurut Undang-Undang Nomor 18 Tahun 2008, sampah didefinisikan sebagai sisa kegiatan sehari-hari manusia atau proses yang mengandung unsur tertentu. Sampah menjadi masalah utama dalam sektor pariwisata di Indonesia. Pengelolaan dan pemanfaatan pengetahuan daur ulang beberapa sampah dapat menjadi solusi dari permasalahan sampah. Desa Olehsari di Kabupaten Banyuwangi merupakan salah satu desa tujuan wisata di Provinsi Jawa Timur, Indonesia. Gangguan penglihatan yang dapat dicegah dengan deteksi dan pengobatan dini memiliki insidensi yang tinggi, salah satunya gangguan penglihatan akibat infeksi kronis pada penderita kusta. Studi menyimpulkan sekitar 14,3% penderita kusta mengalami kebutaan pada satu mata dan 22,2% penderita kusta mengalami gangguan penglihatan. Dengan angka yang cukup tinggi, pemeriksaan mata, terutama pemeriksaan visus, menjadi pemeriksaan skrining yang penting bertujuan untuk menentukan gangguan penglihatan pada penderita kusta serta untuk klasifikasi WHO mengenai derajat disabilitas kusta sebagai basis data untuk pengobatan dini. Sebagai langkah awal, pemeriksaan tajam penglihatan (visus) sangat penting dilakukan pada komunitas penderita kusta. Diperlukan alat yang dapat diakses, andal, dan …
