This capstone project examines the need for improved nutrition education in elementary schools settings and presents the development and implementation of an interactive curriculum for second-grade students. Recognizing that many children lack foundational knowledge about healthy eating and the five major food groups, the project aimed to promote better nutritional understanding and decision-making at an early age. Grounded in Piaget's theory of cognitive development, the curriculum emphasized hands-on, developmentally appropriate learning strategies to enhance engagement and comprehension. Women in Watsonville face preventable health risks exacerbated by limited access to consistent physical activity and holistic wellness practices. This capstone project was conducted in collaboration with a local non-profit organization, Growing Greatness, that provides wellness-focused programming in organized group activities. This program serves Watsonville families and primarily supports women from underserved communities who are at greater risk of chronic health conditions due to socioeconomic and environmental factors. This project developed a memoir that documents the participants' experiences in activities such as bike riding, camping trips, and retreats that include yoga, hiking, tai-chi, meditation and other restorative activities. This capstone project was implemented at Ventana Wildlife Society through the Nature Coach Pilot Program, promoting mental health through individualized outdoor plans throughout Monterey County. To address the cuticular barrier in anthelmintic discovery, this study establishes a bifurcated framework in Caenorhabditis elegans. First, HPLC-based quantification of 14 PIM inhibitors revealed that cuticular penetrance is primarily dictated by phylogenetic lineage (Clade V) rather than ecological niche. Specifically, C. elegans demonstrated a significant pharmacokinetic correlation with the hookworm Ancylostoma ceylanicum (Clade V) but not the whipworm Trichuris muris (Clade I), validating it as a superior surrogate model for hookworm bioaccumulation. Within this small molecule inhibitor library, SGI-12was identified as a lead candidate with superior potency against C. elegans and bioaccumulation. Second, target validation using a C. …

Breast cancer is among the most prevalent forms of cancer and is a primary cause of death among women (Wang et al., 2020). Cancer patients experience higher levels of anxiety symptoms, depressive symptoms, and inflammation compared to non-cancer patients, which can predict a diminished quality of life but also contribute to higher mortality rates among cancer patients (Bortolato et al., 2016; Song et al., 2022). Cycling is a commonly used exercise because it provides a controllable cardiovascular and musculoskeletal demand while imposing relatively low impact on the rider. High-cadence cycling (HCC) has been shown to influence subsequent running performance and gait performance by increasing cadence and reducing work rate when cycling prior to running. However, most of this work has focused on triathletes and older adults. This qualitative study analyzes how implementing place-based education (PBE) in undergraduate coursework shapes faculty identity narratives and nature–culture positionalities across conceptual lenses of past, present, and future. Three faculty members at a regional Mississippi university engaged in a PBE professional development program; narratively driven pre- and post-implementation interviews were given to participants, then examined via thematic analysis. Framed primarily through lenses of constructivism, with support from critical pedagogy of place, relational and ecological epistemologies, and scholarship on faculty identity, this study posits two research questions—1: How does teaching PBE influence faculty identity narratives across past, present, and future temporalities? 2: …

Background & aims: Helicobacter pylori screening and eradication is a cost-effective strategy for primary gastric cancer prevention in high-risk populations outside the United States. There is a paucity of population-based H pylori seroprevalence data available in high-risk U.S. groups, particularly data for low-income, uninsured patient populations.
Methods: We used data from a cross-sectional study of a largely underserved, immigrant, and minority patient population. Inclusion criteria included asymptomatic individuals 30-65 years of age without prior H pylori testing or treatment. There is much interest in the role of sweeteners such as table sugar (sucrose) and high-fructose corn syrup in obesity and metabolic disease. Both sweeteners consist of glucose and fructose, two six-carbon isomeric sugars. Whereas glucose ingestion may promote obesity through its effects to stimulate insulin secretion, fructose has unique metabolic effects that promote triglyceride synthesis and fat accumulation. These effects arise from fructose's well-known role as a signal of metabolic plenty. Under modern conditions of overnutrition, chronic excess fructose drives features of metabolic syndrome. To identify metabolites as potential biomarkers of fructose vs glucose consumption and related metabolic changes, we conducted exploratory metabolomic profiling of fasting blood samples from participants in a double-blind, parallel-arm trial involving 31 male and female adults with overweight or obesity, both before and after supplementation with glucose- or fructose-sweetened beverages. Orthogonal Partial Least Square Discriminatory Analysis (OPLS-DA) was used to identify metabolites that could discriminate between the 2 intervention groups. Background: Epidemiologic data on the association between maternal fish intake and birth defects are sparse. Our objective was to assess associations between maternal fish intake and 52 different birth defects, most of which have not been assessed previously.
Methods: Using logistic regression, data was analyzed for 29,242 mothers of infants with birth defects and 10,973 mothers of control infants who participated in the National Birth Defects Prevention Study (NBDPS) and delivered between 1997 and 2011. U.S. public companies may redact information from material contracts in SEC filings as long as such information is not considered to be material by the SEC and when it is the type of information that the registrant treats as private and confidential. In 2021, the SEC revised redaction regulations in response to the expansion of the legal definition of ‘confidential’ by the Supreme Court of the United States. This thesis analyzed whether Christian faith-based curricula and toolkits regarding firearm safety and violence prevention align with established best practices in public health, social work, and education research. Previous research has explored the prevalence and impact of gun violence, best practices regarding gun violence and safety interventions, the effectiveness of churches as public health initiative partners, and the relationship between Christianity and views on firearms. Early chick nutrition is critical for establishing target growth performance characteristics in broiler chickens. This study evaluated factors within commercial broiler houses that potentially influence feed consumption during the first 7 days. Three trials were conducted in a 12.2 x 122 m commercial broiler house to assess the effects of house sectioning, spatial barriers, and feedline location. In Trial 1, a one-way experimental design was used in which the house was divided into four equal sections using migration fencing every 30.5 m. House sections served as a fixed factor. This mixed-methods study examined how preschool teachers understand and use mealtime as an opportunity for children’s learning and connection. The project explored teachers’ beliefs, observed mealtime practices, and used collaborative video reflection to examine how teachers’ perspectives and behaviors evolved over time. Over five weeks, mealtimes were recorded, transcribed, and analyzed alongside reflection sessions with the teacher. Using the Arkansas Child Development Early Learning Standards (CDELS) as a developmental lens, each mealtime interaction was coded for learning opportunities across domains such as language, literacy, social-emotional growth, and self-help skills. Rice (Oryza sativa L.) presents a locally sourced, climate-resistant starch source for the brewing industry. As barley faces increased uncertainty due to rising temperatures, Arkansas-grown rice offers a more stable and cost-effective alternative starch source. However, the use of milled adjunct rice by brewers has remained limited, largely due to knowledge gaps about cultivar-specific properties relative to brewing. Chapter 1 provides an overview of rice as a brewing adjunct, reviewing the physiochemical properties important to brewing success. The legal landscape for Native American people in the United States is ever evolving and highly nuanced, with its historical foundation anchored into the classical pilasters of American legal jurisprudence. Histomonas meleagridis is a parabasalid protozoan and the causative agent of histomonosis, or blackhead disease, in turkeys. Withdrawal of the last remaining in-feed arsenical from the market in 2015 led to the re-emergence of the disease. Climate change threatens the global supply of malting barley, creating a need for sustainable, climate-resilient alternative grains for the brewing industries. This dissertation investigated the chemical, sensorial, practical, and economic viability of using rice as a malting material. First, the malting and brewing qualities of 20 rice samples were evaluated. Results indicated malted rice (MR) had good malting and brewing qualities, including adequate levels of free amino nitrogen (FAN), high amyloglucosidase and limit dextrinase activities. Anaerobic digestion (AD) is a widely adopted waste‑management technology and a key process for renewable energy production in the form of biogas. Manures, such as goat manure (GM), often exhibit low carbon‑to‑nitrogen (C/N) ratios, which may limit biogas recovery. This study evaluated and optimized the anaerobic co‑digestion of GM with rice husk (RH) and rice straw (RS) across varying substrate proportions (0–100% GM). Goat manure was collected from the International Goat Research Center at Prairie View A&M University (PVAMU), while RH and RS were obtained from Gulf Pacific Co. Due to the increased risk of bacterial populations developing resistance to current antibiotics, consumer perceptions surrounding the utilization of antibiotics use in cattle, and the endemic incidence of bovine respiratory disease (BRD) among growing and finishing cattle, alternative management strategies to improve the health of cattle must be developed. The objective of this study was to determine the effect of increasing zinc supplementation from organic-complexed sources to beef cows during gestation on calf performance. In May 2025, during gestation, Angus crossbred cows were confirmed pregnant with female sexed semen (n = 83) and enrolled in the current study. Cows (4.7 ± 2 years of age and 531 ± 84.4 kg body weight, mean ± standard deviation) were allotted to 4 groups (20 to 21 cows/group) based on, sire of heifer calf, cow age, and cow body weights taken at weaning. This thesis examines the industrial organization and competitive dynamics of Aramark Corporation within the global contract catering and institutional hospitality industry. Using the Structure–Conduct–Performance (SCP) framework alongside transaction cost economics, this study evaluates how market concentration, labor investment, long-term contracting, and pricing strategies influence Aramark’s behavior and performance relative to its primary competitors, Compass Group and Sodexo. Financial data from Statista and company annual reports are used to construct concentration measures, including the three-firm concentration ratio and the Herfindahl– Hirschman Index, in order to assess industry structure.
